As a person born and raised in america, I also strongly believe that you if you use an animal for food *goats, pigs, cows, fish those kinds of animals* that you should use every part of the animal in some way. even the bones, organs and blood. But I guess that's because my dad used to hunt. Also, you should thank the animal for sacrificing itself for your next meal.

You may or not have known but in North America we DO eat the cow's udder. Just not like that or by itself. I worked at a meat packing plant / slaughterhouse and the udders are washed and saved and added in process meats like wieners, bologna, mock chicken, etc.
We have this hot or cold food thing in my culture too. (I am from Iran) We call this Sardi (for cold) and Garmi (for hot) but the way we think the hot or cold food will affect us is mostly by changing the way our digestive system works. For example if you eat honeydew (which we believe is in the hot category) you might get a sore throat and you might have difficulty pooping later! But if you eat eggplant or fish (which are in the cold category) you might get a tummy ache and have a simulation of what Taco Bell does to you! 😆
Hi sonny, could you please do an episode in Sierra leone. It's a beautiful country with lots of tasty dishes which you will love. I would say it's quite similar to Nigeria when it comes to the way people behave so be safe.
Goat is so underrated! Here in the U.S., my neighbor raised a number of goats for meat. I helped with butchering once as a kid, as a learning experience. They gave my family about a quarter of the meat as thanks! Though there is a strong, distinct flavor, it was so useful for us to have when living on a budget. We were eating on that goat for about a year! Plus, they're just so easy to care for, and are super beneficial to raise. Notably for helping with difficult brush removal! Gotta say, that roasted goat looks *_amazing~_*

BTW, Sonny, the Chinese medicine concept of foods having different "heat" levels -- like rabbit being a cooling food and beef being a warming food -- is actually catching on in the States as holistic medical practices becomes more popular. In fact, because our pet dog tends to get overheated easily, our veterinarian has us feeding him raw duck because it's a neutral food! Keep up toe wonderful videos!

I have the fondest memories of my cousins cooking Goat every summer, they had a goat & lamb. My cousin husband was Greek, and boy did he know how to cook both meats. Goat & Lamb were cooked to perfection. I really miss those times. He's recently passed away, but his son's carry on the tradition. But we live in different places. But I always try to get it when I go to Greek town. Yummy 😋

An addendum to the chapter on goat's udder: I don't know if it is still eaten now, but thirty or so years ago, cooked, pressed cow's udder could be bought in butcher shops in northern England, along with a number of other less well known offals. It was called 'elder' for some reason. As far as I know, it never made it into southern England, possibly because the people here are are more affluent, and never felt the need to make of every even remotely edible bit of a butchered animal. It's a shame, because after the BSE scare, udder is probably one of the safer offals to eat!
Is the popularity with the goat meat though? Or is it still more the goat milk that's popular? I know goat cheese and milk has been popular-ish for a while. I'm in Canada and it's been a while since I've been down to the US so I'm curious. Goat meat isn't a thing in Canada at all from what I've seen ..but I also don't eat meat ...so maybe I just don't notice? Edit: I was also wondering if it's popular having the goats as pets? (To milk ) Do you raise to sell? Or for personal use?
