    These look delicious! Thank you for sharing. It would have been nice to see you dig in with a fork and pull it apart so we could see the tenderness of the meat. I just started using my Dutch oven a few months ago. I have been trying new recipes weekly (short ribs, beef stew, chicken. roast..) My fav so far are the short ribs braised in Cab, Yummy!

    Do you cover it? I've heard covering it causes moisture to drop back in and gets rid of the delicious flavor of the seasons and extra

      Think about this. As it cooks, liquid decreases. Even to the point of having to add more water. That thought process doesn't make sense to me. Your seasoning will be OK.

    Oxtails look delicious. But Im confused did you let them simmer on top of the stove or did you bake them for 4 hours?

    Public oxtails are the best!! Ask the butcher to weigh them for you and cut the fat💚💚💚💚

      Maaaaaaaan I literally LOL 😆 😂 🤣. So when you season for so long, you get a feel for it. I rarely taste as I go because I understand that I can't taste everything like raw chicken or pork, and beef. It's all in the wrist. Believe me I'm a god in this seasoning game.     Looks good. But why would you put cooked meat back in an unwashed bowl that raw meat was in?

      That meat really isn't cooked just browned. Plus its not ready to serve but it's going back into a pot to fully cook.
