The dark corn syrup is here to stabilize the wet sugar mixture and for a little more complex flavor than light corn syrup can provide. You can substitute the dark corn syrup with glucose, light corn syrup, or omit it completely. If you omit the corn syrup, you run a greater risk of the pralines crystalizing.
Hi there! Splenda doesn't caramelize the same way sugar does, so the texture and finish will be different. It might help to add a bit of molasses to help you get closer to what sugar would have offered. Experiment, and keep an open mind, since it'll be different, but an adventure!
