Anthony I didn’t know oxylate dumping was real - while i was detoxing the first few weeks in Carni I had bad joint pains and then for a couple months I had oxylates oozing out of my eyes. This is real, now my joints aren’t storing oxylates and crystals, feels like my arthritis, autoimmune, menopause has disappeared. Yahoo! ❤

I was using water fasting as the only way I knew how to manage my joint pain. On one occasion after coming off a 36 hour fast, I was feeling great, doing yoga with little pain, thought oh I’ll make a nice healthy green smoothie and the join pain came back immediately even stronger than before. That’s when I realised ohh it’s not the meat causing my joint pain but rather it’s the greens. Googled carnivore and started and have been felt great since.

This was about five years ago. I was really trying hard to watch my diet, not eat sugar, candies, or cakes, and only eat healthy food, including low-fat things like spinach. We all know that spinach is really healthy, right of course, I am saying this facetiously now, but here's what happened, I bought a big tub of spinach at Whole Foods, and I ate a little bit, but then it got to that point where it's starting to wilt and not be that fresh type of spinach that we want to eat. So I sautéed up the whole rest of the tub in a skillet, added a little cream and butter, and ate the whole tub of spinach, sautéd down into a relatively small amount, so I can remember sitting in front of the television said, eating this, and with the cream and butter on it tasted pretty good, that night I had the worst gout attack of my life, and when I say it was a bad gout attack that is very much underestimated gout is never good, but you can live with it if you can get in bed prop your foot up, maybe put an ice pack on it, and it will minimize the pain pretty good as long as you don't move. This was nothing like that. It didn't matter what I did. It didn't matter how many pain pills I took; nothing helped. It was the most miserable 24 hours of my 75 years on this planet. After 24 hours, if I laid really still took my pain meds, it lessened enough that I finally could fall asleep, but it lasted for about another 2 to 3 weeks, getting slowly better. Needless to say, I don't even walk by it in the grocery store anymore, and I have learned a lot since then. Thanks to Dr. Chaffey and other doctors like Dr. Barry. Even if you just can't give it up and have to eat a little bit of it, it is never sautéed because you've had to use a large amount to have the amount of anything once it is sautéed; spinach is bad. sautéed spinach is 100 times worse, anyway, if I can save even one person from going through what I went through that night with this information I am very glad that I wrote this.

Thanks for bringing this extremely important topic up and for mentioning Sally K Norton and her book Toxic superfoods.💕🎉 I'm about 2 years into low oxalate eating and I have barely scratched the surface...😅I've eaten plantbased diets for decades!🤪
As a child I had lots of ear infections and was given several rounds of antibiotics. I now know that it gave me leaky gut and I started to store oxalates even on a "regular" omnivorous diet. But then a vegetarian and vegan diet for 2 decades, plus eating high plant even on omnivorous ways of eating, just made me sicker and sicker.
I couldn't understand it! I'm a Nutritional Therapist and I just got sicker and sicker the "healthier" I ate!!!!
And then I tried carnivore and got very dangerous symptoms which puzzled me even more... 🤪 I actually went back to a plantbased diet after 9 months of carnivore and for a while that felt better...until it didn't ofc.😅
Now in retrospect I understand that I felt initially better again bcs it temporarily halted the oxalate dumping I got on carnivore bcs I added back lots of plants and that gave my body a signal to stop dumping and start storing! But that bucket will absolutely start to spill over if you continue to ingest lots of oxalates ofc....
Sadly I went to the highest oxalate diet I ever been on, following Medical Medium diet and protocols. (That tells you a little something about how effing sick and desperate I was....😢)
I drank cerlery juice, spinach smoothies and ate sweet potatoes, potatoes and so on, so forth. I ate several THOUSANDS of mg of oxalates a day! I thought I couldn't get any sicker but oh boy....I was absolutely poisoned and thought I was going to die.😢
That's when I found Sally K Norton and binge watched tons of interviews with her. I did cut out the oxalate rich foods too quickly though and it was horrible and very dangerous. I actually went back on carnivore for 6 months against better judgment. I can't stress enough how absolutely dangerous it can get if you go from an extremely high oxalate diet (plus having decades of stored oxalated in the body) directly to a strict carnivore diet.
The carnivore diet isn't at fault here ofc, it's just that the oxalic acid/oxalates are as dangerous on their way out as they where in. And it can take many years to clear it out with a history like mine and Sally's. Sally is 10 years in and is still having bouts of clearing or dumping. (Clearing is a milder, more manageable version of dumping.)
I've had to add back both some plants and some carbs bcs my body just can't fat adapt and it seems like I can't produce sufficient amounts of endogenous glucose via gluconeogenesis bcs I get dangerously low blood sugar which induces an extreme rush of stresshormones and months and months of severe insomnia as a result.
Plus also very dangerous electrolyte disturbances with arythmias almost 24/7.
This probably is bcs of all the damage done by decades of plantbased eating and bcs I'm still constantly handling clearing/dumping plus I have thyroid antibodies.
I hope to be able to try carnivore again soon but I'm scared bcs it got so insanely bad last times I've tried. (I've done it for 15 months in total so it's not for lack of trying, that's for dang sure.😅)
    By now I've been to over 40 of Sally K Norton's classes btw. It's a game changer!!🌞
Minerals like calcium, magnesium and potassium are VERY important to eat/take when one has an oxalate issue. Otherwise it WILL steal minerals from your blood, bones and tissues.
Yes, calcium can trigger more release but it's worse to not have calcium in your diet when you are having lots of stored oxalates in your body. I would never even think of trying fully carnivore again without calcium and other minerals.
Btw, I even push tiny oxalate crystals out through my scalp and skin. Look like little diamonds. Too bad it isn't bcs I would be really rich if that was the case...!.💎💎💎💎💎💎💎💎😂

