Shopping List:
3 pounds collard greens
1 cup Vegetable Oil
1 cup All Purpose Flour
1 onion diced
1 Green Bell Pepper
3 Celery Stalks, chopped
4 Garlic Cloves
2 Bay Leaves
AP and Hot AP
smoked turkey
10 cups Chicken Stock or Water
1 lb Andouille Sausage
1 - 2 tsp Cayenne Pepper (optional)
Salt to taste - บันเทิง
Make this now then freeze them for Thanksgiving. Something that freezer does for those seasonings.

Have you ever had mixed greens? When I grew up, we always mixed collards and mustards in our greens. The flavor is so balanced. One is sweeter and the other more bitter. Of course, we never allowed a green pot to escape some shots of vinegar either. That’s very creative to add a rue for flavor.

Just a suggestion but next time you’re adding raw garlic clear a little space in the center of the pan and drop the garlic there for a few secs so it gently roasts before you stir. It’s not only more aromatic but it guarantees there’s no raw garlic stirred into the mix that may try to avoid its moments in the heat.
OMG!!! Thank you for this recipe, I made these greens and they cleaned the pot and was upset because there was none left. I'm so glad I set some aside for when I got back home. I will be doing my greens like this from now on they were so DELICIOUS 😋 YUMMY!!
I made the collard gumbo this Sunday 11/20/22 and it was delicious everyone at work wants me to bring them a bowl. I did do it a little different though. I used my favorite together wood sausage, smoked pig tails and smoked turkey neck.

I'm watching from the Bahamas. I just love watching your videos. So why the hell not. We're here for a good time not a long time. Thank you for uploading them all. I've tried introducing collard greens to my island family a few Christmas ago. They didn't like it. I guess I do because. Part of my childhood to teenage years. I were always back and fort to New York city. So I fell in love with the American Thanksgiving tradition meal.
Does your fam eat any kind of stewed or sauteed greens? I know callaloo is popular in Jamaica but I'm not sure if it's eaten in other Caribbean nations.

THIS is now the way I'll always make greens. This is sincerely delicious 😋. Ive made it twice now and its been a hit. I learned from my first round though and continued stirring. The first time the roux began to settle and almost ruined the whole pot. I cooked it on low to med-low for about 2 hours and it was amazing!! Loved it!! Thank you for the recipe 🤗🤗

I made these. My family loved them. I used necks. I see the benefits of using the turkey leg instead. It's more meat and flavor. I will make again using legs instead.

Thats different but sounds great, im creole myself and weird enough a roux was probably the hardest thing for me to master, everything is easy for me but a roux took me a while, but i finally perfected my pot lickin juice and y'all had to come with this lol 😆 definitely gonna try on Thanksgiving

I wash my collard leaves whole in a vinegar and baking soda solution. Then I rinse. Lay them in top of one another and cut the center stem out. Then roll and cut into strips.
Looks good. Never heard of gumbo collards but I'm try it. Only thing I might cheat. Using Frozen collards. 👍
