The only difference between the 2 is she put the casserole in a pie shell and used pecans, and no water chestnuts. Thank you so much for your videos!
I am thinking about making this as an appetizer spread for a party with roasted Italian or French bread toasted in the oven with a touch of olive oil and then I would make the chicken a bit finer for that use.

This was served at a large engagement party for my husband and me 55 years ago! The caterer became famous overnight in our small community, and she was tapped for many more parties. Her creative touch left everyone happy and inspired me to nurture success in the kitchen. She gave me the recipe following our wedding, and it was perfect for the dinner parties we hosted as young newlyweds. I became more interested in cooking and eventually earned a reputation as a good cook. But this was when cooking was still in fashion. Today most young folks pick-up food for their families and friends-nothing wrong with that, but it is always a real pleasure to sit down to a home-cooked meal. Thanks for your advice and well-done examples of good food cooked easily and simply. Maybe you will be an inspiration to young couples just starting on their own kitchen journey.😊
I have a hot chicken salad recipe that is pretty close to this that my mother would make. I love it! The only differences is no water chestnuts, 1/2 cup mayo and 1/2 cup of cream of chicken soup, 1 tablespoon of pimento. When I reheat leftovers, I just add some fresh potato chips on top. I haven't made it in a while. This will be on the menu this weekend!
I've had this recipe for about 40 years. I love it. I don't fix it often. My favorite way is to fix it with leftover turkey at Thanksgiving, or when I fix a turkey breast. i mainly fix it when I'm hosting a game night. I double the recipe.

This is the same recipe I got from a woman I babysat for as a teenager in the early 70s. I loved that family & was so proud to make this for my own family. My recipe also included chopped hard boiled eggs. Haven’t made it in over 40 years - YUM!

I have been making a similar casserol since I was in the 5th grade (in my 60's now). We made it with turkey leftovers. Added a few dashes of curry powder and topped with dried chow mien noodles. Most parents in these days and age would be be horrified to know that I have been cooking since I was old enough to stand in a chair and stir a pot (although Mama did most of the chopping). I find myself alone these days and cooking for one is not much fun. I still find a joy and I read recipe books like fine novels. An escapee from KY, Sally

You know what I'd change about this recipe? NOTHING! I just made it, and my husband and I really like it. He actually said he liked it and could eat it again. He usually says, "It's not bad", when he eats something new. This actually got a vocal like, extra helpings and raised eyebrows with a happy grin when he ate his first few bites. I make a similar dish all the time but instead of a casserole dish I stuff large portobello mushrooms with the chicken salad mix and instead of potato chips top it with parmesan cheese! Its really yummy!

Hello Tom & Melissa- Thanks for the tip on the wet towel under the cutting board. Also on the fact that that you cannot use Miracle Whip in place of the mayonnaise. I usually alway use Light Miracle Whip . I love the cold homemade chicken salads , especially in the spring & summer. I think this is great to have it in a casserole form. I just would have never thought of it in a casserole & hot. I will be looking forward to making that in the near future. I will get some mayonnaise from the store. Here in central Kansas we have 4 more bouts of cold weather scheduled to come through. This weekend we will be getting the article air with it. This dish reminded me of an all time favorite casserole that I used to make years ago in the 1990's called, Chicken Divan Ingredients are cut or shredded chicken breasts, mixed with 1 can of cream of mushroom soup, chopped broccoli, a little milk, mayo, and a small bit of white rice. Mix it all together then placed in a baking dish, cover with shredded mozzarella cheese, and then cover cheese with torn pieces of sliced bread, then you bake it at 350 for about 20 minutes. It is very tasty and filling. Better reheated the next day or two. I may have to make it again soon! Love watching your videos, Melissa and Tom. Many days... my husband and I would love to come sit at your table!

