I didn't have all of the ingredients so I made a homemade kimchi paste variation with extra chopped green onion (without the brown rice wrapper) and cooked up some oblong patties in the panini press. I'll be making Reubens with these tonight! The texture is fabulous. It's almost like kneading my rye dough! This could easily be rolled into a pizza crust, breadsticks or crackers too. I made lettuce wraps for breakfast with them using homemade mustard, ketchup and tofu green onion and dill cream cheese and they're quite filling. This is the only way I can get my hubby to eat oats, lol! Variations are endless. I almost added some shredded cooked potatoes to them which would be really good too. Thanks for posting!

Oh my stars- “darn good” is an understatement! I love that they are so easy and quick!! When I’ve made sausage in the past it always involved lots of kneading the vital wheat gluten, shaping, steaming/stewing for hours, and praying the texture was right by the end. These are foolproof! PLUS added bonus of being easy on the tummy because they’re gluten free!! I’m using mine sliced with vegan alfredo from #CookingwithPlants and mung bean pasta- yummy!

I know when you did a video about the Breville smart oven you were doing some batch cooking. You said Breville had suggested just using two air sheets at a time. Could you do a video on maybe like burgers and fries? I did them tonight and the fries really didn’t have the crispness as they usually do. Figured I had my racks in wrong doing the double rack.
They do suggest that you rotate the racks half way through when you are using two racks for air frying. That might help everything to get crispy. The rack on top seems to get crispier.

I've not had luck w rice papers. Either too wet or too dry. I am excited to try this. The Planteaters have a sausage recipe that's quite similar as well. Yum
It does take some experimentation to learn just how to use rice papers. Getting the water at just the right temperature is key to success. Keep trying - my first few attemps were not that great but I kept at it and finally figured it out. These sausages are quite good - I hope you give them at try.

I know this comment is 2 years late but saw it that that long ago! I tried them yesterday. I LOVE the texture and the rice paper wrap. The taste was a bit off and I don't know why exactly. It had a bit of a bitter taste. I only mention it because I was wondering if you had any ideas as to why. The only thing I could think of is that I used poultry seasoning instead of sage and maybe too much fennel... I love fennel and wonder it fit could have made it bitter. I will try it again with real ground sage and less fennel. I will say that I didn't have tomato sauce made but put some ketchup on it and it off set the taste. This recipe has great potential and is really heart Healthy - THANK YOU!

Once I cooked them in the rice paper skins, they went extremely soft, almost 'pulpy'. Any idea why? Are they meant to do that? Yours looked much firmer.
I am making these as I watch your video so far I have them in the refrigerator for the first chilling but I'm having to use white rice paper cuz that's what I have handy. So we will see how they turn out I can't wait to try them. I'm hoping to really surprised my meat eating husband with them.

Funny, I was watching while I had my E2 Cookbook in front of me, as did you. As much as I cook, the idea of making the brats/sausages seemed daunting. Thanks for showing me how easy it really can be. This will be a game changer in my house!
Have you tried freezing these sausages after cooking them? Does it work well? It seems to take far too long for so few sausages (I have a big family), so thinking of quadrupling the recipe so I would not have to make the recipe every time we want sausages for something. I think adding some paprika, chilli, etc would be great for making some chorizo or even pepperoni spices for making pepperoni for the pizza. But I love the Mediterranean herbs and think they might work well for just a herby sausage. Thank you for sharing this. And if you are unaware, you can make your own version of quick oats simply by breaking the rolled oats down in your food processor into smaller pieces. I do this for midweek breakfasts on cold mornings, it is so quick that I do not mind doing it fresh each time, so I know it retains all the goodness and freshness.
I have not tried freezing the sausage this way. I do however use the basic sausage mixture and make them into patties instead of the links. No rice wrapper required. I brown them in a non stick skillet. They freeze really well.

I have not made them in the air fryer - they work so well on the stove top. I do think some followers have tried it in the air fryer with good results. I would try just one or two at a time in the air fryer until you find the right temperature and time. Come back and let me know how it goes.
You added a big step I'd like to avoid if possible. I'd like to avoid the wrapper concept. My goal is to make sausage patties (that would fit a normal hamburger roll). From other recipes I've watched folks make big logs of mixture, roll the entire thing into foil, and either boil or bake it for a bit. When finished, the end product is able to be sliced (like deli meat). Do you believe THIS recipe could do that, or do you believe that it would crumble and fall apart at the slicing stage?
I have made the sausage mixture into patties and browned them in a dry skillet and that works well. I don't know if they would work for the long type thing you are describing. You would just have to give it a try and see what happens. Let me know how it turns out!
Any thoughts on a spice profile for a Wisconsin bratwurst using this base? I don't miss most animal products, but I sure miss those! Any ideas would be appreciated!
@@NutmegNotebookI have and that's the problem... the one's I've tried either had the wrong flavor profile or are for a huge batch of meat and hard to scale. I've even tried a few vegan recipes but not even close to what I was looking for, tasted more like a hotdog or regular sausage than brats!

J9 Como I haven’t tried an egg replacement but I think it would work. The ground flax acts as a binder. The egg replacement should do the same thing but I can’t say fur sure since I haven’t tried it, let me know if it works for you.

