I was just found your video. I was looking for a easy recipe without the use of 100 utensils and ingredients. This is perfect. I already had most of the ingredients in my cabinet. I spent six years in the Fort Polk area and I fell in love with all things Louisiana. Pralines were one of my favorites. I always wanted to make some but was a bit intimidated. I'll definitely make this! Thanks Troy!

I just made this recipe as shown in the video, and the pralines came out beautifully. I made a couple of errors, though. I used 2 tablespoons of butter instead of 1/2 tablespoon-I followed what I thought I saw and didn’t read the recipe. :-( I also used 4 cups of pecans instead of 1.5-I had a monster-sized bag of pecans from Costco that I wanted to use up. I ground 1 cup of the pecans finely and coarsely chopped the rest. I think the biggest lesson I learned was to to preheat my cast iron skillet to high heat before adding the sugar, and evenly add the sugar in the middle of the skillet. What I actually did was to sprinkle the sugar across the entire bottom of my skillet and THEN turn on the heat. Because the sugar on the edges was cooler than the sugar heating in the center of the pan, it tended to clump and crystallize instead of melt. This led to some jagged spots on the bottom of the pan when I was stirring in the rest of the sugar and evaporated milk; as a consequence, I inadvertently splattered some on my hand while stirring. Ouch! Despite my mistakes, I can’t wait to make another batch.
Patti White I agree. I thought he used too much sugar and they looked burnt. I like Charlie Andrews' recipe. In that recipe, he doesn't add a pinch of salt. I do. They are delicious. God bless.
This is a fail proof recipe. Made them fit the first time with no issues. I’ve tried several and never succeeded. It’s more than a recipe- this shows techniques for success! Sooo good! 😋

After another failed recipe I decided to try yours and Im glad I did because these are great! My other batch never set up and were gooey but yours set up just after a few minutes on the wax paper. Next time Im adding more pecans because you can never have too many.

Made these as per your instructions and they are delicious. The next time l made them l made two slightly different changes. First, l toasted my pecans and second, l used my homemade vanilla extract. Either way they are very easy to make & delicious!!
Made dis last night added a little brown sugar took out a little white. absolutely delicious. Good and easy recipe. Family loved them. As good as the praline lady makes em.
Just seeing this, came back from New Orleans before the pandemic shutdown and all I can think of was how much I want pralinesssss!!! I need them in my lifeeeeeeee.
Have not tried this yet, although I have had pralines in Nola. Two things I always look for are ease of recipe (fewer steps the better) and a genuine enthusiasm on the part of the cook (always noticeable when it's pizza being made). Looking forward to giving this a go. Thank you for the video.

Yay! I made your recipe successfully - as in the first time ever that my pralines were not an epic fail. I thought they might be because my mixture was not thickening up as I stirred after taking off the heat. The spoon made a trail but it kept running back together. SO I simply put it back on the heat and boiled for another three minutes. Then after that I got it to set up,over quickly to drop them on wax paper...and voila!...beauties! I used 2 cups of pecans, and next time I will use less because these are a bit too thick and heavy with pecans. I like them flatter. Anyway I'm just thrilled that I didn't have to toss the whole thing in the trash as I've had to do with prior efforts. They set up (yay!) and they taste great (double yay!). Thank you, T-Roy! ♡

I've never attempted Pralines before, and everyone does it different. This recipe seems pretty easy. I'll have to try these. The best Pralines i've ever eaten, came from the home of the owner of Pat's of Henderson in Lake Charles, LA. They melted in my mouth.

I just finished my first batch of pralines according to your recipe instructions. I used a heavy bottom stainless steel pot. I used half whire and half brown which was actually evaporated cane sugar crystals. I used walnuts this time because they were left from Christmas, So I carmelized the white sugar etc added 1/2 cup evap milk stirred about 3 min and then added the nuts and vanilla stirring constantly and looking for it to leave a trail when pushing the spoon through the mixture. I might have cooked them a bit too long but overall am very satisfied with my first batch.
Cooking Pralines is very dependent on your local weather. It's a lot like baking. I'd use a candy thermometer to be safe, but sometimes, doing it the old fashioned way is much more exhilarating.
@@TROYCOOKS even with altitude and very very different weather than NOLA, if you let it reach that rolling, volcanic boil then set the timer for 3 minutes right then, I have yet to have it fail. It's knowing when to start that 3 minutes...wait for that heavy boil!

Lovely! When I was in the second grade in Ohio, c. '64, someone brought pralines from Louisiana for us to try. I was amazed and obviously never forgot it! Uprated.
They are a huge hit around the holidays here in the Southern US. We can usually find them pretty much anytime of the year in the gas stations like 7-Eleven, but they aren't as good as homemade. Thanks!!

I love PRAH-LINES and I make them every holiday! I was born and raised in Louisiana (Geaux Tigers--class of 1990) and crack up every time I hear the northerners say PRAY-LINES and PEE-CANS!
Love these... I expermented making them in my microwave, I also used condense milk and instead of peacans I used cashews, which tasted almost as good as the pecans. they were so delicious, I made mine smaller, lol they don't hang around long especially if you make them large.

Hey Mike, this is a very old recipe from Louisiana. If you try it, just make sure it's not raining or too humid. If there is too much moisture in the air, they won't turn out right. My great-grandmother had many Pecans trees on her property outside of Houston. Each year we were sent a large bag of these Texan pecans and my mother, and my grandmother used to make an awesome recipe for Pralines. I have not had homemade Pralines for years, T-Roy your recipe is spot on to what I enjoyed in my youth. 2 thumbs up!