Wow, your story is amazing! Good for you for trying so many things and never giving up on yourself in your quest for a healthy body.
If you're not able to get fat adapted, have you tried a liver/gallbladder flush? It's not much talked about in carnivore circles, but I found it to be a huge help.
When you eat a high-veggie diet, the bile system can become very sluggish and gloopy. Bile is released when we eat fat, so if you've been eating low fat (and I now consider anything not keto to be low fat) then bile just doesn't get released on a regular basis, and it begins to thicken up in your biliary ducts, like constipation of the biliary system.
Then, when you switch to a high fat diet, your bile is all backed up and clotted. This can cause people to feel that they can't digest fat - because they really can't!
Stephanie Keto Person talks a bit about doing liver/gallbladder flushes, but I've never heard any other carnivore influencer talk about it, which I think is a shame. There's a lot of people out there who are feeling like carnivore isn't working for them, when it could and would if only their biliary system was in working order.
I know you didn't ask, but if you're willing to listen to the medical medium, I figure maybe you'd be interested in what worked for me! 😂😂😂

@cammieklund OMG! For over 11 years now I've been afflicted with some RARE disease that even stumped a pathologist with 30 years experience! It's some kind of "non-specific suppurative dermatitis" and it's slowly destroying my entire body. GRANULES that resemble salt or sugar (or I guess diamonds) LITERALLY come out of my SKIN. It started inside my nose and below the back of the neck and the left ear but has slowly spread over my body. I know it's inside my EYES too and is slowly taking my vision, degenerating my collagen and turning my skin into something that looks like an over cooked piece of meat! But the GRANULES or CRYSTALS and the number one thing-I'm massaging some out of my eyes, my face, my upper back between typing this.

@@itzakpoelzig330 😅 Yes, I'm planning on doing a gallbladder flush! I know that I have gall stones, I recently did a CT scan. Don't know how much though, haven't seen the images myself, just got a letter that I had some and that it was sent to a surgeon that would decide what to do. I won't let them take out my gallbladder though! And yes, I think this is a common issue and it should be talked about more! No wonder if you are used to run on carbs and then take them out and then if you can't use fats as fuel either bcs it's clogged up plus you are dealing with oxalates that the body goes into crisis mode. Plus I saw a study that said that hypothyroid people can have 30-50% less ability to create glucose via gluconeogenesis so it's the perfect storm.🤪 The quest goes on though!🌞

Oxalates can end up anywhere in the body and present with different symptoms. i.e. oxalates binding with calcium can end up in joints causing arthritis symptoms. Sulfur can help pull oxalates out of tissues and sulfur supplements like MSM, and Epsom salt baths or foot soaks can help. B6 in the form of 5-P-5 pyridoxine helps to drive oxalates out of tissue. Building a good gut microbiome can prevent oxalates from reabsorbing into the body. Potassium, magnesium, and calcium in the citrate form help in softening and binding with oxalates. Drinking 4 oz of lemon juice daily can prevent kidney stones. Sally K Norton and Elliot Overton on the YT channel EONutrition have detailed information on oxalates and how to help with the dumping syndrome.