Not yet! but that sounds good. please give it a try and post back here on how it goes if you wish. I have not frozen them as we eat them all up. I am thinking that you could freeze the filling but i don't think the rice wrappers will work well with freezing. Maybe try freezing 1 and see what happens.

Well, I just learned what I did wrong those darned spring roll wrappers. I was trying to steam them before working with them. I think I got so frustrated that I threw the rest in the garbage!
I have seen different sizes in the white rice ones - some are smaller to make little spring rolls. The brown rice wrappers that I use are about 8 1/2 inches in diameter. I buy them at Whole Foods you can also buy them on Amazon and some other on line food retailers. If you have an Asian market where you live they might also have them.
spice mix: [3:40]
1/3 cup nutritional yeast
1 Tbs each: onion powder, garlic powder
1 rounded Tbs each: sage, Italian seasoning
1 tsp fennel seeds
1//4- 1/2 tsp red pepper flakes [to taste]
You can add fine diced potatoes, onion, peppers, tomatoes paste and cannellini beans as well.

Just skip the wrappers and make sausage patties and brown them in a non stick skillet. Works like a charm.

Funny, I was watching while I had my E2 Cookbook in front of me, as did you. As much as I cook, the idea of making the brats/sausages seemed daunting. Thanks for showing me how easy it really can be. This will be a game changer in my house!
Have you tried freezing these sausages after cooking them? Does it work well? It seems to take far too long for so few sausages (I have a big family), so thinking of quadrupling the recipe so I would not have to make the recipe every time we want sausages for something. I think adding some paprika, chilli, etc would be great for making some chorizo or even pepperoni spices for making pepperoni for the pizza. But I love the Mediterranean herbs and think they might work well for just a herby sausage. Thank you for sharing this. And if you are unaware, you can make your own version of quick oats simply by breaking the rolled oats down in your food processor into smaller pieces. I do this for midweek breakfasts on cold mornings, it is so quick that I do not mind doing it fresh each time, so I know it retains all the goodness and freshness.
I have not tried freezing the sausage this way. I do however use the basic sausage mixture and make them into patties instead of the links. No rice wrapper required. I brown them in a non stick skillet. They freeze really well.

I didn't count them but I think it made about 10 or so. They are so good!
Have you tried baking them. If so does the wrapper disappear this way too.

I have not made them in the air fryer - they work so well on the stove top. I do think some followers have tried it in the air fryer with good results. I would try just one or two at a time in the air fryer until you find the right temperature and time. Come back and let me know how it goes.

You added a big step I'd like to avoid if possible. I'd like to avoid the wrapper concept. My goal is to make sausage patties (that would fit a normal hamburger roll). From other recipes I've watched folks make big logs of mixture, roll the entire thing into foil, and either boil or bake it for a bit. When finished, the end product is able to be sliced (like deli meat). Do you believe THIS recipe could do that, or do you believe that it would crumble and fall apart at the slicing stage?
I have made the sausage mixture into patties and browned them in a dry skillet and that works well. I don't know if they would work for the long type thing you are describing. You would just have to give it a try and see what happens. Let me know how it turns out!

do the rice papers stay somewhat soft after cooking. I've used them as bacon flavored goodies but they got so hard I couldn't eat them!
They stay somewhat soft, much like a non vegan sausage link casing.

I have never had one so I can't say. Look up a recipe on line for bratwurst and adapt those spices accordingly.
@@NutmegNotebookI have and that's the problem... the one's I've tried either had the wrong flavor profile or are for a huge batch of meat and hard to scale. I've even tried a few vegan recipes but not even close to what I was looking for, tasted more like a hotdog or regular sausage than brats!

We have not tried that but others that have made this recipe have with good resluts.

I am sensitive to seeds. Is their a replacement for the flax? Would an egg replacement work?
J9 Como I haven’t tried an egg replacement but I think it would work. The ground flax acts as a binder. The egg replacement should do the same thing but I can’t say fur sure since I haven’t tried it, let me know if it works for you.

I tried a very similar recipe with no flax, just oats. The oats are so gooey that I don't think you need to substitute anything.

I don't knowi because I haven't tried freezing them myself. Maybe try freezing one uncooked and one cooked and see which one works best.

Not yet! but that sounds good. please give it a try and post back here on how it goes if you wish. I have not frozen them as we eat them all up. I am thinking that you could freeze the filling but i don't think the rice wrappers will work well with freezing. Maybe try freezing 1 and see what happens.

I have not but I think steel cut oats might be too dense and chewy but you should try it and see how it goes!
Well, I just learned what I did wrong those darned spring roll wrappers. I was trying to steam them before working with them. I think I got so frustrated that I threw the rest in the garbage!

Is that ground sage??? Or just dried?
I didn't have the brown rice wrappers so I used the ones I had. Do they come in different sizes your brown rice ones looked bigger then mine?
I have seen different sizes in the white rice ones - some are smaller to make little spring rolls. The brown rice wrappers that I use are about 8 1/2 inches in diameter. I buy them at Whole Foods you can also buy them on Amazon and some other on line food retailers. If you have an Asian market where you live they might also have them.
