    So happy to find your channel today. 15 years of chronic afib damaged my arteries [the endothelial cells that provide oxygen and help the heart tolerate fats] and so any oils, roasted nuts and seeds and of course saturated fats, cheese and animal products would cause artery spasms. It took me almost 3 years to get the spasms to stop. The last thing to go was almonds. Even though the bag said unroasted I think the process they go through makes them an inflammatory omega 6 fat. I have gone several weeks with zero artery issues but then have a tiny slip up which would be a tiny bite of something that had oil or butter on it and that very night my oxygen is so low that my heart starts spasms in my sleep. Avocado, chia seeds and unroasted walnuts never upset my heart. Its wonderful to find your heart safe recipes!

    Thank you. Your recipes always check all the boxes for healthy eating. The world is a much better place because of people like you that freely share the goodness of a whole food plant based oil free life style. Now I know the fine art of roasting vegetables.

    @Nutmeg Notebook I recently purchased the Breville Smart Oven Air but have a few questions about protecting the lower surface and choosing the correct air dryer basket Liner...the crispy cook mat you suggest is currently unavailable...
    I'm looking for options that are healthy and also are able to be trimmed to size, especially the crumb tray liner.
    I would appreciate any feedback so I can proceed and start enjoying my new oven.

    Thank you for this recipe! I am curious as to how you decide between using the oven or the Breville. Also, would potatoes work well with this recipe?

      Any veggies would work. Potatoes are best chopped small to make sure they cook along with the other veggies that usually take less time

      Aqua- faba is the cooking liquid from canned garbanzo beans or the cooking liquid from dry beans that you cook in water at home. Google it and you’ll be able to read about how it’s used in many different ways.

    What a joke. You haven't roasted anything - you've steamed them. Roasting requires about 500 degree oven - anything less is baking.
