That looks so good, Kent! I'm on my way to the store and will try this for dinner tonight. Just to let folks know. I've tried at least 50 recipes from this channel and loved every one of them. They're so good that when I do, I have to make double batches and feed the neighbors. They get their requests in when they smell it cooking. I hope that you had a great Christmas Kent and Shannon and hope that 2024 is a wonderful year that will be filled with only happy memories for you.
We thank you Kate for the kind words and we hope you have a blessed day and thanks for watching
No better way to create good relations with your neighbors!
Are people really that friendly down south that they knock on doos asking about what meals you're preparing cause of the smell ?! @@debluetailfly
@@merzeporgoher Nobody is probably going to knock on your door asking, but giving some tasty food to neighbors goes a long way toward making friends. Of course, they may tell you something sure does smell good, in hopes of getting a taste.
Much more than a cooking channel.

I'm a lifelong New Mexican, and this is a staple. SO GOOD, Cowboy Kent.
Cant beat Hatch Chili
Can't have winter without chile verde, posole, and atole :D
You can tell that he is a great chef but the way he loves those dogs he is also a good man...
i lost my 16 year old german short haired pointer kitchen helper yesterday, it always brightens my day to see your pups. i know we aren’t supposed to pick favorites but beagles hold a special place in my heart, i love The Beag ❤️
baking today was hard as i didn’t have a pup to give my unused egg whites to anymore 💔
This guy is a national treasure.
I love stew! You make the best
Thanks so much
We LOVE this kind of meal! Learned about green chilies back when we traveled to New Mexico for years. Now whenever it snows, this New Hampshire woman makes green chili stew! YUM!!!
Sure good to warm you up
Glad us New Mexicans can spread our love for green chile to everyone!!!!!
Everyone should start the year off with some Cowboy Cooking. Happy New Year to you, Shan, your family, staff and all the pups.
Happy new year to you and thanks for watching
Fourth bowl and still going... This stuff is amazing.
Hello from Germany, I just found out about this channel. The set, the cowboy vibes, the cooking.. this is better than any show I've ever watched, thank you Mr. Rollins and Sharon!
@cowboykentRollins_-- Have it with yourself
As Winter starts rolling in it IS chili, stews, hearty soups and gumbo season. A wonderful time of the year. Thanks for sharing the recipe.
Our pleasure
Nothing, IMHO, beats a good, hearty chili or stew on a cold, wet, winters day. I fondly remember being half frozen from shoveling the driveway, to come in and enjoy a hot filling meal. And you want something with a lot of moisture in it, because the cold dries you out something fierce. So soups and stews are a must.
this stew relly reminds me my grandma stew she will make the yumest chile pork stew after she died i didn't relly got to try this stew out sooo happy that from this vidio i can get the taste of chilhood tnx very much
We hope you enjoy
The Duker! Haven’t seen him in forever!! So glad to see him again!!!
He is a good pup for sure
My wife is from New Mexico and we always cook this with potatoes in it and the meat is cubed not shredded. The hatches are definitely a must. We leave out the tomatillos.
It would probably taste good with Hominy too, but I haven't tried that.
Of course!!!
You cook actual “Chile Verde”, a traditional New Mexican dish made famous in the US by the Ortega family,
which uses the pride of New Mexico, from famed horticulturist Fabián García in 1913: The 'New Mexico No. 9' chile pepper.
Otherwise known as “Hatch Chili”, “Green Chili”, “Anaheim Chili”.
Kent is cooking a dish from Mexico called “Puerco en Salsa Verde”.
Apples and oranges.
The two dishes taste completely different.
This video is ignorant and insulting.
Yes sir! That sounds delicious!
@@jorhay1agree..I don’t know what this is but you won’t find this concoction in New Mexico.
I had the same thought immediately with hominy and potatoes. Glad I saw this comment.
Pork and green chile posole - good stuff.
So glad that I live just over an hour's drive away from Hatch, NM.
Bests chilis ever
Thank you for another finer than frogs hair video Cowboy Kent!
