    🐷 PIG EAR SANDWICH: Clean the pig ears. Season and pressure-cook for two hours to make them tender. When cooked, place one pig ear on a small slider bun, add mustard, coleslaw and homemade chili sauce.
    🍔SMOKED SAUSAGE SANDWICH: Grind red rose smoked sausage and cook on a griddle. Serve on a Krystal-type bun with coleslaw, mustard, and hot sauce.
    🌽DELTA TAMALES: In a large pot, heat the vegetable oil over medium heat. Stir in seasonings and then add the turkey meat. Cook, stirring often. To make the tamales: While the meat is cooking, soak the corn shucks or husks in a large bowl or sink full of very warm water, until they are soft and pliable, about 2 hours. Gently separate the husks into single leaves. Hand-roll the tamales in corn shucks or husks.

Lightly toast burger buns and spread mayonnaise and butter on each side. Place chopped onions, lettuce, tomatoes and pickles on the bun. Add the cooked beef patties, cheese, mustard and ketchup and then serve.

      Spent alot of my time in meridian and Jackson I lived in alabama on the border of Meridian in a small town and there's nothing like alabama and Mississippi soul food I havnt tried rhe pig ears yet but we both know we KNOW HOW TO EAT DOWN HERE boo

    I have extra love for this episode. As someone from the South, we get a lot of sh*t about our "unhealthy" cuisine. But you can see the history of our food in this show... some out of necessity and survival when we couldn't afford better, some out of convenience due to the hour we got out of work... but all this history is being passed down by some lovely folks. Glenda looks like a woman I was raised around, just pure joy. Thanks for coming back to the States and focusing on the South, Sonny.

      I wish I was born and raised in American and to be precise in the southern part of America I wouldn't have been survived 40 years of my life (because of these crazy American food), then again I am an Indian, so add another 20 years to that 40, am happy with that.

    This was bittersweet, my Dad from 1930's Mississippi. Moved to Californian, but raised us kids on this type food, pig parts, frog legs, chicken gravy and rice for breakfast, fried bologna, etc. Every now and then a family member will cook an old recipe and the loving memories just come flowing back. Thanks for this video.

      PJ Tippett 2012 I was like 7 or 6 years old, my grandma cooked rice, fried bologna, eggs, maybe a fried hotdog sliced in half. And some homemade biscuits, we use to break them and put loads of syrup on them. Good old days.

    me and my daddy would go to the beatty st. grocery when i was little, wed get burgers and a&w root beer cream sodas and wed sit right outside on the curb and them. I miss my dad so much, he passed in 2008, thank you sonny for bringiing me so many beautiful memories that i had nearly forgotten, makes me wish i was able to go down and get that again.

    Top that Wafle and chicken with shake! PERFECT! Also, here in Finland you can actually order fried Bologna sandwich at all grills that serves fastfood (sometimes even Mc Donalds has it as special). It is called "Porilainen" named by the town of Pori, Finland.

    When I was stationed in Bossier City LA. I did a weekend trip to the home of one of my AFB buddies in Jackson Ms in the late 70s. Wow what great little southern city. I still remember the clubs being BYOB and just selling your "setups". I'd probably recalled more of it if I hadn't been drinking Black Jack like ice tea. Man the food was great and people were greater! Gulfport and Biloxi is another great area of the state also!

      nickys34 even though your delivery was brutal, I understand. Bologna is definitely cheap and was used mostly by people in low-income communities. When things were gentrified, there were numerous “hipster restaurants” charging $7-&10 for bologna sandwiches. I couldn’t believe it.

      @boo boo I've been eating homemade pimento and cheese since I was a child. We never had a picnic without it, or fried chicken! Not only is it good on soft white bread, but is a great dip on a Ritz cracker and celery sticks also! I'm going to have to make some tomorrow now. I'm craving it. I use sharp cheddar, sometimes a little cream cheese, lots of mayo and sometimes even a hint of grated onion, and use a hand mixer to make it creamy and smooth! Yum!

    My late husband told me a story that reminded me so much of 'Christmas Story'. He was raised in the 50's in Rock Island, Illinois, in a 2 story house that looked like the house in the movie. He said that he and his siblings would come home for supper after a day of playing ball and exploring the alleys. I could just hear the narrator of the movie telling the story.
    He said they'd all be really hungry, but when they walked into the kitchen to sit down and eat, they'd suddenly lose their appetite. There, in the middle of the table, sat a huge beef heart with the arteries sticking out, along with some noodles and stewed tomatoes! He said he could have sworn the heart was still beating! LOL.
    His mother would fix it occasionally for their father, who really liked it. If they complained or didn't eat some of it, their dad would give them the 'look' and he'd have to swallow hard to get it down and then go outside and throw it up! I think I would have taken a beating rather than touch that horror! Back in those days, what daddy said, went!

      @@theprodigalsun__ Hey! Are you from up there? I've been about 3 times to visit my mother in law and my husband's brothers. It's a nice place. The MS. River was close by and we visited the Rock Island Arsenal.
