  • Hey Chile-Heads! In honor of green chile season, I'm sharing with you a simple version of a classic New Mexican favorite: Poor Man's Green Chile Stew. This stew has a few simple ingredients and comes together so easily! It's the perfect stew to warm you up in this fall weather.     Poor Man's Green Chile Stew
    Ingredients:
    5 medium red potatoes, chopped into 1 in. pieces
    1 lb ground beef
    3 tbsp flour (you can use a cornstarch slurry instead, if you’d like)
    5 cups water, or beef broth
    1 cup chopped green chile
    1 tsp kosher salt
    1 garlic clove, minced or pressed
    Directions:
    Peel and chop 5 medium red potatoes and set aside. Cook 1 lb ground beef in a large saucepan until completely browned. Add 3 tbsp flour and cook for another minute. Next add the potatoes. Cook until everything is combined. Now add 5 cups of water/broth and 1 cup chopped green chile. Bring up to a boil. Once boiling, add 1 tsp kosher salt and 1 garlic clove. Mix and turn the heat to low so the stew can cook at a low boil. After about 20 minutes, or until the potatoes are soft, the stew is ready. Enjoy!

    One of my all time favorites. We call it "Caldito" or "Grandma Soup" because my great grandma always made it!

    This is how I make my green chile soup. I usually add onions, a can of stewed tomatoes and zucchini to mine in a chicken broth base. Not traditional, but sure is tasty!

    If you want to take this up a few more notches, brown the beef a little more. Add the garlic before the water. Add the liquid once the garlic begins to release the aroma. It’s essentially the same thing but a little Maillard reaction will go a long way in bringing out a little more flavor.

    Other than onion, this is the caldillo I grew up with, including the red potatoes.

      It really is caldito with green chile added. It comes together so easily and makes for great meal prep.

    Mom used to make her picadillo with just hamburgers, potatoes, and oregano. It was my favorite dish of hers served with fresh flour tortillas. 😊

      @@RedorGreen I have been using the red chili sauce for chicken, beef, and pork...to be honest my kids grew up on comida latina, but since my wife passed I have been doing the cooking for the last 8 yrs...I knew them missed their Mom's food..So I follow your instruction bigtime ...My son is 34 and is with me, and he loves the food more recently...Your instruction has really made me more confident in the kitchen...Muchas Gracias Sra...

    Look so delicious! We usually make green chile stew with pork but this looks so much easier and faster. I gotta give this a try with my remaining chile from last year 🤤

    I would sautee' a 1/2 onion in the ground beef juices. I like to add a teaspoon of cumin and fresh or canned diced tomatoes for a bit more flavor and color. Also perhaps a teaspoon of oregano.

    Looks delicious! I'm in NM and just made my pot of chile verde stew. I don't use cumin in mine but I will in a small batch one day to sample it. Don't want to ruin a whole pot of green Hatch--it's like g😄ld to me

    my family does it similar
    except we don't put flour unless we want it to be creamy, and we do garlic and onion powder instead.
    what I like to do for breakfast is stream some of the juice out of a bowl and add scrambled eggs and cheese. 😅

    What is the best meat to use?
    I was thinking of using t-bone.

    hints: no flour, this just makes it pasty. you want a nice clear broth that isn't murky. It also needs a pinch of chicken bouillon, some onions, some stewed tomatoes, a pinch of cumin of oregano.

      Yes, on the channel we have red chile beef, and green Chile chicken. I just put out a shirt on turkey, bean and green chili.

    I would love to make this but I’m stumped about the chilies to use. I don’t know the different kinds of chilies and feel sure that there must be a difference between them. The closest thing I have used is green chilis that are sold in small cans in the Mexican food section. Will those work or can you recommend something else? There are very few kinds of fresh chilis sold in my area.

      Hello! So you are correct in that there are many different varieties. You can certainly use the cans in the Mexican section. Hatch has a version that is just fine.       I typically use russet potatoes in this recipe, but red potatoes hold up a little better and don't break down as much. If you are going to make this stew for meal prep, I would suggest using red potatoes. Thank you for the question!
