I made this tonight with the honey crisp apples and it was a big hit with the family. For me, I toasted some wheat bread with lettuce, tomato, mayo, onions and pickles. The sandwich was fantastic. I can't wait until tomorrow and do it again. Great recipe!
Yes, they sure are, so are a mix of red and, green grapes with a blend of mayonnaise and sour cream! I’d rather have my chicken more naturally sweet than, a overload of sugar, the way my mom and grandma made it like they have in the deli, it makes your chicken salad tend to taste mushy.

Hi Tammy!! I am watching late and as always, am enjoying watching you make delicious looking food!! As many times as I have TRIED to Like Chicken Salad with fruit and onions in it…😟…I just don’t. I boil my chicken while making stock, then use the dark meat for another use, and use the stock to make soup. I shred the white meat, add a small amount of chopped celery, a little parsley, fresh ground pepper, 1/2 to 1 teaspoon of dill pickle juice, Kraft Mayonnaise (enough to bring it all together but not make it runny), then toss it with a sprinkle of slivered almonds. No fruit..no onions. I love this on croissants, spread with a little bit of mayonnaise and some leaf lettuce. Most of the time I use this chicken salad to make stuffed tomatoes. I serve the stuffed tomato (half of a tomato cut almost through, into 8 wedges, then add a scoop of the Chicken Salad on top), with a 1/2 cup scoop of cottage cheese next to it, plus a couple slices of fresh cantaloupe next to the cottage cheese, and then a 1/2 cup scoop of homemade potato salad with freshly ground pepper on top. Around the stuffed tomato, I surround it with 6 club crackers. It is a very pretty and delicious summer lunch plate. Sometimes I will make homemade Cream of Asparagus Soup , enough for everyone to have a one cup serving. About 32 years ago this luncheon plate and soup was served at a bridal shower that I attended. It was SO GOOD and VERY PRETTY! I have made this ever since that day! It all was served with watermelon punch that was to-die-for-good!! I call this my Tea Party Luncheon! 😚
I don't put pickle juice in my chicken salad, but make my cole slaw now with just pickle juice, mayo, and pepper. I will also use dill relice and juice in tuna salad.
I've been using Crasins since I was keeping them in the pantry for my grandkids. I pop a cup of water in the microwave, bring to a boil, then add the crasins to plump up while I get everything else ready. I add them last after draining. Reserve the liquid in case your finished product is too dry. I like the celery, onions and apple chopped ultra fine. I like to add a little celery salt even though I have celery. When I'm being fancy I add some poppyseed. If it's not sweet enough I add a few drops of liquid Stevia and refrigerate a few hours (if I get it made in advance). Sometimes I've added a dash or two of cayenne pepper, even cinnamon. I know your Chx Salad is top notch Tammy, just like everything you cook. Edit: Oh, I forgot the juice of one small lemon.
I was raised on ranch farm cooking in Texas. Years ago I went to a deli that had the most delicious chicken salad I ever tasted. Along with the usual chicken salad ingredients, It had halved green grapes in it, and the real kicker-unsalted peanut halves. The top was sprinkled with paprika.
I add 3 finely chopped hard boiled eggs to the chicken mix. Also, prefer Hellman's mayo. Add about 1 tablespoon sweet pickle relish. My favorite sandwich!

My secret ingredient is so simple and one I always have in the fridge: several splashes of dill pickle juice from the jar. It is cheap and gives that pickle/relish flavor. We enjoy dried cranberries in our chicken salad. We've use a combination of different apples and sliced almonds as well. No secret ingredient per se, but there are never any leftovers! My crew will peel off a leaf of romaine lettuce and make a chicken salad wrap rather than using a tortilla athough soft tortillas work well, too, for a hungry crew! When I peel a onion, I take off the first outer layer of the onion because it can be tougher. I do a keto friendly chicken salad by using dill relish instead of sweet relish and adding dill as well. You should try granulated garlic and onion as well instead of raw onions. I do not add anything that is sweet, it adds carbs back. I find Hellmans is the best out of others I tried. Sometimes we're in the mood for certain tastes than we are other times. That's the fun in cooking! The phyllo shells are a wonderful idea, and I am so excited to use them!

People only use Duke's because they haven't tried Blue Plate. I like sweet chicken salad. Honey, apples, grapes, sweet relish, sometimes even a little Karo syrup do the trick, and always pecans and a little Dijon mustard.

When I started adding walnuts to my chicken salad, my husband declared it was the best he'd tasted. So I never leave out the walnuts now. :) rotisserie chicken (whole or bagged) hard boiled eggs pickles (sweet or kosher) onion real mayo and of course, walnuts. :)

Oh I bet that is so good! I make mine with a rotisserie chicken also.. I add mayonnaise, sweet onion, celery, sliced almonds, juice of a lemon, salt and pepper... The lemon juice makes it so good..
