This cake , on equal level with Sans Rival (and Silvanas ) is my absolute favorite , hands down. As a Pilipino pastry chef, you are at par with the famed French and Germans. But your creativity is ahead. Those touristy french patisserie through the window are feasts for the eyes if you have the Euros to spare , the taste are worth it ?

I did not do a tutorial for sponge cake with whole eggs because it is more difficult for beginners. Based on my experience in teaching, it has a higher percentage/rate of failure for beginners. Sure you can! Whipping cream makes a nicer icing because it gives a bigger volume and great consistency but it is not as tasty as all purpose cream. I love whipping cream for frosting!
Neutral geli or a glaze so fruits will not discolor. You can use a gelatin glaze instead. Dissolve 1 tsp. gelatin in 1/3 cup hot water. Use this to brush the fruits.

The flavor of the fresh mango alone is not enough to give depth to the cake. Artificial flavors are added to improve or enhance the taste or smell of a particular food item. It changes the perceptual impression of food as determined primarily by the chemoreceptors of the gustatory and olfactory systems. They add stability and consistency to the products. You can always omit the artificial flavors if you wish to.

Kailangan po ba stiff po un whipcream?
Yes but not sobra stiff. Thick is a better word to describe it. If you over beat cream, the texture is not smooth and it is full of air holes.
