My parents are from Cali Colombia and they've never made us chicken empanadas. Truthfully, I didn't even know that us Colombians make them with chicken also, lol. My mom and grandmother made strictly beef empanadas, and not that ground beef stuff. Colombian beef empanadas with little chunks of beef and potatoes. They're delicious!!! I learned to make them from my grandmother and my mom. Gotta keep tradition alive.

Venezuelan yellow pack with lady’s face on it) -Sazon Goya 'A Unique Seasoning' (Orange packet that says 'Con Culantro Y Achiote-Coriander & Annatto') -Triguisar (Colombian seasoning) (Can be substituted with Beef Bouillon) -Vegetable Oil -Salt Making Empanada Filling: • Place steak in a pot or pressure cooker with water just enough water to cover the steak by 1-inch and add salt • Place on medium-high heat and boil steak until fully cooked • After fully cooked remove steak and chop into small squares about 1/4-inch squares(keep stock water for cooking the potatoes) • Peel potatoes and cut into small square pieces as well about 1/2-inch squares • Place potatoes to cook in the remaining stock water the steak was boiled in • Add steak pieces to the potatoes and mix • Add seasoning for flavor (Goya and Triguisar) • Let cook until steak is falling apart and mixture is a stew like texture • The filling is done once it is a stew like texture. Take pot off heat, cover and let sit. Making Empanada Shell: • In a pot or big open container, add about a 1/2-cup of warm water and add salt • Add corn flour to the mixture until it thickens • Add a little bit of the Goya seasoning for flavoring and color • Keep folding empanada dough mixture and adding flour and or water until the dough is nice and firm • Roll into a large ball and place aside Making Empanadas: • Place a large sheet of plastic food wrap on the table or cutting board • Add and spread oil on the plastic food wrap so dough will not stick to the plastic • Roll empanada dough into small balls, slightly larger then a ping pong ball • Place the dough on the plastic food wrap and flatten until about 1/4-inch thick • Add about a spoon full of filling to the middle of the flattened dough, fold and seal using the saran wrap to make your empanada • Fry empanada in oil until golden brown DONE!!! 💪😎
To flatten them, I took a medium size Ziploc baggie, cut the seal top off, and opened up the two sides, leaving the bottom intact. Open it up flat, place the dough ball in the centre, then flip the other side over top. Then I use my rolling pin to roll them out. The baggie is easy to wash and keep in the drawer for next time.

Having an allergy to wheat but a love for empenadas, hand pies, pot stickers, and all things similar. This white corn flour will work. Will cutting in butter make the crust flakey?
Using the bowl to cut the empanadas is tried and true. My mom taught me this trick too, but I like how my grandma would make the empanadas without cutting the edges. My grandmother would just closed the empanadas and seal them without cutting the edges. If there was any left over dough at the edges you just fry them like that, so you have these tasty fried crispy/crunchy edges, that in my opinion elevate the texture of empanada dough when fried, hence making the empanadas even better.

If you freeze them put them in a hermetically sealed container! They can last up to a week! 👍