Our pleasure
I can't wait to give this one a
go plus I like Shannon's
input and questions...thx
We hope you enjoy
I had this at birthday party, about 35 years ago. I love the green pork chili!❤
Made this tonight for dinner and it’s a hit. I used some pulled pork that I had canned, and turkey stock I made from thanksgiving. This will definitely stay in our winter rotation of meals.
Best channel ever 💯 True American 💯
Thanks
My wife and I would love to make a trip to see you guys, and personally, I would be honored to cook a meal with Kent.
Made this tonight for dinner and it was great 🍜🍺🤤
Well, in our house in New Mexico we roast three 20 lb bags of chile every season, peel it and then freeze it in quart ziplocks. There is always a bowl of Caribe(diced chile with onion and garlic) to add to whatever you’re eating, especially eggs!
Thanks for letting us be learned by a true American. I also speak Texan with an Oklahoma accent. And I speak American not English 😮. Love your cooking and presentation.
Outstanding recipe, and always a joy to watch you cook, sir.
Made it, LOVED IT, thanks Kent & Shannon & all the little helpers, lol
As always Kent, it looks fantastic! Blessings from South Texas 🤠
Sounds like my English class!❤😊
Great for a cold day anytime.
Yes indeed!
I used Kent’s chili in a black beans and ham soup. It absolutely wonderful.
Sounds like a good combo
Happy New Year, Kent! It was great to see your solid support today. That chili sounds so good!
Bless you and Sharon for sharing your hearts and your recipes with us!
Have a great big old bear hug!
Happy New Year to you as well
My mouth started watering on that opening scene of the spoon
Thanks Kent that looks so good I am going to have to try it.
Hope you enjoy
My dude . I love you are using tomatillos and jalapeños . Great flavor for chili. Good job!
God Bless Kent and Shan... Another years comes to a close and a new one comes forth.... I so look forward to the new recipe idea's.... Doc.
Thanks Doc so much
What a perfect stew for this time of year! ❤
Oh yes!
That's some awesome Green Chili Pork you fixed up there Kent and Shannon. Have plenty of tortillas on hand for soppin so your bowl is clean for more later. You all have a blessed and prosperous New Year, stay safe and keep up the great fun recipes too. Fred.
I can't help smiling every time Kent pulls everyone in for a hug.
Green Chili Pork Stew now that really does sound good to eat on a cold day thanks Kent have a wonderful new year and until next time Thank You.
💖💖🤠👋🥩🍗🍖🥓🧀🍞💖💖
Thanks Roger
Ive been making it about once a week for the last five years since i moved to CO, its also a great summer dish too. Lil extra kick of heat gets ya sweating but you'll be chilly in the dry desert breeze.
Would not recommend as a summer dish in humid areas, you just gonna be sweaty and sticky, and spicy all over.
Its a relatively simple dish to make, prep is mainly dicing pork and mincing chiles, quick sear on the pork, make a roux, add the greens and stock and simmer. Lots of good recipes online outta NM and CO.
My beautiful wife and I love and appreciate you so much brother. Thank you. Be safe and blessings to you and yours brother.
I appreciate that and thanks so much
Yummy! I’m definitely making this. My brother loves Chili Verde. He’s going be so happy as I’m not going to tell him anything! Thanks for the recipe Cookie and Sharon and of course the pups. PS Hatch chilies rule.
THAT looks freaking DELICIOUS Kent. Happy New Years 🎉to you and your entire family. Semper Fi 🇺🇲
Thanks Roger and Happy New Year to you
Kent that looks amazing and I definitely am going to make that this weekend. Love the testers you have I got a 11 month old border collie who does the same. As a veteran I respect the fact that you honor not only vets but all first responders.
I really enjoy how you made your own salsa Verde as the base to this stew. It looks delicious!
Thanks so much it was so good
@@CowboyKentRollinsthat salsa Verde looked perfect Mr. Rollins. How do you know all these secrets and details? Amazing. Keep that good stuff coming sir.
