    You might try crockpoting your goat meat with onions, tomatoes, mushrooms, and bell peppers. Add some extra V8 or tomato juice if it needs more liquid. Season it however you like. This recipe is good with virtually any meat or poultry, and it will help tenderize even the toughest meat because of the acid in the tomatoes. Depending on your choice of seasoning you may need to add a bit of sweetness to balance the acid. The tomato-veggie gravy this dish makes is great over mashed potatoes or rice. We cook everything from chicken to deer this way, and have yet to find a meat or bird it doesn't work well with.

    Regarding tenderness and juiciness, you might try putting some lime juice on both sides of the meat before cooking it. The lime juice will soften the meat but won't alter the taste. The longer you leave it, the more tender it will be. BTW lemon juice will do the same thing for poultry. Enjoy!

      I love ALL of those seasonings for game meat. We like the original and the cactus dust. The seasoned flour is great too. And reasonably priced.

    For a little dog he run real fast ! Can you put potato s in your cooker ! I love goat my family has it on special family outings ! We had pheasant. Wednesday it was real tasty ! My dad marinates to go before we cook it !

    I pound my goat chops with a mallet then rub em with apple jelly and apply my favorite seasoning.....l will heat the remaining jelly in the microwave until it liquifies....while the chops are cooking I will brush more jelly on em and add a little more seasoning.....I prefer it to most steak when they are cooked that way......also I use only natural lump charcoal.....it’s 100 times better than briquettes.

    Try cooking them in a slow cooker with a can of cream and mushrooms soup until tender . Thats how we cook are tougher pieces of lamb.

    I've only eaten goat twice, at Indian restaurants, so I'm certainly no expert, but what they did, and what I hear a lot is it's stewed, or canned. I guess it's a bit tough, but stewed just falls off the bone tender. Maybe ground, or marinate it over night in something that will make it softer, like something acidic, or yogurt. Something like that.

    Looks good, next time wrap it and let it sit for about 30 min after you finish cooking it. It will help with the chewiness and moister.

    Have you had or ever made birria de chivo or barbacoa ? It’s like a Spicy goat stew. It is really good and in my culture it’s made on holidays or birthday. It’s made from the goat leg(s) in a slow cooker (crock pot is the best way) or you can boil it slowly. Most birria recipe are for red birria which is best tasting.
    Barbacoa de chivo is made from the (2) goat shoulder. And is steamed till very tender for soft tacos. BUT I have found that baking it in the oven covered in foil at @350 for approximately 4 hours or until meat falls off bone is much much better. Any how let me know.

    West Indian, Latin and Middle Eastern people love goat meat. I'm interested in trying a minced or shredded goat taco. My mom does a really good curry goat, a few bones included for extra flavor, she stews it for a couple hours and it really holds flavor and turns out tender and savory. The meat isn't as stringy as beef but still pretty similar. I've never had roasted goat, its always been stewed. Actually, Mexicans have a Chilli Colorado recipe that you can cook with beef or goat, you should try that in the future.

    There is tons of middle eastern videos on how to bbq goat meat, you may want to watch those. I'd not smoke goat but those looked good. I have been eating goat meat for the last 20 years, pay $13-$15 a pound in Seattle.

    Dad says if you soak your meat in beer and honey flavored barbecue sauce overnight it will tenderize it and make it even more delicious and I can contest to that because it is mouth-watering and you can add any other spice you like to it before you go to cook it

    Goat is better cooked in water and then just add some oil and seasoning at the end and fry them up,if you don't they can be chewy and dry. I think the mince worked better because it had pork added

    Next time you have a goat processed tell your butcher you want it bone out and to tenderize it. Changes the whole flavor and it will melt in your mouth.

    oven with a little water and oil, butter, spices
    a period of 2-3 hours of 360f
    and it gets delicious and soft meat
    when cooking, the meat turns every half hour on the other side,
    can be covered with a lid or aluminum foil
    bottom under garnish potatoes, onions, carrots ...

    Not sure if you said it in a previous video but next time have them hang those carcasses for two weeks and age that meat.
    Also get those chops cut into 1” thick steaks.
    Both of these techniques will improve your meat flavor and more importantly tenderness.
    I have a walk in cooler and I do it to all my deer. Oh man you can really taste the difference and actually grill a deer steak and eat it like a sirloin.

    Slow cooker recipes are some of the best ways to prepare goat or cabrito as our friends south of the border call it. Cooked in a pepper adoba sauce and served over rice or in flour tortillas. Braising in a Dutch oven works just as well.

    I've only ever eaten goat once and it was from a West Indian woman who slow cooked it.. like a pulled Pork dish.. the goat was amazing.. but I've Heard that you don't eat them like steak. I would slow cook them for about 8-10hrs or even smoke them they way you do.. still...fascinating process you went through. BTW. I was researching how to exterminate weeds using goats and this came up

    Never had goat, but we LOVE lamb. Throw some bitter herbs on and grill em up! Garlic, rosemary, onion make your tongue slap your face!
    Never seen sausage cooked like that, gonna have to try it!
    Funny to see your Pyrenees run for cover when the thunder started, ours do the same thing. They hate storms!

    You should try using a meat tenderizing device on your goat. I can’t remember the name of the push down kind that I have. But it works really well on tougher meats.

Also I am a very trim happy person when it comes to deer meat no fat, no silver skin, everything basically but pretty red meat should one trim goat the same way.

    I have been meaning to get some Everglade seasoning. Just keep forgetting. The goat meat and sausage looked great. BBQ goat is good. Maybe you could slow cook the goat about half done and then put in the smoker to finish up.

    Before refrigeration, beef was mostly raised for the fat it produced. Meat was something of a by-product, and, so, there was a lot of it. Beef was meat, not because it was better, but because it was cheap. Goat has more flavor, and there was less waste due to the smaller size. Frankly, goat tastes better, and is better for you than beef or pork. Given the poor quality of beef now, I'm ready to go buy whole butchered and packaged goat meat... but where ? And, how to choose cabrito ?

    I am not afraid of Goate meat because when I was little, my sister could not eat beef ,pork ,fish ,my be she eat chicken an trucky because my sister was allergic to all kinds of food an meat, except Goate meat .an my Father did a garden an my family grue up on a garden.     I have good friends who are Maasai warriors/herders in far SW Kenya. It blew their minds when I told them that almost no one in America eats goat. You should try cooking "authentically" by putting the intestine inside the stomach, then putting it all inside the goat, cooking underground, and serving it all on a banana leaf. My friends refer to the stomach/intestine combo as "African wedding cake." It's not as bad as it sounds.

    I have found that goat meat, unless it is ground, is chewy, like your wife said. Slow cooking helps.
