Saw the video this morning and made it tonight. I did do the Kevin from the office where I toasted some ancho chilies before searing the meat. Used a little cheaper cut of meat, which meant 3 hours before I could shred. I did the whole can of chipotle and mashed them in the pot with a potato masher. Did use fresh garlic instead of paste and just used regular chicken better than bouillon. Didn’t have Sazon seasoning but mixed my own. Did white chili beans instead of black and doubled the entire recipe. It was pretty dang good man… My family can make some pretty good chili but this one was in a different ball park. Great job and thank you. Had a great day cooking and eating with the family cause of you and that’s what it’s all about.

I followed the recipe to a T, and this turned our amazing. The best chili I've ever had. It is a lot of work but I really enjoyed the process, it tasted similar to barbacoa that I make, but excellent for a chili. And it continues to get better everyday as the flavors meld.

What I do is buy bone short ribs, season just as you did but I used my ninja foodi, I pressured the short ribs after I satiated l, after that I pressure cooked for about 50 minutes depending upon much ribs you’re cooking. I put all the stuff to make a beef stock at the same time. Strained all of it after, well almost everything!( I ate the carrots and onions). It’s really good, try it. I use the base for many other recipes. Steak soup, ect. Thanks for all your videos!! I bought my son as well as my son in law both , your knife. I use my sons! It’s kinda heavy for me, I have little hands. I’ll end up cutting myself so I stick with the ol stand by. Do try the ninja foodi 8 quart! So cool, has a built in probe, only one lid, air fryer… I freakin love mine!!

My 8 yr old granddaughter just woke up and we ( her grandparents) were watching this recipe and she sat down with us to watch and when it came to the finished product she said -Oh my goodness that looks beautiful! She loves her some chili Minus the cheese and sour cream cuz she is highly allergic to dairy protein. Eggs are another allergy. She also loved the spoon drop. 👍
i went back and listened to your cooking instructions and now have a printable recipe. and when i print them out, i put them in page protectors so they dont get stained or wet and i have a magnetic clip to keep it above the stove on the vent-a-hood. can't wait for Sunday's LIVE CHAT.

I have made this twice in two weeks. This recipe is off the hook! My Family loves it. Made my own Cajun Seasoning, grated four cloves of fresh garlic, used 2.25# of short ribs, other than that I stayed true to the recipe. This is my new go to chili recipe!
First, love this recipe, great flavor. I've made it twice now, once with bone in and once with boneless. Each time after 2 1/2 hours the short rib was not close to done. Do yourself a favor and if you have an instant pot, throw the short rib in there with beef broth for 45 minutes. Saves the headache. Not sure if I'm not simmering hot enough or what, but instant pot tot the rescue. I love the flavor of this chili either way.
Previously I hated chili but I made this recipe last winter and it is ABSOLUTELY DELICIOUS!!! This is one of my football season go to dishes! Some times we dump ours right into bags of Doritos or corn chips and garnish it in there....mmmm mmmm goooood!!!

I come from a long line of chili cooks and I think you missed the most important part of cooking a great bowl of chili. The most important ingredient in chili is to cook it the day ahead and refrigerate it over night. Don't know the science behind it, but the rest intensifies the taste of the spice blend. Man, your chili looks awesome, and I will be making a pot this weekend.... and eating it the next day!! Thanks for the video.