I made that, sans onion, with more potato chips, for a wedding shower in individual pot pie dishes. It was extremely well received. One family got the recipe, and they continue to compliment me on the recipe years later. Using more chips, I do not add salt to the salad.
I made this for supper tonight with the peanut butter bars from your earlier video. And I used BBQ chips. Not knowing it the original way I can't say this was better but I can say this was delicious! I also substituted a squirt of mustard for the lemon juice, I didn't have any and knew I wouldn't use it if I bought it. The peanut butter bars are wonderful too. Both are going in my recipe book. Yum city ! This recipe is exactly as my mom made it back in the '60s on forward. Now I've rediscovered it with you two ! This is an amazing casserole to enjoy year 'round ! A couple of enhancers for you to take into future consideration since I can never leave well-enough alone 🙂: I like to lightly toast the almonds ahead of time in a non-stick pan, as it gives them an extra yummy flavor. I also use the same amount of mayo you used, plus I add a heaping tablespoons of sour cream - which ensures the creaminess even more without any fear of separation in the mayo when heated. Left alone "as is" and your./ my mom's recipe is an A +, and with my enhancers, another + 🙂 Also Tom, i love the way you scrape all the goodness out of your measuring cups and cooking implements when making your recipes. Other cooks I've seen leave too much "good residue" LOL ! Big time blessings and cheers to you both ! M.

Wow that looks absolutely Delicious. I feel that kids that are fussy eaters are that way because their parents made them that way. It is cooking what's easy instead of giving a variety of food. My kids ate everything or they didn't eat.
We felt very fortunate that our kids were willing to eat pretty much anything. . . at least once. As adults, they are probably better eaters than we are and that's saying a lot.

I am going to try this with the barbeque chips!!! When I make cold chicken salad, I use ranch dressing and curry. After I try it with the barbeque chips, I am tempted to try and add dry ranch dressing and curry. It sounds like a fun recipe to adapt and play around with.

I love potato chips but I'm also thinking Fritos. YUM. To cut down on the time even more a rotisserie chicken could be shredded or diced. One of the things I do, because I really like fresh, is to buy a bunch of lemons, zest them and put the zest in an ice cube tray that has smallish squares or rounds with about a teaspoon of lemon juice. Juice the lemons and put the juice in an ice cube tray with larger squares and freeze both. When frozen out in separate zip lock bags and toss back in the freezer. When you're ready to cook or bake take out a cube of the frozen lemon juice and toss it in or microwave it 1st. My ice cube tray holds about a tablespoon of juice. This doesn't really take all that long and is MUCH better than the bottled juice. When baking and the zest is needed defrost the zest and toss it in with the sugar, mix it up (I use my hands).

I have been making a similar casserol since I was in the 5th grade (in my 60's now).
We made it with turkey leftovers. Added a few dashes of curry powder and topped with dried chow mien noodles.
Most parents in these days and age would be be horrified to know that I have been cooking since I was old enough to stand in a chair and stir a pot (although Mama did most of the chopping).
I find myself alone these days and cooking for one is not much fun. I still find a joy and I read recipe books like fine novels.

I had this 46 years ago visiting missionary friends in Guatemala. We were invited to their friends home and wife made this dish. And I was always sorry I never asked for the recipe. You know what I'd change about this recipe? NOTHING! I just made it, and my husband and I really like it. He actually said he liked it and could eat it again. He usually says, "It's not bad", when he eats something new. This actually got a vocal like, extra helpings and raised eyebrows with a happy grin when he ate his first few bites.

I make a similar dish all the time but instead of a casserole dish I stuff large portobello mushrooms with the chicken salad mix and instead of potato chips top it with parmesan cheese! Its really yummy!

