    That looks so good, Kent! I'm on my way to the store and will try this for dinner tonight. Just to let folks know. I've tried at least 50 recipes from this channel and loved every one of them. They're so good that when I do, I have to make double batches and feed the neighbors. They get their requests in when they smell it cooking. I hope that you had a great Christmas Kent and Shannon and hope that 2024 is a wonderful year that will be filled with only happy memories for you.

    We LOVE this kind of meal! Learned about green chilies back when we traveled to New Mexico for years. Now whenever it snows, this New Hampshire woman makes green chili stew! YUM!!!

      Nothing, IMHO, beats a good, hearty chili or stew on a cold, wet, winters day. I fondly remember being half frozen from shoveling the driveway, to come in and enjoy a hot filling meal. And you want something with a lot of moisture in it, because the cold dries you out something fierce. So soups and stews are a must.

    Well, in our house in New Mexico we roast three 20 lb bags of chile every season, peel it and then freeze it in quart ziplocks. There is always a bowl of Caribe(diced chile with onion and garlic) to add to whatever you’re eating, especially eggs!

    My wife is from New Mexico and we always cook this with potatoes in it and the meat is cubed not shredded. The hatches are definitely a must. We leave out the tomatillos.
    It would probably taste good with Hominy too, but I haven't tried that.

      You cook actual “Chile Verde”, a traditional New Mexican dish made famous in the US by the Ortega family,
      which uses the pride of New Mexico, from famed horticulturist Fabián García in 1913: The 'New Mexico No. 9' chile pepper.
      Otherwise known as “Hatch Chili”, “Green Chili”, “Anaheim Chili”.
      Kent is cooking a dish from Mexico called “Puerco en Salsa Verde”.
      Apples and oranges.
      The two dishes taste completely different.
      This video is ignorant and insulting.

    Made this tonight for dinner and it’s a hit. I used some pulled pork that I had canned, and turkey stock I made from thanksgiving. This will definitely stay in our winter rotation of meals.

    I can’t wait to try this. I just bought a couple of big bags of hot Hatch chilis at Costco in Temecula CA. So glad I saw them. I’m processing them now using my broiler. I saw a TH-cam video about 10 years back from an agriculture professor at some university I think it was Wisconsin. She said that you can process hatch or any kind of chili, leave the burnt skin on and freeze them individually and then put them in a bag in your freezer. She says they’ll keep almost indefinitely like that and that when you’re ready to use them you just pull them out and run them under warm water and you can get the skin to come right off. I was so glad I found that so that I could buy a huge amount and have them on hand especially in the fall and winter. Processing them made me look for a green chili recipe and I found yours. I had the most amazing hatch chile stew in Taos one time and I’ve been trying to duplicate it. This recipe looks like it’ll do that. I finally figured out how to make a great albondigas soup by watching about 10 videos several in Spanish . This recipe reminded me of those Mexican ladies techniques. Just bought some of your spices !

    I had two of your classics today. I made biscuits and gravy, and had green chili stew for lunch. It’s really hard to find tomatillos around where I am in NJ, but I use a jar of medium green thick salsa, and add the onions, poblanos and jalapeño. All your recipes are easy to make and adapt. Thanks for all you do

    oh Kent and Shannon you had me at Hatch Chili. Love green chili stew. My best friend in high school. Her mama had us 3 qt jrts had potatoes in in to have food when we moved when my folks retired. Best dinner I ever had of her mom's and she could cook. It took me several years to recreate. She just said I cleaned out the fridge. It's not much but have tortillas to go with it. So sweet she didn't want my folks to have to worry about dinner on our long drive. Love her to this day.

    Hello, good morning Mr Kent,,,,, I make my sauces and the one I like the most is the green sauce,,,,,,10 green tomatillo, 2 red tomatoes, poblano chiles, jalapeño and chilaca or california and (optional serrano for that stings). (brush the california and poblanos with oil before roasting and the skin comes off very easily),,,,,, more onion, and garlic roasted all over wood, sea salt, a pinch of pepper, cumin oregano, I grind them in molcajete or a grinder. The flavor that the mesquite or oak wood adds is fantastic., a hug to you & Sharon from CHIHUAHUA, MEXICO.

    I'm very excited Kent, this friday i'm getting my very first beans, in my entire life. That's right I never ate beans but because of you i'm obsessed now, I wanna eat beans. I will be growing my own this summer but for now its frozen here in Canada so I bought all kind of beans at the grocery.
    I'm not sure but I think i remember you saying in one of your video that cowboys back in the days were eating Pinto beans when traveling. So I was very excited when I saw Pinto beans available, they will be the first one I try. Thank you for everything you have teach me, you will be in my thoughts this Friday.
