If you omit the caramelized sugar, you have to put corn syrup other wise the flan will stick to the pan. You can not use paper cups because the flan will also stick.

I use Versa which is a brand of dehydrated ube powder. Aside from that, you also need to add ube flavor and color because the dehydrated ube powder can only give you texture but not flavor and color. We sell them wholesale and retail. For most people baking abroad, they only buy ube flavor and color and not dehyrdated ube powder because it is heavy to bring and it only provides the texture of ube not the flavor.
You cool the mamon thoroughly before unmolding. The mamon will detach itself from the sides of the mold once it has cooled down. If it does not detach itself, carefully push it towards the center of the mold. Invert on a tray and the ube custard mamon will be unmolded. I am sorry I was not able to show in the video how to remove the mamon from the mold. Thank you for watching.

Yes you can. You can use 10" round x 3". You need to bake it around 1 hour 20 minutes to 1 hour 30 minutes at 325F. Just make sure your custard is cooked.
You can take it out of the bain marie as soon as you take it out of the oven OR allow it to cool in the bain marie if you are not in a hurry. Invert to unmold when it has cooled down. Thank you for watching.
