Dairy-Free & Nut-Free Roasted Garlic Alfredo Sauce | Chef AJ Recipes

    ROASTED GARIC ALFREDO
    Traditional Alfredo sauce is made from cheese, butter and heavy cream. Here the creaminess comes from cauliflower. Hard to believe it tastes so decadent.
    INGREDIENTS:
    24 ounces steamed cauliflower (approx. 8 cups)
    ¼ cup roasted garlic cloves
    3 Tablespoons lemon juice
    4 Tablespoons nutritional yeast
    1 teaspoon Benson’s Table Tasty (or your favorite salt-free seasoning)
    10 ounces chopped onion
    10 ounces sliced mushrooms
    1½ pounds spiralized zucchini or spiralized butternut squash
    PREPARATION:
    In a high-powered blender, blend the cooked cauliflower, roasted garlic cloves, lemon juice, nutritional yeast and Benson’s Table Tasty until smooth and creamy. Set aside. In a large sauté pan, water sauté onion until caramelized and brown. Add mushrooms and cook until nicely browned. Add zucchini and cook for a minute or two until al dente. Add the sauce and stir until hot. Garnish with fresh parsley or arugula.
    CHEF’S NOTE:
    If you eat pasta, this sauce would be excellent on it. It’s also delicious on a baked potato.
    Roasting the garlic imparts a smooth, mellow flavor in this creamy, dairy and nut-free Alfredo sauce. Here we serve it over a gluten free bean pasta and spiralized butternut squash noodles.
    I am using the Pampered Chef large sauce skillet. If you are not comfortable using a non-stick pan, buy the biggest and best pan you can afford. Many people like using a ceramic pan, green pan, Scan Pan, Copper Chef, waterless cookware or good old stainless steel. Cast iron and aluminum is not recommended. Whatever pan you select, you never need to use oil to saute.

    I’m following your program and have lost 23 lbs in 2 months. Thank you for all your video’s. The hospital I work for has a plant based support group I attend which is also so helpful. I haven’t been able to stick to dietary changes for over 15 years. I can’t tell you how wonderful I feel. I want to continue this way for the rest of my life. I have about 150 more lbs to loose.

      @@face1647 She uses the frozen riced cauliflower in several other recipes and thinks it’s wonderful so I’m assuming that would be a yes because it’s just cauliflower that’s been chopped really small

    I bought my chopping tool at Subway...yes the sandwich place. They used one to chop the salad I bought...and I said, I need one of those! They sell them and they work wonderfully! I believe it was only $7.00...love, love it.

    I Like it how Chef AJ always uses the term Food Addict nonchalantly in conversation.
    We should be talking in everyday terms about our addictions and not be ashamed of them, but to address our addictions head-on. Food is the number 1 addiction, and next to hospitals, it kills more people than smoking, car accidents, casualties of war and street drugs, combined.

    Thank you for mentioning what and how much meat you feed Bailey. On Dr. Fuhrman’s website he’d mentioned feeding the smallest amount of meat with adding raw/cooked veggies, some starchy veggies, ground nuts and fresh fruits. My 12 year old Jack Russell is about 18-19 pounds. I supplement with good quality probiotics, vitamins and minerals and fish oil. I like cooking his food so that’s about the amount of minced meat he gets at each meal. He wolfs it down and finishes off each meal with a raw carrot to help clean his teeth. Nobody can chop any veggies or fruits without him begging for some! Feed our dogs like us for good health and longevity! Avoid chemicals and the worst and cheapest dog food used “non human grade meats” (roadkill, rotten disease ridden meats, and even euthanized pets and DOGS!!) And your dish looks fantastic, too! Dinner tonight!😊🌸🌱

    Hi Chef AJ, I've been following you for quite a while and I have to say, I love your style. I'm a board-certified holistic health coach and I specialize in working with diabetics and how to reverse their disease. I've lost tons of weight and have also reversed my own diabetes as well. I live in a city of great food...New Orleans, LA and I must tell you....getting people to change their lifestyles is next to impossible out here. I always hear that "Well, you gotta die of something, I ain't changing the way I eat." I'm working with another lady out here trying to get the word out about what Holistic Lifestyle Changes is all about.....any ideas to get people to listen to what we have to say?       I live in the south too. I’ve found that even if they have a bad health scare only a small percent will be interested. I’m thankful the family I’m closest to eats this way. We’ve seen serious health problems melt away! And now oils, sugar, and animal products repulse a few of us. Others miss their old way of eating, but they won’t go back or even cheat because they feel so much better.

      Christy M., I know, but have you had New Orleans cuisine? It was even hard for me. But when my mom and both grandfathers died from diabetes, that was a game changer for me. Even though being Creole, and the Creole foods are very delicious, I had to come to the realization that my health comes 1st. I'm a 4 time cancer survivor and I don't plan on going back to the way that I used to. I guess it's just a great mindset!

    What’s bad about about 100% whole wheat pasta? Does that cause weight gain?

      It depends what your total diet is but I don't recommend any processed foods for folks who are overweight or food addicts.

      CHEF AJ then that means white rice is basically the same as whole wheat pasta? Should avoid?

      hammypie I've heard AJ talk about white rice. She will eat it if she can't find brown, as a last resort. White rice is not ground into a flour, so it's not completely off the "compliant food list", but the fibre has been removed, so brown rice is better.

    So... I buy your book to get the recipe only to find out it's not in the book, then figure out I have to go to a website and enter my email to get "free" access to wait through 9 days worth of other emails to get to the one I want. I feel like I got totally jacked.

    I have both 'Unprocessed' and 'The Secrets to Ultimate Weight Loss and have not found the recipe for roasted garlic sauce....frustrating!

    Bang! Bang! Bang! You are so noisy! I find that I have to watch the video, not just listen to it, because when I listen to it all I can concentrate on is the noise. Good ideas though!
