    Assam Laksa noodles is a popular dish known world wide. Even food explorer guru, Anthony Bourdain loves this amazing dish and never fails to have it each time he travels to Penang. He raves about its deliciousness and amazing taste. I can understand his enthusiasm.
    With so many tantalizing flavours coming together, this dish is a definite delight to savour. The smoothness of the noodles, small pieces of fish, shrimp paste, fresh shallots, cucumber, pineapple slices and of course, the slightly spicy sourish soup just complement each other so well. The soup will surely tease your taste buds and stirs up your appetite with every mouthful. Of course, it is such a pretty dish too!
    Just a reminder, be sure to remove the bones thoroughly from the fish. Although the preparations may seem intimidating, do not be discouraged. You will be impressed with yourself once you taste the labour of your efforts. So will your loved ones!

    Haha I'm diggin the lisp, it's really cute.
    Can you attempt to make some dishes which doesn't require so much region specific ingredients? Instead,you can makes dishes where it's a combinations of flavors. Like Gadogado, you can find most of its ingridients in an Asian market but it's a roller coaster of flavors.

    I've never seen this type of laksa before, but it looks amazinggg. Would it be possible to include pictures of the missing ingredients in the future though? Just for a better visual of what to look for :)

      The first ingredient is the flowerbud of the torch ginger (Etlingera elatior), the second ingredient is dried Asam gelugur (Garcinia atroviridis). I hope that helps :)

    After you removed the fish meat, you should cook the soup with the fish bone together. Before you add fish meat to the soup, remove all fish bone and the laksa leaves as well. The taste will be more tastier and all you need for the broth is fish :) best greetings from Malaysia

    I'm a Brit and for years I have cheated by using a tin of pilchards in tomato sauce. It really works. There used to be a company in Camball St. Georgetown, Penang with an amazing Assam Laksa dry mix. Also curry kapitan etc.. Sadly they sold the company. I think it was called Hoop Loong.

    Since you are based in Germany - Where do i find kalamansi, bunga kantan and assam gelugur? Assam Laksa is to die for and i dont want to substitute more ingrediences than nessecary..

      As mentioned in the video, my mom brought bunga kantan and assam gelugur from Malaysia for me. I have not found any in Germany. You can substitute assam gelugur with tamarind. As for calamansi, you can sometimes find them in Asian grocers (though very rarely)...

    I love this dish, but sometimes the cook doesn't take out the seeds from the Tamarind and leaves the coriander in the fish broth with fish bones!! Imagine the texture and flavor of the broth that has been sitting in a pot for more than 6 hours, with the above still inside. Heated up just so that it is lukewarm, with a pasty grungy mix of fish flakes, with the consistency of wet tissue paper.(ahem) Fresh is always the best.

    Just for sharing.. Malay people must have Asam gelugor for making asam laksa. It's one of main ingredient. It's will give a more taste in your gravy. Btw, I like all your video recipe.

    i dont think it would work wihtout the ginger torch or myoga. the whole dish is over power by the myoga

      It will be a decent Asam Laksa. As mentioned, it's best if you can find them but some may not have the luxury :)