T-ROY COOKS You are welcome sir. I have a question for you. Do you know by any chance how to make Louisiana Fish fry? I live in the Netherlands and unfortunately I can't buy it here in the stores! When I visit my friendds in TX and Louisiana I will get the bags from the grocery stores, but now I have nothing.
jerricette I have never made the La Fish Fry since it's easily found locally, but it's really a simple mix you could make yourself. It is mainly finely ground corn flour, or finely ground corn meal mixed with plain flour. Just throw in some Cajun type spices like black pepper, salt, cayenne red pepper, etc. It's really that simple.

jerricette Yes, you need whole cow's milk. Another factor that may mess you up is the humidity in the air. Like all baking and candy type recipes, humidity can make a huge difference in how the final product comes out. 30-50 percent humidity is ideal. My 2nd batch a week later was gummy and never hardened, but my 3rd batch a few days later was perfect. So, just keep trying and choose a nice sunny day to make your pralines. Even if they don't turn out right, they are still good to eat! LOL
I ran into a couple of problems. When I added the room temp evap. milk the sugar began to crystallize. So I got the temperature back up and dissolved all the sugar then started timing the 3 minutes when it came to a boil. Mine turned out too loose. They never got hard enough to remove from the paper. So I enjoyed them by eating them off the parchment paper. The taste was good but mine never got very hard. Next time I will try boiling 5 minutes and adding the milk very slowly. I could probably get the same result by adding less milk. I did everything just like you, even using a cast iron skillet.

Yay! I made your recipe successfully - as in the first time ever that my pralines were not an epic fail. I thought they might be because my mixture was not thickening up as I stirred after taking off the heat. The spoon made a trail but it kept running back together. SO I simply put it back on the heat and boiled for another three minutes. Then after that I got it to set up,over quickly to drop them on wax paper...and voila!...beauties! I used 2 cups of pecans, and next time I will use less because these are a bit too thick and heavy with pecans. I like them flatter. Anyway I'm just thrilled that I didn't have to toss the whole thing in the trash as I've had to do with prior efforts. They set up (yay!) and they taste great (double yay!). Thank you, T-Roy! ♡

I've never attempted Pralines before, and everyone does it different. This recipe seems pretty easy. I'll have to try these. The best Pralines i've ever eaten, came from the home of the owner of Pat's of Henderson in Lake Charles, LA. They melted in my mouth.

I just finished my first batch of pralines according to your recipe instructions. I used a heavy bottom stainless steel pot. I used half whire and half brown which was actually evaporated cane sugar crystals. I used walnuts this time because they were left from Christmas, So I carmelized the white sugar etc added 1/2 cup evap milk stirred about 3 min and then added the nuts and vanilla stirring constantly and looking for it to leave a trail when pushing the spoon through the mixture. I might have cooked them a bit too long but overall am very satisfied with my first batch.
Cooking Pralines is very dependent on your local weather. It's a lot like baking. I'd use a candy thermometer to be safe, but sometimes, doing it the old fashioned way is much more exhilarating.
@@TROYCOOKS even with altitude and very very different weather than NOLA, if you let it reach that rolling, volcanic boil then set the timer for 3 minutes right then, I have yet to have it fail. It's knowing when to start that 3 minutes...wait for that heavy boil!

Lovely! When I was in the second grade in Ohio, c. '64, someone brought pralines from Louisiana for us to try. I was amazed and obviously never forgot it! Uprated.
They are a huge hit around the holidays here in the Southern US. We can usually find them pretty much anytime of the year in the gas stations like 7-Eleven, but they aren't as good as homemade. Thanks!!

Love these... I expermented making them in my microwave, I also used condense milk and instead of peacans I used cashews, which tasted almost as good as the pecans. they were so delicious, I made mine smaller, lol they don't hang around long especially if you make them large.

Troy, those look great, you make them differently than I was taught and differently than other people on YT, I will be trying your recipe this week. I bet it is very good. I like that you caramelize the sugar in the beginning.

My great-grandmother had many Pecans trees on her property outside of Houston. Each year we were sent a large bag of these Texan pecans and my mother, and my grandmother used to make an awesome recipe for Pralines. I have not had homemade Pralines for years, T-Roy your recipe is spot on to what I enjoyed in my youth. 2 thumbs up!

T-ROY COOKS You are welcome sir. I have a question for you. Do you know by any chance how to make Louisiana Fish fry? I live in the Netherlands and unfortunately I can't buy it here in the stores! When I visit my friendds in TX and Louisiana I will get the bags from the grocery stores, but now I have nothing.
jerricette I have never made the La Fish Fry since it's easily found locally, but it's really a simple mix you could make yourself. It is mainly finely ground corn flour, or finely ground corn meal mixed with plain flour. Just throw in some Cajun type spices like black pepper, salt, cayenne red pepper, etc. It's really that simple.

jerricette Yes, you need whole cow's milk. Another factor that may mess you up is the humidity in the air. Like all baking and candy type recipes, humidity can make a huge difference in how the final product comes out. 30-50 percent humidity is ideal. My 2nd batch a week later was gummy and never hardened, but my 3rd batch a few days later was perfect. So, just keep trying and choose a nice sunny day to make your pralines. Even if they don't turn out right, they are still good to eat! LOL
I ran into a couple of problems. When I added the room temp evap. milk the sugar began to crystallize. So I got the temperature back up and dissolved all the sugar then started timing the 3 minutes when it came to a boil. Mine turned out too loose. They never got hard enough to remove from the paper. So I enjoyed them by eating them off the parchment paper. The taste was good but mine never got very hard. Next time I will try boiling 5 minutes and adding the milk very slowly. I could probably get the same result by adding less milk. I did everything just like you, even using a cast iron skillet.
First time I saw a recipe for pralines made by browning part of the sugar and using an iron skillet😊
