Chef's Notes: 1) Use "kasim" or we call it "kas-ing" in Cebu or pork neck/shoulder because the fat is marbled. Pork Tocino without fat is dry and tough. 2) I used catsup (banana or tomato) instead of red food color. You can use atchuete seeds to color too. Soak atchuete seeds in hot water until the desired color is rendered. Drain off and use the color (do not add if the color is still hot or warm). 3) Massage the pork tocino with the marinade. Once the marinade dries up, pack in plastic bags, seal and freeze.

Hi! Chef Rose. I have another question. If I will use atsuete to color 1kilo of pork how do I make for the measurements. For example 1 tbsp of atsuete how much water do I use to dilute the atsuete? Or can I use asuete oil instead of asuete water and just estimate the color desired to color the tocino. Once again thank you so much for sharing. ❤️🙏
You can just estimate the amount of atsuete that you add. to achieve the color you want. Personally, I do not put any coloring when I cook it for home use.

You can freeze it for 2-3 months packed well in plastic or ziploc.
