    Complimenti. Pulizia, esecuzione tecnica e tempi eccellenti. Finalmente un canale dove si vede un professionista all'opera, non un cuoco da televisione o uno sprovveduto frequentatore di ristoranti tentando riprodurre quello che ha mangiato senza avere nemmeno le basi. Splendida iniziativa.

      Quanto ti capisco. Io sto cercando in tutti i modi di uscire dalla ristorazione. Me lo hanno fatto odiare questo mestiere. Delle festività e dei week end liberi poco mi importa, il mio problema sono le ore assurde. Alla fine torni a casa solo per dormire e farti la doccia. Il resto della giornata lo passi chiuso in cucina. La vita è fatta anche di altre cose; che poi ti trovi vecchio che hai finalmente il tempo per vivere ma non ne hai più le energie. Bella vita di merda. Trovassi un ristorante dove fai il tuo turno e te ne vai allora si! Ci metterei la firma, ma così non è, quindi cambio mestiere (se ci riesco!). Putroppo anche reinventarsi dopo tanti anni non è facile.

    Intanto complimenti,facciamo lo stesso lavoro e capisco quanta passione e pazienza ci vuole a volte per reggerlo, io personalmente lo paragono sempre all’amore che si prova per una bella donna che ti fa soffrire ma che poi perdoni sempre 😅 non capisco perché ma mi rilassa molto guardare qualcun altro che lavora, esecuzione molto buona direi, soprattutto perché sei in uno spazio ristretto, ( come ti comprendo la mia cucina è più piccola) se posso umilmente permettermi ti consiglierei di eliminare gli occhi degli L1 in quanto conferiscono una leggera nota amarognola e di incrementare lo shock termico, con una maggiore quantità di h20 e ghiaccio e far salire la temperatura quasi a sbruciacchiare le teste,un abbraccio e buon servizio 👌🏽

      250 g per tre piatti di risotto, compresi quelli per cuocere i fiori di zucca, che poi ha inserito nel risotto...davvero troppi. Però sarà stato buono eh. Meglio un pochino d'olio di oliva in più e meno burro.

      Спасибо большое за комментарий! Я стараюсь сделать все максимально понятно, включая описание. По поводу креветок: 6 минут в варке - это как раз оптимальное время, чтобы они оставались нежными. Секрет в том, что при этом времени и температуре они сохраняют свою текстуру, не становятся жесткими и остаются мягкими.

    Can't believe the comments. The guy literally diced the shrimp like an onion .. how could that make any sense? Steering the Risoto with tweezers was also a smooth move.

      In realtà, quello che hai visto alla fine non era olio rosso, ma il bisque messo con il biberon per aggiungere sapore e un tocco finale al risotto. È una preparazione a base di crostacei che dà un gusto intenso e aromatico!

      For the bisque sauce:
      • Shrimp shells (10-15 pieces)
      • 1 carrot
      • 1 onion
      • 2 celery stalks
      • Parsley stems
      • 2 tablespoons tomato paste
      • 50ml brandy
      • Ice
      • Stock if needed
      For the risotto:
      • Rice (I used Vialone Nano)
      • Olive oil
      • Zucchini flowers
      • Butter
      • Garlic oil
      • Shrimp
      • Salt
      • Vegetable stock

    Complessivamente bravo, un buon lavoro. Quello che mi è piaciuto di più è stato il metodo di lavorazione per ottenere una salsa bisque densa e corposa, sicuramente ottima. Il fatto di usare un intero panetto di burro da 250 gr. per un risotto per sole tre porzioni (anche se molto abbondanti) francamente mi sembra un pò troppo. Avrei ultimato la presentazione con una cucchiaiata di fiori di zucca saltati nel burro su ogni piatto. Comunque bravo, un piatto molto interessante.

    Love the choice of ingredients! However, I’m not sure I’d blend them. It mixes a high amount of chitin into the risotto, which might not be to everyone’s taste.

    What is the purpose of the icecubes you put in the pan? Is it to cool it down faster, but then why is the gas still on

      ice’s used for the thermal shock, that gives more flavor and keep a good colour
