    INGREDIENTS:
    • 1/4 cup coconut oil or butter, melted
    • 1/3 cup unsalted nut or seed butter
    • 1/2 cup coconut sugar, unrefined brown sugar, or monk fruit sugar substitute
    • 1 egg or flax egg
    • 1 teaspoon vanilla
    • 1/2 cup coconut flour; spooned into the measuring cup (don't dip & sweep)
    • 1/2 teaspoon baking soda
    • 1/2 teaspoon sea salt more for sprinkling (optional)
    • 1/2 cup dark chocolate chips or chunks

    so i used peanut butter, olive oil and regular brown sugar and I ended up with 12 cookies, I have a few notes:
    - its amazingly chewy yet crispy on the outside, but also a bit crumbly (?) probably due to the coconut flour so I think next time I would add either slightly more peanut butter or a dash of almond milk
    - if your dough balls are a bit small, keep an eye on them while baking! mine was slightly burnt at the bottom but it was fine after I scraped off the black bits
    - I feel like they would be amazing with peanut chunks in them! the chocolate was nice too
    - since I added peanut butter I only used 1/4 cup of sugar
    overall it was a great recipe! would definitely make again!

    I baked 2 batches of these cookies earlier today... and my husband loves! Transparently, he is very picky regarding desserts but he loves your Healthier Chocolate Chip Cookies w/ Coconut Flour! I substituted the chocolate chips for coconut flakes and crushed walnuts for the secondary batch... also delicious! I'll definitely add your recipe to our "Must-Do-Again List".
    I'm always in search for healthier dessert alternatives... these cookies are perfect for a gooey treat without all the sugar.

    Thxs for the recipe! I've made half with coconut oil, coconut butter, macadamia which I ended up adding 1Tb almond milk & 1/2Tb extra coconut oil. And, made the other half with butter, peanut butter and almond. I only used 35g monk fruit sweetner for each half of the recipe. The one with peanut butter was a lot more moist unlike the one I used coconut butter which was very crumbly. Also that tastes much better!!!

    I made with olive oil (30ml) and added gingerbread spices, no chocolate, the taste was mostly tahini and coconut but it is to die for, im like “are you kidding us? “. Its really really delicious, thank you
    And dont overbake, like she says “its ready when the centre is done

      Yes you can! I usually portion out the dough and then freeze the cookie dough balls. The cookies can be baked from frozen. It might just take a couple extra mintues.

      Thanks so much for sharing your experience. I have noticed there can be some variance in how much liquid coconut flour absorbs, depending on the brand or humidity in environment. Glad you could make it work with almond milk

    This looks amazing! I’m going to make these for myself since my littles can’t have the chocolate chips due to Lily’s chocolate adding Xylitol to the stevia sweetener. I can only control chocolate sweetener via using dark cocoa powder. I will sweeten the chocolate almond butter cookies with monk fruit drops and maple syrup. But your recipe I’m definitely going to try With the Lily’s Dark chips🤗

    I made two batches of these (so yummy, chewy, wonderful❤). Can I double, triple, quadruple this recipe and it turn out the same or do I need to make one batch at a time? I know some recipes cannot be doubled.

      I don't see any reason that this recipe couldn't be multiplied. I think it will work out just fine

    Just for people out there who want to use a flaxseed egg, one was not enough, I followed the recipe, although they tasted great, they didn't turn out like the video, they were very crumbly. I wondered if I should have used 2 flaxseed eggs or more oil. My mixture was drier than hers as well, I did think of using almond milk, I might mix my flaxseed eggs with almond milk next time.

      I am sorry to hear you had issues making the recipe with flax egg. I have made it several times with flax and the cookies turned out great. They were actually softer than the egg version. I wonder if you maybe had a bit too much flour in your batch which may have made the cookies crumbly? Extra flax egg or almond milk to get the batter to look like mine did should help remedy that

      Same. it's because the coconut flour amount cannot be accurate if the measurement is in cups. adding an extra 10 grams of coconut flour may not be super noticeable in a measuring cup but it could ruin your cookies, making them dry. So basically we need the measurements in grams

      Maybe? I haven't tried olive oil in cookie recipes before. But it might work

      I haven't tried any of these substitutions. I am sure you will get some sort of good cookie, but it it won't be the same. I am guessing with banana and coconut milk they would be quite soft and fluffy cookies

      I don't think cocoa butter will work as a substitute since it is only fat/oil. A nut or seed butter also has lots of ground up nut solids, which I think are what makes this recipe work

      I haven't tried making cookie dough in a blender. Without a mixer I would probably just whisk everything up by hand instead

    I DONT KNOW WHY BUT MINE TURNED OUT VERY DRY AND FLAKY I DONT KNOW WHAT I DID WRONG THE BATTER WAS ALSO VERY DRY .
    I SPOONED IN THE FLOUR INSTEAD OF DIPPING AND SWEEPING SO THATS NOT THE PROBLEM
    But they still tasted REALLY GOOD

      There can be some variation between different brands of coconut flour. Some are more absorbent than others. I would suggest using less flour next time and if the batter still looks drier than mine in the video, add a tablespoon more of coconut oil to try to achieve similar consistency.

      350 Fahrenheit is 180 degrees Celsius, I'm pretty sure your oven is in Celsius

    Hello! May I substitute the coconut sugar for erythritol? If yes, how much should I use?

      Yes you can! Check your label for conversion suggestion. I have used monk fruit sweetener (which contains erythritol) that is a 1:1 substitute. Straight up erythritol is only about 70% as sweet as sugar. So use about 2.5 extra tablespoons. (1/2 cup + 2/5 tablespoons).

      The granulated sweetener is important for the structure of the cookies. If it is stevia in granulated form it should work no problem. But not sure liquid drops would work.
      You can definitely omit vanilla

      I've found the best consistency in chewy/crisp coconut flour cookies if using a nut or seed butter.
      I have a different, simpler cookie recipe with coconut flour that makes soft cookies here leelalicious.com/coconut-flour-chocolate-chip-cookies/ This one doesn't use any nut/seed butter

      Kind of. It will work but the cookies will be different. Instead of chewy/crispy they will be soft and somewhat fluffy. That is almost exactly my soft coconut flour cookie recipe leelalicious.com/coconut-flour-chocolate-chip-cookies/

      Almond flour(use slightly less) or oat flour or even all purpose flour

      @@davidtaveras6121 Thanks! Some website says you need to increase the amount of almond flour nearly four times because it’s not absorbent like coconut flour. Do you agree with that? Seems quite much.

      You can but the result will be different. Honey cookies always come out soft and moist. They won't have crispy edges like the ones above. Also I would reduce the measurement when using honey. About 1/4 to 1/3 cup should give you the same sweetness level as 1/2 cup of granulated sugar.

      Yes, you can also just stir everything together with a spoon or spatula. There is no need to aerate cookie dough
