I totally agree….this is a 3 station kitchen….nobody crosses anybody…I used to be the meat cook….the cook in the middle is the one that deals with the waiters and or the waitresses….sometimes you have to work 8 hours nonstop….at the end you just hate the whole thing…
It's not 8 hours. That's only service 3 - 5 hours. And once u know what u are doing, it's pretty easy and fun. Everything looks hard when u don't know how to do it

When I was 19, I applied to a restaurant specifically to be Front of House (server, busser, host), but the manager threw me on cooking duties because they were low on cooks. Honestly, the most brutal job I've ever experienced. 3 months later, a server position finally opened up and I immediately jumped on it. So much easier being a server than a cook. To this day, the sound of tickets coming in still gives me PTSD.
Having to cook all those pastas with one basket is crazy! Your timing is impeccable. What is the microwave for? You keep a clean kitchen and your crew looks solid. Everything in its right place.

The most gnarly work we would be so deep in the weeds it would seam like there was no way out . Some of the most solid hard working people I’ve ever been around . This shit is no joke lol

Honestly for the amount of food being pushed out, that kitchen is very clean. Worked in the industry in the past and some big kitchens, and kitchens were never that clean.