I went on a ketogenic diet in 2019. I lost 32 pounds and I have maintained that weight within a 2 pound marker since then. However, I noticed that I started getting very stiff and that my knees hurt and the joints in my fingers hurt and felt swollen & stiff. I could not understand why this was happening because I felt I was eating better than I had in my entire life. I was talking to the woman in my health food store and she asked me what I was eating. I was eating a lot of spinach! I grew to like it very much, but she told me that because of the compounds in the plants that I may have been overdoing it. She admitted humbly to not knowing a lot about it, but suggested I scale back on the spinach. I saw a podcast on Dr. Josh Axe’s channel and he was talking about oxalates, and which vegetables were high & which fruits were high. I made a list of those foods and I scaled back on my produce purchases. After a few weeks, I definitely lost the swelling in my knees and my hands and overall I can tell the difference. I do have a small salad every two days or so, just because I think there are some nutritional benefits in it. I do eat a few berries every morning, which I love and I didn’t want to give them up and I’m grateful that I didn’t have to. But the more I learn about this the more it makes complete sense. I am mainly carnivore and eat a lot of meat. These compounds are real and you need to monitor how much of them you consume.

I don't know if one needs oxalate testing. You can look at the symptoms - which weren't talked about here.
I had severe neck pain and headaches for about two years. I also had to see a chiropractor three to four times a year.
Then I went Carnivore and the first thing I noticed was the massive amount of tartar I got on my teeth, a problem I never had in my life. A few weeks into Carnivore I suddenly thought: you don't have headaches and neck pain anymore .
It was only after that realization that I saw Sally Norton on TH-cam and I nearly fell over from all the things she talked about. The tartar was oxalate dumping and the pains I had came from the (high oxalate) potatoes I had eaten more than ever in these past two years. Potatoes and chocolate.
Haven't been back to the chiropractor since I started carnivore. The achiness in the mornings I had as a 61 y.o. was gone, too
If you want to search out Sally Norton, I'd recommend her interview with Jesse Chappus. (The one she did with Anthony Chaffee is more on the academic side while the other one is more on in a practical level.) (Thank me later 😅)

Oxalate dumping is no joke. Been experiencing blurry vision in my dominant eye for months now since starting the carnivore diet and went to 3 specialists. While scanning my macula, 2 of the 3 specialists remarked that there were little specs inside the fluid of my eye(in front of the macula) that looked like "sand", and they didn't know what it was. My symptoms in one eye are blurry vision, sandy feeling while trying to fall asleep, and styes every couple months. I'm almost positive these symptoms are from oxalate dumping.

Cleared up in a week, my digestion has never felt better. I fail to adhere strictly to the diet, I eat at a bit of carbs and fruits most days, but the vast majority of my nutrition now comes from beef, eggs, more beef, and more eggs. (Formerly 9 years vegan, reintroduced some animal foods about 1,5 years ago but now I've really ramped it up and cut out many other foods.) I feel really good, my energy is stable, my skin is starting to look better, I produce way less ear wax for some reason, and I don't have to sit on the toilet 40+ minutes per day. Big win.

The prevalence of antibiotic use in contemporary times has led to a notable increase in issues related to oxalates. Within the human gut, there exists a crucial bacterium, Oxalobacter formigenes, responsible for managing oxalate levels. Unfortunately, the widespread use of antibiotics has been associated with a reduction in the colonies of O. formigenes, exacerbating problems related to oxalate metabolism. Vitamin C undergoes conversion into oxalate during the process of metabolism, with oxalate absorption being contingent upon the health of your gut.

The perfection is only in contrast to hpw messed up my relationship with food was all my life.

In one sense it must be "easy" going through life without having any clue what you're doing or about what you're saying, like rattling off statements that are obviously absurd and bizarre to someone who knows even basic chemistry, but in another it must actually be quite difficult due to all the problems you're inevitably causing to yourself.

Fun fact. The human body actually makes its own oxalic acid. Not very much, but the mechanism for antifreeze killing humans and other animals is that it forces the body to overproduce oxalic acid/form crystals. The oxalic acid and oxilate crystals then kill the person/animal. Even those who survive often have permanent damage.
Also, taking vitamin C on carnivore or low carb can force the overproduction of oxalic acid (just to a lesser extent).
I also read once that the "calcium scores" from peoples arteries are actually calcium oxilates. I'm not sure about that last one, but why not those little suckers are insidious.

I found an obscure research paper by, I think, Japanese or perhaps Chinese researchers, which was looking at the effect of a proteolytic enzyme, Lumbrokinase, on oxalates. Their finding was that Lumbrokinase does actually dissolve them. I happened to have some Lumbrokinase so my husband (80) and I (76) who have just switched to carnivore from keto and were having oxalates dumping symptoms, tried it. We both feel so much better. We are only an N of 2 but, it seems to us that Lumbrokinase does work and we can even feel it working. Our energy is up and aching and stiffness, among other symptoms, are down!
We are also using supplements that Elliot Overton at EONutrition suggests to help the body clear oxalates, but those are mostly operating as binders, not dissolving the oxalate crystals. Together, both approaches are making this needed process far more tolerable. Given our ages, we believe we need to get them out as quickly and as safely as possible!

