- Siomai is one of the most requested recipes from my followers. I have many recipes for siomai in my classes but I specially formulated a new one for this tutorial. In the authentic siomai recipe, the meat is not ground rather they are chopped into small dice with a cleaver. Same is done with the pork fat. Please don’t skip the pork fat because your siomai will come out very dry. Fat makes the siomai tender and juicy. The chili sauce in this tutorial is a great compliment for the siomai. I always make siomai for my kids coz it's one of thier favorites.. all my questions are answered! I used to have problem with cooked siomai separating from wrapper ganun pala ang technique to avoid it at saka s pag wrap it's taking me forever.. thank u chef you're so generous with your tips🤩

OMG !! Chef Rose I made siomai with your recipe at talaga namang patok na patok ! Ang sarrrrap! Ngayon ko lang nalaman ang secret para dumikit yung karne sa wrapper , dati Kasi yung siomai na gawa ko eh maliban sa hinde lasang siomai eh naiiwan pa lagi ang wrapper sa steamer 😂. Hello Chef Rose. It’s me again watching your video with full concentration. First of all I love your name and easy for me to remember to search on your recipe because my address here in USA is Parkrose . 😊 I really love cooking with love. I’m so glad I learned a recipe from you for siomai fillings. Actually I’m trying to learn how to make siomai wrappers from my book I purchased from Costco. The siomai can be done with different colors using vegetables juice. For red I can color it red with the use Of a juice from red cabbage it’s healthy because is from fresh veggie. For the Chinese rice wine I’m not sure if I can buy that CCW in the grocery when I go back to the Philippines (only taking my vacation here in US for 2 months ) is there any alternative I can use? Thank you so much for watching my videos. I am so happy that you liked my recipes. You can easily buy chinese rice wine in the Philippines. In the US, you can also easily buy that in the Asian grocery there. If you can't find it, you can omit. The purpose of the rice wine is primarily to take out the smell of the meat. Happy New Year!

Great to know that! Please give your mom my best regards. I have not tried using chili flakes but technically you can use chili flakes instead of the fresh. I am sorry but I do not have any conversion since I have never tried it.

I’ve cooked siomai for so many times and I always get disappointed with the taste and the look (malnourished)😅. Your method and recipe is so much different from the ones I saw and I can’t wait to try them..😍 Thank you sooo much for sharing.🙏🏻 Btw, if i use electric steamer, should I put a cloth on top of the siomai? Coz it always gets too much water drippings from the steam.. Thanks again.❤️

I used the small size like 2.5”x2.5” or thereabouts.

2 minutes at medium speed. Do not fine ground the meat otherwise your siomai mixture will be mushy.

Hi Chef Rose! At last my request was answered. If we have no rice wine what shall we use instead? Normally how many days will this siomai be stored in the freezer? Thank you for sharing.
Just omit the rice wine. You can freeze for 2 months without shrimps.

Add any type of onions. You can omit but there is a certain smell from the meat. You can replace with 1 tsp. onion powder.

Discoloration of the wrapper is normal. That os why some color their wrapper yellow.

Hi. Can I use hon-mirin instead of Chinese rice wine?
Hon mirin is sweet rice wine. You can but reduce the sugar in the recipe.

You put in about 1 tablespoon depending on the size of your wrapper.

Chef bakit po kaya yong siomai pag tapos kna nasteam tumitigas yong wrapper lalo pg naalis kna sa steamer at lumamig na.thank you po
That is normal when the wrapper is exposed to air. To avoid this 1) make sure you fill your wrapper to the brim so there is no extra wrapper exposed without any meat. 2) Keep your steamed siomai covered until ready to serve 3) Your wrapper is too thick. If you put too much glucose, it could be watery so don't put a lot. You can chill the dough before you bake to solve the watery problem. Hope this answers your questions.

Yes for chicken. For beef, you need to add fat as well as more ginger and onions.

Hi chef rose can i replace shrimps to tvp?
Replace some portion of the meat with TVP not the shrimp because the quantity is too small.
