    This Vegan Alfredo Sauce is smooth and creamy and reminds me so much of the non vegan one I used to make but it is so much healthier. It’s all about texture and flavor and trust me when I tell you this one has an amazing silky texture and is bursting with flavor. Tom and I fight over licking the spatula when we make it! It’s a challenge to get a rich tasting sauce without using nuts, seeds or tofu but I did it with simple easy to assemble ingredients that everyone can find. I think this Alfredo Sauce is a game changer for a healthy lifestyle.

    THE RECIPE
    1 pound cauliflower florets
    1/2 cup hot water
    4 cloves garlic
    3/4 cup unsweetened plant milk
    1 tablespoon lemon juice
    1/2 teaspoon onion powder
    1/2 teaspoon garlic powder
    3 tablespoons nutritional yeast
    2 teaspoons dried basil
    1/2 teaspoon Table Tasty salt substitute or your favorite salt substitute
    2 tablespoons rolled oats
    freshly ground black pepper to taste
    1/2 teaspoon red pepper flakes - optional if you don’t like the kick red pepper flakes give a recipe feel free to reduce or omit it.
    INSTRUCTIONS
    Place the hot water in the stainless steel liner of a 6 quart electric pressure cooker along with the garlic cloves and cauliflower. Put the lid on and close the valve, set the timer for 1 minute and use quick release. When the pressure comes down remove the lid and carefully transfer the water, cauliflower and garlic to a high powered blender container, add the rest of the ingredients except for the red pepper flakes. Process until smooth and creamy about 1 minute. Stir in the red pepper flakes.
    Serve the Alfredo Sauce over zucchini noodles or your favorite type of noodle. To heat up the zucchini noodles I put them in a microwave safe dish covered and microwave for 2 minutes. You can also heat them up gently in a nonstick skillet until warm. If you cook zucchini noodles too long they will get watery. Garnish with fresh basil if desired.
    NOTES
    Please note that I tried many different variations of this recipe and this was our favorite combination of ingredients. I don’t know what will happen if you substitute other ingredients or change the quantities. Recipes are just an idea and personal tastes are an individual thing. For me it’s perfect as is but for someone else it might be too much flavor or for some it might not be enough. Feel free to tweak and alter all you desire!

    Thanks for posting this video. Seems like most plant-based people like to make their Alfredo sauce with cashews. My daughter is severely allergic to cashews, so finally we will be able to have a healthy plant-based alternative without the nuts. Thanks again!!!

    Tried this for dinner tonight. It was delicious. My two granddaughters ate it. One said, “I can tell this is healthy Alfredo sauce, and I really like it.” The other grand is more challenging to cook for. If it’s sweet or high-fat she loves it. But I throw in the healthy foods as much as possible.

    Looks delicious! I've made two different vegan alfredo sauces in the past. They have been ok, but nothing like what I use to have before going vegan. I've made cheeze substitutes with cauliflower, so I already know this well be bomb!!

    Looks so good! I’m going to try it. I have a nacho cheese version on rotation, but to have an Alfredo. Yum! I also appreciate the zoodle demo. I had no idea how to cook them. I tried boiling the zoodles and the became so watery:( I’ll try the microwave next time!

    Never use warm water from the faucet, that is water out of your hot water heater, better to use cold water that is heated in the microwave, or just use cold water.

      Just microwave for 2-3 minutes just enough to warm them but not cause them to release their water. Then the hot sauce heats them up more.     I made the sauce today, and was disappointed at the strong cauliflower taste. I had it on a baked potato and veggies. It was OK, the texture was smooth & silky, the flavor was edible with more spices, but not like alfredo at all. I'm sure the proportions were correct. Anyone have a thought or recommendation?

      We all have different taste preferences, many people love this recipe as do I, but feel free to tweak it to suit your taste buds. I can’t instruct you on what to change because we love it as is. You may just need to look for a recipe that doesn’t use cauliflower.

    Hi! I just made this today. I was curious about one thing. After 1 min on high pressure in the IP my cauliflower was very hard still. I cooked it an additional 2 minutes and it was still fairly firm. I am wondering if it didn’t steam very well because I only used 1/2 cup of water? Is it supposed to be fork tender before putting in the vitamix? Thank you.

      Sherismiley yes it should be completely cooked and tender before going in the blender. This is what works fir me but appliances vary and it can also depend on how big the pieces of cauliflower are. I hope it all turned out good for you! 😊

      Nutmeg Notebook I just figured out what I did wrong. I had two huge chunks of cauliflower. I figured it didn’t matter if I cut them into smaller pieces but I guess it does. Lol! Thank you for your input. Yes .. I liked it and plan on putting it on mashed potatoes for dinner tonight.😊

    How would you cook the cauliflower if you don’t have a pressure cooker?

      I would use a stove top steamer basket in a pot and steam until tender. you will just need to test it with a fork.

      Then just cook your cauliflower on the stove top or the microwave oven.

      I have not tried that yet, try freezing a small portion and thaw out to test . Happy Cooking

      We do not worry about getting enough protien as all plants contain it. I also would be eating some kind of starch on the side with this dish, Like an air fried sweet potato. This sauce also works great over a baked potatoe with some steamed broccli if you wanted a sincle more substancial dish.

    I love your recipes and have subscribed to your channel. However; there's something very important I want you to know, American's and North American's are the biggest consumers of pre-peeled garlic in the world. Thousands of Chinese prisoners are forced to sit in a room with about 100 other men and peel mountains of garlic for 14-16 hrs. a day. Their nails eventually rot and fall off, so they then resort to using their teeth. If you throw a number of cloves in a bowl and put another bowl upside down on top of it, then shake, voila, peeled garlic. Just wanted you to know. You can watch the show "Rotten" on Netflix (at least I think that's where I saw it) and you'll never want to buy pre-peeled garlic again. Keep making your wonderful step-by-step video's, and have a good day.

      Hello Ms. Casey We did see the ducumentary and were equally alarmed. We do buy our garlic form the Christopher Ranch Brand and had checked on their response to the documentary. Trader Joe's where we sometimes buy it did source thier garlic elswhere but now gets their garlic from Christopher Ranch and not from China. When we drive through Gilroy on our way to the coast we love bieng able to smell the garlic. We also spot the truckloads of it on the highway. When you are following the semi truck you can smell it as well. Here is the link to the Christopher Ranch story.

    Tami, since Greger in his latest q & a said there's nothing to worry about with fortified nooch, and the fact that your brand here is "on sale" at almost half the original price which is still DOUBLE the price of fortified, and the fact that it's more expensive to add ingredients than to leave them out: how is this not price gouging?

      I happen to love the flavor of the Sari brand - it tastes so much better to me. I will continue to buy it as I use very little of it in just a few recipes now and then. The great thing is we can all choose to do what is best for us personally.

      @@NutmegNotebook golly I wish that was true. I think that being able to run again and play sports again would be the best thing for me, personally, except I can't afford ACL surgery. I'm forced to do the second-best thing for me personally, which is walk as straight as possible without making any sudden lateral movements to avoid tearing the ligament completely. All I can do is pray that Bernie wins the primary, doesn’t get assassinated, and that Russia doesn't steal another election for Trump. But I digress. I still don't understand how that nooch company can conscionably charge that much for an unfortified product
