I have made these twice now and they are delicious. I have learnt two things: 1. The easiest way to shape the very moist dough into a pleasing shape is to roll a ball between your palms and then to flatten it out. 2. In my oven, 10-12 minutes was not long enough. I turned off the oven at 12 minutes and let the cookies sit inside for three more minutes. This gave them a slight crust, while they remained moist and springy inside.

I just made these cookies and they are amazing! I sub the maple syrup to 2tbsp coconut sugar plus 3 tbsps of milk, sub the eggs w flaxseeds mill(1tbsp of flaxseed mill and 3 tbsps water per egg).... and they came out just great!
Do take not that this is not a crunchy cookie but soft/gooey cookies...
Takes so much Dani... loves your recipes🥰🥰🥰🥰🥰

Ooooh...adding organic unsweetened flaky coconut would be yummy also. It's easy, and looks delish, great job! On my to make list.

Since I'm on the Paleo diet, these are a great idea! But I'm a little leery of using chocolate chips used since most store-bought chips are loaded with sugar. Sure I could use carob chips, but they never seem to have just the right flavor. What I've done instead is make my own "chocolate."
I mix melted coconut oil, honey (or 100% pure maple syrup), and unsweetened cocoa powder and pour into mini muffin cups. It sets in minutes in the refrigerator and I can then chop or break them up into "chips." As a sweet snack they're terrific all by themselves, and they taste even better by adding a single raspberry to each cup. Yum! I find 1/4 c of oil, 1/4 c of honey, and 2 tbs of powder is just right. You do have to keep stirring the mixture though as you're pouring it into the cups because the honey (and syrup) want to separate from the oil. But once in the cup and into the fridge, they come out perfect.
Just figured I'd share my extra component of "clean and delicious" ingredients to this great recipe.

    • @GhoulishCop
      @GhoulishCop 9 ปีที่แล้ว +11

***** FWIW, I now actually mix honey *and* maple syrup together and I like the taste even better. And I found that if you can get the coconut oil in liquid form without having to heat it in the microwave the ingredients seem to hold together better without separating. Maybe the heating process causes the separation.
All this experimenting gave me the idea to try my own "chocolate milk." Again, because of the paleo diet, I've given up dairy, but I do make my own almond milk. But cocoa powder doesn't blend very well (not unless you enjoy getting a mouthful of chocolate powder in your mouth to choke on, that is). By first blending the cocoa powder with a lil bit o' honey so that it's a creamy consistency, and then mixing it with the almond milk, you get a great chocolate milk taste without all the chemicals and additives found in store-bought chocolate milk mixes and syrups.
      Cheers,
      Rich

The unsweetened cocoa powder I use always dissolves easily in hot water. Also chocolate chips made with coconut oil... wouldn't those melt and not hold shape when the cookies are baked in the oven? I ask because I'm used to making my own choc bars with coconut oil as the base and they melt easily from the heat of my hand as I break a piece to eat.

Hi Dani, fantastic recipe, thanks! Since I eat ketogenic (against migraines), I need to avoid carbs then I used 1/4 cup of erythrit dissolved in coco milk instead of syrup... a tip for the ladies having to eat low carb also against pcos! My favorit cookie so far! Love your channel! Greetings from Germany!

+nachoyjack sorry I did no answer before... the easiest is to read the book "the migrane miracle" from Dr Turknett. It has NOT been a miracle for me I'm afraid and I'm even doing much better with more healthy slow carbs like sweet potatoes or Quinoa. Try also the "perfect healthy diet". Hope it helps!

My cookies have less than 1 gram of saturated fat and 1.6 gram of added sugar. Original recipe has 6 gram saturated fat per cookie.
I did that by using 1 TBSP of maple syrup, rest was plant based milk. I used an egg replacer and very low saturated fat butter-spread. I have three chocolate chip per cookie, that’s not enough to hurt my health so I did not count in my added sugar calculation. Coconut oil is high in saturated fat so I don’t use it often. Cookies turned out slightly crunchy outside and chewy inside. Delicious, though lighter in color. I like the recipe but not all healthy ingredients are low-fat or low sugar. I made one inch drops but only yielded 9 cookies. I’ll definitely keep this recipe. Next time I’ll bake for 10 minutes and keep in the warm oven for extra 3 minutes.
    Thanks for the recipe.

Every child in the womb has a right to live. I know many people who had doctors say their baby was going to have various problems and they were born without them at all. I had a friend who was pregnant and the doctor said from the amniocentesis test her baby was going to have spinal bifida guess what the baby was born without any problems at all. So lady if that makes you feel better that you ended your child's life go for it but I'm praying for you because I couldn't imagine the guilt

A proportioning tip - I used a medicine cup, loosely filled it up to the rim, let the kids dump it on the baking sheet and squish down with a spoon. It was EXACTLY 12 cookies. It may be local to where I'm from, but the medicine cups have a top marking at 15 ml, but really it can hold about 20 ml+. Anybody with kids is sure to have some of these at home.

I am looking forward to making this because I want to eat better. I don't necessarily have any diseases (not that I know of), I may have a little bit of a candida problem, and I could lose a little bit of weight (I'm the skinny-fat type) buttttttt the main reason is to have something that tastes good and isn't terrible for me. Just a quick question though, aren't the chocolate chips bad for you technically? I know dark chocolate isn't as bad but isn't it all still sugar? I guess the rest of the cookie isn't so bad but still. Thoughts?

Hi Dani thanks for your delicious n healthy recipes.. I am baking with a small Cornell oven. Due to the small circumference I just bake about 20mins on 200c. It turned out nicely but with a soft springy texture on the inside. The outer layer was crusty. I'm wondering if this recipe is supposed to be of this nature or it should actually be a totally crusty cookie. Kindly pls advise. .. Otherwise the taste is so good. I omitted chocolate chip but replaced them with oats.. Thanks again..

What coconut oil do you use, odourless or virgin ?

Ok I tried the recipe as is with organic eggs, it is good, however I woke up coughing up mucus, which for me is a by product of dairy and mucus causing foods. So I will try it again with flax eggs as soon as I get some more maple syrup and let you know how they turn out...
