  • An easy-to-follow recipe for authentic Creole-style pralines overflowing with delicious toasted Louisiana pecans. These pralines are shiny and melt-in-your mouth creamy. So give these good luvin from the oven Creole pralines a try.
    And remember: When yah mix a lil’ bit of Creole wit a lil’ bit of Cajun -- dats good eatin’.

    1 1/2 CUPS PECAN HALVES, [toasted]
    3/4 CUP GRANULATED PURE CANE SUGAR
    1 CUP LIGHT BROWN SUGAR [packed]
    1/4 TEASPOON SALT
    1 TABLESPOON LIGHT CORN SYRUP
    1/2 CUP + 2 TABLESPOONS EVAPORATED MILK
    2 TABLESPOONS SALTED BUTTER
    1 TEASPOON VANILLA EXTRACT

    I use other liquid sugars rather than corn syrup, such as -- and I can't remember. But I can always find them at the grocery store. I won't use corn syrup, and there are other things you can use that do the same thing.

    I have made these multiple times and I’ve tried bringing the heat up slowly, not stirring during the boiling time, stirring during the boiling time making sure to keep the sugar off the sides of the pan, buttering the sides of the pan before starting and letting the mixture sit in the pan to cool without stirring and I ALWAYS get a slightly grainy product. Not crunchy, but slightly grainy. Has anyone figured out how to get the candy without sugar grains? They’re still tasty but I’m a perfectionist who wants grain-free pralines.

      Bonjour Keyshia,
      I use a heavy copper saucepan specifically made for candy making. Mama used a heavy enamel or stainless steel pot and her pralines were no fail. So either of these should work well for you. Let us know how they turn out!

      I use a cast iron pot. But any heavy bottom pot is best. IMO