You know it smells good when the dogs come running! These people are national treasures! GOD bless them and keep them safe ❤
I'm on a post-Thanksgiving and post-Christmas diet, but this stew sure looks good!
Thanks Kent! We here in New Mexico know nothing beats Hatch Green Chile!
Just want to stop in and say to you and your wife "Thank you for being a shining light in this world!" God bless and keep cookin' my brother 🙂
My mouth is watering 😋
I can’t wait to try this. I just bought a couple of big bags of hot Hatch chilis at Costco in Temecula CA. So glad I saw them. I’m processing them now using my broiler. I saw a TH-cam video about 10 years back from an agriculture professor at some university I think it was Wisconsin. She said that you can process hatch or any kind of chili, leave the burnt skin on and freeze them individually and then put them in a bag in your freezer. She says they’ll keep almost indefinitely like that and that when you’re ready to use them you just pull them out and run them under warm water and you can get the skin to come right off. I was so glad I found that so that I could buy a huge amount and have them on hand especially in the fall and winter. Processing them made me look for a green chili recipe and I found yours. I had the most amazing hatch chile stew in Taos one time and I’ve been trying to duplicate it. This recipe looks like it’ll do that. I finally figured out how to make a great albondigas soup by watching about 10 videos several in Spanish . This recipe reminded me of those Mexican ladies techniques. Just bought some of your spices !
Maternal grandmother was an Okie. ❤😊
I had two of your classics today. I made biscuits and gravy, and had green chili stew for lunch. It’s really hard to find tomatillos around where I am in NJ, but I use a jar of medium green thick salsa, and add the onions, poblanos and jalapeño. All your recipes are easy to make and adapt. Thanks for all you do
That sounds like a winner. Might make that one myself.
Hope you do and enjoy it
Awesome video and recipe...I love the pups in your videos! You and Shannon have a blessed day!
Thanks and you as well
In Colorado we eat this all year long. It’s great to smother burritos with this
Yep for sure
Made this for family. I used Kent's smoked pork recipe for the meat. Everyone loved it.
I just wanted to say thank you for giving a shout out to the Wisconsinites and all of your videos. My wife and I watch them all and you've never failed us on what you make. Bless you for all you share with us!
I want some. I'm going to have to make.

i've watched dozens and dozens of your videos and although i'm not a retired service member I appreciate you reminding people of it. Keep up the good work and maybe bring on a retired service member to show their own reciepe.

We thank you and Happy New Year to you
That’s some pack o’ dogs. They make me smile.
This looks and sounds amazing. A few weeks ago I was using some pablano peppers and one of them were spicy like a serano.
oh Kent and Shannon you had me at Hatch Chili. Love green chili stew. My best friend in high school. Her mama had us 3 qt jrts had potatoes in in to have food when we moved when my folks retired. Best dinner I ever had of her mom's and she could cook. It took me several years to recreate. She just said I cleaned out the fridge. It's not much but have tortillas to go with it. So sweet she didn't want my folks to have to worry about dinner on our long drive. Love her to this day.
I'm an Okie too, but more of a city boy. Even so, I never have any difficulty understanding you.
Happy New Year to you and your family... God's blessing upon us All..
Love watching from the Philippines..
Life's journey is something amazing and beautiful..Enjoying the ride #COWBOYUP 🎉🎉🎉❤
Thanks Brian and Happy New Year to you
Looks fantastic!
Really like your furry assistants.
Did this exact recipe but added cilantro to the blender. AMAZING ❤
We get fresh Hatch chilies every summer, get them roasted and eat them all year. Yum, yum!
I’m on this! Looks like a perfect meal for a cold, wet day!
Thanks Brother Kent!
You are very welcome
Oh my God, what a GREAT MEAL !!!!!
Love the Okie-bonics! Thanks for all you do! Great recipe!
Cowboy Kent get is starting the new year right, with a great recipe and tangled Oklahoma-style words. Both is good fun and one you can eat.
