I made this today. I also made my own sunflower butter which is very easy and quick to make. Didn’t have cottage cheese so I used sour cream. I also added a teaspoon of egg white powder and it seemed to rise more and didn’t sink the way a lot of my mug breads do. Thanks for posting this. Very pleased!
A tip for keeping nut butters from sticking is to crack an egg into the measuring cup, swirl it around then dump out the egg. Your nut butter won't stick! I'd like to see if this recipe will work with pecan flour. I'm going to give it a try! I even have all the ingredients 🎉 Thanks!

Meanwhile, I'm about to make my usual 1 Minute Peanut Butter Muffin: Whisk with a fork in a mug or a 2 Cup Pyrex measuring cup: 2 Tbsps room temperature natural peanut butter, 1 large egg, 1/4 tsp baking powder, 1 Tbsp granulated sweetener. Whisk until batter is soupy. Microwave on high for 1 minute. Immediately sprinkle the top with Lily's dark chocolate chips, let it set up for 1 minute. Eat. 😋

I suspect it would work just fine, but I didn't have any almond butter in the pantry and I felt the sunflower butter might lend more of "brown bread" taste.

Dude this is good quick bread. I used ricotta cheese as Walmart, I could not find cottage. You could make nice pancakes with this if you sweeten it up. My sunflower butter had a bit of sugar in it. All I could find, but it wasn't high.
I make a similar mug bread, but I don't let it sit for a while so it is a little gritty like you said. I will definitely let it sit next time I make it. 👍
Now I need to go back to find some square "sandwich" size microwave safe containers at the thrift stores. I have never used or seen sunflower butter so I will have to improvise with the cheaper nut butters I can get handy that I know are clean.

While I haven't done it yet, I'd probably just quadruple the ingredients (because I only have 8 ramakins and I think that's all I could fit on a baking sheet) and then bake them, rather than microwave. Once cooled, I'd slice them, put them in a ziplock bag and freeze them (possibly putting a little parchment paper between layers to keep them from freezing together).
Really liking the taste of this, peanut and almond butter breads are ok, but this hust made a very nice sandwich without an overwhelming nut butter flavor.
I am here in Spain, so I am not even going to look for sunflower butter. However, tahini (sesame butter - I like the toasted sesame seed variety) is easy to find here. I will give this a try tonight! Thanks Steve!

Since I did not have 'cottage cheese' (we have something similar here but I did not have that either) I used half Philadelphia and greek yoghurt...and a very large egg. My batter was a bit thinner than yours but puffed up over the ramekins - creating a very nice crown. So happy with this easy keto bread. Thanks!

One of the issues with using cottage cheese in recipes (as everyone seems to be doing lately) is that what we call "cottage cheese" in the US is quite different than what other countries call "cottage cheese". Many of the cream cheese brands do contain similar gums/thickeners to cottage cheese, so it's quite possible that it would work.

I haven't really noticed grittiness with mug breads but, no matter how carefully I mix/process, I get some huge holes that make some breads untoastable. Has anyone else had this problem and found a fix?
@ based on my experience making all kinds of breads pre-keto, I don’t think that’s the cause. Leavening agents (yeast, baking powder, baking soda) can be unpredictable. I’ve had loaves come out with a perfectly uniform crumb on one batch, then using the same recipe, I’ll get some holes the size of a quarter.

I bought the sugar free sunflower butter and made these. I wanted to like them but it just didn’t happen. And I tested my blood sugar after 2 hours, rose 60 points so that’s a no for me. And I’m usually on the same page when you recommend recipes.

Would you freeze them? And if so, do they toast up well right from the freezer?

I find that the taste is closer to neutral than most nut butters. Plus high fiber.

Coconut flour absorbs close to 3x the amount of moisture as almond flour, so if you use it, I would use AT MOST 1TB.

Since there are no preservatives, I'd say one day on the counter, one week in the fridge.

The reason I like ramakins is because the diameter is consistent from top to bottom. Aren't most muffin tins tapered?

I haven’t figured that out either. I’ve had some of these come out perfectly bread like and others with holes the size of a tablespoon.

I’ve had loaves come out with a perfectly uniform crumb on one batch, then using the same recipe, I’ll get some holes the size of a quarter.
@@ytubechannel997 I don't use a food processor and have the same problem. I have noticed that the unevenness is more marked with microwave breads though.
Can anyone suggest time and temperature for cooking this in an air fryer? I’m kind of new to the air fryer world. Thanks bunches. 🙂

I’m wondering if you could make this into a loaf.
I feel like something like this, if made into a loaf, would overcook on the outside and undercook on the inside.

I bought the sugar free sunflower butter and made these. I wanted to like them but it just didn’t happen. And I tested my blood sugar after 2 hours, rose 60 points so that’s a no for me. And I’m usually on the same page when you recommend recipes.

A Plus Steve! Bring your followers back to ‘clean’ keto recipes, I stopped watching vids on commercial keto reviews since I’ve accepted, if I want it, 98% of time I HAVE to make it. Or do without. I promise everyone can do it. The more you do it the better you get at it. But it’s hard.🫤
While I would prefer to do nothing but cooking videos, I recognize that not all people have the passion, aptitude, or time to make all of their food from scratch. For these folks, pre-packaged keto products may mean the difference between staying keto and falling off the wagon. It is for these folks that I do the reviews.
Still, it feels kinda fun to go back in time before all of these keto products were flooding the market...