True. I researched the carnivore diet for over a year, then found a NIH study proving Carnivore having an overwhelming positive effect on ulcerative colitis. I showed it to my husband and he was convinced to try it. After 25 years of extremely active UC, with several near death events, he was put in full remission within 6 weeks. He had his regularly scheduled colonoscopy at that point and his doctor was in utter shock there was zero active disease, just scaring from the years of uncontrolled inflammation, bleeding and ulcers. All his polyps were gone as well.
Every treatment and drug from the doctor did nothing but add horrendous side effects on top of the disease. Carnivore is a healing practice more effective for autoimmune issues than everything found inside a pharmacy.
But that doesn't make doctors and hospitals any money so it has to be vilified

I’ve been carnivore for just over a month (Lion since January 1), but I was plant-based for the last 20 years. I’m going through phases of oxalate dumping. Nasty stuff coming out of my eyes. Random skin ulcers that heal fast. Acne comes and goes, but is mostly gone for the first time in 35 years. Occasional diarrhea, but IBS was fixed on day one of carnivore. Itchy skin comes and goes. Random short stomach aches with gas. I can’t wait for that garbage to be completely out of my system. I may have weaned had I found this video before so many others that prompted me to commit. I flipped a switch and went full carnivore in one day. And I’m taking calcium carbonate powder for indigestion heartburn if I eat or drink too close to bedtime. I pray I don’t get another kidney stone. I’ve passed three. 😖

This is valuable information for someone like me following a seasonal way of eating. Whatever berries I grow in summer in my NE USA location, I want to learn how to process. Or if that’s an option. Currently, my attitude about all my planted berry bushes is: happy to feed the birds. Cheers.

Check your prior labs before this last one and see if your trigs , ldl, HDL changed for the better with these new labs. Could be they are better than before and you are getting better!

Please do a video on the theory that neu5gc attacks neu5ac and causes bad damage.

That's not how it works. Neu5Gc and Neu5Ac are both sialic acids that are incorporated into the cell glycans of a wide variety of mammals. However, in humans the CMAH gene was irrreversibly mutated ~2 million years ago, at which point we could no longer convert Neu5Ac to Neu5Gc, so that there's no longer any of the latter in our bodies naturally. This is suspected to have been helpful for the body to identify a variety of pathogens which still incorporate Neu5Gc into their cell glycans.
However, the problem is that many humans now eat Neu5Gc as part of their diets, and this gets incorporated into their cell glycans due to how similar it is to Neu5Ac; but the immune system recognizes that Neu5Gc is foreign to the body, and thus starts to attack those cells, causing a chronic systemwide inflammatory autoimmune reaction, which is permanent for as long as Neu5Gc is consumed.
This is why Neu5Gc is called a "xenoautoantigen", and why the chronic condition it causes is termed "xenosialitis".
So it's not that "Neu5Gc attacks Neu5Ac", but that the body itself attacks cells that have Neu5Gc in their cell glycans, since the human body doesn't make Neu5Gc itself.
I would personally strongly avoid all foods that contain Neu5Gc, since I care deeply for my own health.

Hey, Doc Chaffee, just show him a picture of the Oxalic Acid molecule! It’s a relatively small, simple molecule, not at all like a polyphenol or phytosterol.

I experienced oxalate dumping after 1 year of strict carnivore. Had simultaneous gout and kidney stones for a few days. Its clear now.

If we avoid oxalates then isn't it easier on our gut rather than chow oxalates then try to purge it from our system ?

Oxalic acid is used as rust remover and timber stripper. Nasty stuff.

Great info isn't it. But I have to remark as a smart ass to your comment. With oscillates at least we won't rust on the inside like the Tinman and stay away from my woody. Just had to do it.

I stopped eating 98% of potatoes in February 2023 with the goal of shedding some weight. Within 2 months an eye condition cleared up and the oxalates stopped coming out of my eyes. Within 4 months I'd shed two stone in weight. Within 7 months a gut/bowel issue cleared up. I was amazed at the difference it made. During the summer I came across interviews with Sally K Norton and I immediately bought copies of her book for myself and my friends for presents. I then began cutting our more foods that are high in oxalates.By the time I was 9 months in, I began getting dumping symptoms and oxalates began coming out of my skin and scalp, so I then slowed down the process, but I did put weight on again over the winter just gone. Hence, I'm taking it much slower this spring, 2024. Joints and muscles are giving me a really hard time of it, but I'm persevering.