Looks really yummy! We put chips on top or cracker crumbs because we don’t really care for bread crumbs. I think sour cream & onion chips on the hot chicken salad casserole would be good also! Thanks Tom and Melissa 🐓🙏
Hello Tom & Melissa- Thanks for the tip on the wet towel under the cutting board. Also on the fact that that you cannot use Miracle Whip in place of the mayonnaise. I usually alway use Light Miracle Whip . I love the cold homemade chicken salads , especially in the spring & summer. I think this is great to have it in a casserole form. I just would have never thought of it in a casserole & hot. I will be looking forward to making that in the near future. I will get some mayonnaise from the store. Here in central Kansas we have 4 more bouts of cold weather scheduled to come through. This weekend we will be getting the article air with it. I think I would sauté the onion & celery to soften them before adding them to the dish, just to ensure they are fully cooked at the end.
You could do that. I'm not a fan of raw celery either, but I did think it was cooked well as prepared. But sauteing would definitely ensure that. Thank you so much for watching and being a part of our channel.

This dish reminded me of an all time favorite casserole that I used to make years ago in the 1990's called, Chicken Divan
Ingredients are cut or shredded chicken breasts, mixed with 1 can of cream of mushroom soup, chopped broccoli, a little milk, mayo, and a small bit of white rice. Mix it all together then placed in a baking dish, cover with shredded mozzarella cheese, and then cover cheese with torn pieces of sliced bread, then you bake it at 350 for about 20 minutes.
It is very tasty and filling. Better reheated the next day or two. I may have to make it again soon! Love watching your videos, Melissa and Tom. Many days... my husband and I would love to come sit at your table!

I made that, sans onion, with more potato chips, for a wedding shower in individual pot pie dishes. It was extremely well received. One family got the recipe, and they continue to compliment me on the recipe years later. Using more chips, I do not add salt to the salad.

I got this recipe in a cookbook collection I bought before I got married in 1966.
I made this for supper tonight with the peanut butter bars from your earlier video. And I used BBQ chips. Not knowing it the original way I can't say this was better but I can say this was delicious! I also substituted a squirt of mustard for the lemon juice, I didn't have any and knew I wouldn't use it if I bought it. The peanut butter bars are wonderful too. Both are going in my recipe book. Yum city ! This recipe is exactly as my mom made it back in the '60s on forward. Now I've rediscovered it with you two ! This is an amazing casserole to enjoy year 'round ! A couple of enhancers for you to take into future consideration since I can never leave well-enough alone 🙂: I like to lightly toast the almonds ahead of time in a non-stick pan, as it gives them an extra yummy flavor. I also use the same amount of mayo you used, plus I add a heaping tablespoons of sour cream - which ensures the creaminess even more without any fear of separation in the mayo when heated. Left alone "as is" and your./ my mom's recipe is an A +, and with my enhancers, another + 🙂 Also Tom, i love the way you scrape all the goodness out of your measuring cups and cooking implements when making your recipes. Other cooks I've seen leave too much "good residue" LOL ! Big time blessings and cheers to you both ! M.

Wow that looks absolutely Delicious. I feel that kids that are fussy eaters are that way because their parents made them that way. It is cooking what's easy instead of giving a variety of food. My kids ate everything or they didn't eat.
We felt very fortunate that our kids were willing to eat pretty much anything. . . at least once. As adults, they are probably better eaters than we are and that's saying a lot.

I am going to try this with the barbeque chips!!! When I make cold chicken salad, I use ranch dressing and curry. After I try it with the barbeque chips, I am tempted to try and add dry ranch dressing and curry. It sounds like a fun recipe to adapt and play around with.

I love potato chips but I'm also thinking Fritos. YUM. To cut down on the time even more a rotisserie chicken could be shredded or diced.
One of the things I do, because I really like fresh, is to buy a bunch of lemons, zest them and put the zest in an ice cube tray that has smallish squares or rounds with about a teaspoon of lemon juice. Juice the lemons and put the juice in an ice cube tray with larger squares and freeze both. When frozen out in separate zip lock bags and toss back in the freezer. When you're ready to cook or bake take out a cube of the frozen lemon juice and toss it in or microwave it 1st. My ice cube tray holds about a tablespoon of juice. This doesn't really take all that long and is MUCH better than the bottled juice. When baking and the zest is needed defrost the zest and toss it in with the sugar, mix it up (I use my hands).
