After the trinity, the one thing you must have in your beans is pickle meat along with your sausage and smoked ham hock. If you've got some tasso and bacon throw them in there too. The more the merrier.

Get the small diameter one, not the Cajun one, as it is packed in natural casings so is crisp when you bite it. I used to like the andouille sausage made fresh and smoked in each store by the Rouses supermarket chain. You may have gotten it there, as they have a few stores on the coast in Mississippi and Alabama. But if you can't get it, Richard's isn't too bad for beans or gumbo.
I loved his description of the gumbo... comparing it to a warm t-shirt right out of the dryer. So true! The best food I ever had was when I went to New Orleans.

I'm a native Mississippian. And, watching videos about southern cooking & "slave food," whatever the hell that is, brings back so many wonderful memories of my grandmother's cooking. The delicious smell of her collard greens, oven fried chicken, fried okra, tomato gravy, cornbread, & so on. Trust me when I say that there was NO WAY that anyone could escape the amazing aroma of her cooking.
After my 2 year apprenticeship under a master Italian chef I moved back home to Biloxi Mississippi. I spent the next 20 years mastering French Creole and Southern Comfort food. This episode brings back so many memories and recipes. Good job on this one, French Creole is the epitome of American cuisine in my opinion.

Don't put it on your bucket list. Go after the Corona thing is over. We visit once a year (not during Mardi Gras). My wife and I leisurely drive down in our too big Cadillac, splurge for a 4-5 Star hotel and Uber everywhere. Be casual, but bring one nice suit/dress outfit for a few late evenings out of super fine dining on a sultry hot evening. After you do it one time, you will be hooked...

So true, I used to always tell people to hit those seafood joints along the highway on the way to Waveland beach just across the MS state line about 30 or so minutes from there. I left about a year or so after the spill though and have regrettably not been back, no idea if some or even any of those places every recovered from that
I absolutely love my state! It’s absolutely unlike any other place in the world! The food is unmatched and our culture is extremely unique! Creole food is by far my favorite food choice! Cafe De Monde is so good y’all! The gumbo is delicious and the beignets are extremely addicting! 😋😍
So is the coffee! I'm from Houston, but living in Arkansas I drink nothing but Louisiana coffees. I mail order it via Amazon. I visited N.O. several times in the 1960s and 1970s and had the beignets at Cafe du Monde with that wonderful coffee.

My wife and I leisurely drive down in our too big Cadillac, splurge for a 4-5 Star hotel and Uber everywhere. Be casual, but bring one nice suit/dress outfit for a few late evenings out of super fine dining on a sultry hot evening. After you do it one time, you will be hooked...

So true, I used to always tell people to hit those seafood joints along the highway on the way to Waveland beach just across the MS state line about 30 or so minutes from there. I left about a year or so after the spill though and have regrettably not been back, no idea if some or even any of those places every recovered from that
I lived in New Orleans for 3 years. Nothing beats the creole taste of this place
I absolutely love my state! It’s absolutely unlike any other place in the world! The food is unmatched and our culture is extremely unique! Creole food is by far my favorite food choice! Cafe De Monde is so good y’all! The gumbo is delicious and the beignets are extremely addicting! 😋😍
So is the coffee! I'm from Houston, but living in Arkansas I drink nothing but Louisiana coffees. I mail order it via Amazon. I visited N.O. several times in the 1960s and 1970s and had the beignets at Cafe du Monde with that wonderful coffee.
