Ube Custard Mamon

- I am bringing together in one recipe three Filipino favorites - ube, leche flan and mamon. You can bake these in a big round pan or in individual molds. If you do not like ube, you can replace the ube flavor and color with the flavor of your choice. Feel free to experiment with different flavors. Enjoy this recipe with your family and friends!
Correction:
Typo - in the list of ingredients at the end of the video, please take note that in the ingredients for the custard, the correct amount for the condensed milk is 1 can NOT 5 cans.

Chef's Notes:
After scooping the mamon mixture over the custard mixture, spread it carefully using a small spatula, making sure you do not stir the custard and mamon mixture together.
Cool the custard mamon thoroughly after baking before you remove them from the molds.
The mamon will detach from the sides of the mold after it cools down. Invert and unmold.

I big can of condensed milk is 300ml
1 big can of evaporated milk is 370ml

Hi Chef Rose..puede ko ask nimo what's a good brand of ube powder (kanang humot jud after baking) and which supplier to buy in bulk to bring here to Canada. Naa ko cousin mo pauli diha sa Cebu. Salamat, Chef Rose🥰.
I use Versa which is a brand of dehydrated ube powder. Aside from that, you also need to add ube flavor and color because the dehydrated ube powder can only give you texture but not flavor and color. We sell them wholesale and retail. For most people baking abroad, they only buy ube flavor and color and not dehyrdated ube powder because it is heavy to bring and it only provides the texture of ube not the flavor.

Chef Rose after baking, iiniinvert po ba? Or sit for a while sa baine marie?
You can take it out of the bain marie as soon as you take it out of the oven OR allow it to cool in the bain marie if you are not in a hurry. Invert to unmold when it has cooled down. Thank you for watching.
How much is one big can of both milk? I don't understand.
1 can condensed milk is 1 1/3 cups
1 can evaporated milk is 1 1/2 cups

Yes you can.

Yes you can. You can use 10" round x 3". You need to bake it around 1 hour 20 minutes to 1 hour 30 minutes at 325F. Just make sure your custard is cooked.

You cool the mamon thoroughly before unmolding. The mamon will detach itself from the sides of the mold once it has cooled down. If it does not detach itself, carefully push it towards the center of the mold. Invert on a tray and the ube custard mamon will be unmolded. I am sorry I was not able to show in the video how to remove the mamon from the mold. Thank you for watching.

Yes ma'am. Pwede but you can not put hot caramel in the plastic puto molders.

Does the mamon just come off the mold easily?
Cool the ube mamon thoroughly after baking. If you baked it at the right temperature, the mamon will detach itself from the sides of the mold. If it does not detach itself, push the sides lightly towards the center. Invert and unmold. My apologies that I was not able to include the removal of the ube custard mamon from the mold in the video. Thank you for watching.
