I think it's how u make it. I grew up and have always lived in New England, my ex and her mom used to kill the sausage and gravy biscuits. Never once did I feel it was "heavy". Certainly not a light meal but I wouldn't call it heavy either.

Being originally from Moulton, AL and growing up in SE Alabama, I'm very particular about biscuits and gravy. But honestly the best biscuits and gravy I have ever had has been here in WA State, in Plain, WA. They do the biscuits, then layer it with brisket, and then the sausage gravy. It is to die for! I crave it and it's always a treat when we get to stop in Plain, WA. There is literally not much in Plain, WA...the tiniest of towns, but their biscuits and gravy are worth the visit.
My lil brother brought some friends to my house that were from Michigan, I live in Kentucky, they had never seen biscuits OR gravy. They were amazed, I still can't forget the stars in their eyes when they tasted it.

Ok, so I finally got around to eating it today.... Got some chicken, sat down and popped the bottle open, and well, it tastes just like they describe it in the videos...like you watered down mayonnaise with vinegar... I didn't find it to be horrible, but to be honest, when I compare it to other regional bbq sauces, like the mustard based of NC, sadly for me...just not going to rank up there....lol, and I was so excited to try it. NOW, my son in law loved it, so it won't go to waste...but mayo watered down with vinegar...if you can imagine that, you can imagine this sauce... Still think folks should give it a try so you can see for yourself, but for me, I rank it 1.5-2 stars out of 5....sorry....but hey, i love trying new foods!

Not a white sauce fan myself, I'll stick with old slave recipes. Thinner acidic simple ingredients. Less of a cover up more an accent, just to cut the fat and let the meat shine.
People all over think BBQ sauce is just the sweet smoky stuff they get in a bottle...not so! Here in the South we have Carolina style sauce that's more vinegar based, you have the Kansas style ketchup/brown sugar based sweet stuff, the Memphis style that's like Kansas but with mustard and more tangy, and the Alabama white sauce. I like the Carolina style with a bit of heat!

People all over think BBQ sauce is just the sweet smoky stuff they get in a bottle...not so!
Here in the South we have Carolina style sauce that's more vinegar based, you have the Kansas style ketchup/brown sugar based sweet stuff, the Memphis style that's like Kansas but with mustard and more tangy, and the Alabama white sauce. I like the Carolina style with a bit of heat!
