I did a mad experiment week last week, trying 2 or 3 gluten-free bread recipes a day. And out of all of them, this is by far the best! Thanks for sharing!
I just came back here to confirm for others that this actually works extremely well. I didn't do mine quite right though. Added 20ml extra water to help with blending and the mixture turned out very sloppy. I ended up adding 6 tbls psyllium husk (the flakey kind) total and it was still a little gooey. I didn't use spices. I wanted plain rolls. I wasn't expecting a good result but to my amazement they came out far better than I could have ever imagined. I was expecting a hard crusty outer with either dense damp inners, or a dry crumbly texture. Instead the crust was super supple, the inside texture was exactly like bread only slightly damper (less water needed or longer cooking time). Stretchy, airy, chewy. The mouth texture and flavour is astonishingly similar to wholewheat bread, minus the lack of a yeast flavour. Almost exactly like bread. Wow. The smell however is quite strange and off-putting. I think this is largely due to how much psyllium husk I used which has a strange taste and is best used in small quantities. Also the baking soda and vinegar probably added to it. Mainly the baking soda which is quite alkaline)soapy. I think using yeast instead would probably make taste just perfect. Overall, after all my gluten free failures and disappointments, this is amazingly good and promising. I will definitely be playing around with different variations of this recipe. I'd like to try with red or brown lentils. Try it. You'll be shocked how close it is. Definitely and viable replacement for grain bread. Thank you for posting this.

Thank you for sharing. I made the recipe and they are delicious. I substituted the oil with mashed banana to make it oil free and you would never know that banana was in it at all. I used the same spices and they turned out amazing! I will double the recipe next time. ❤👍

I hope that you have found changing your diet has been beneficial. I am having to do the same for health reasons. Over many years I have had to change my diet and while it helps for a while, I eventually have problems with my digestive system. I am almost entirely vegan and have gotten worse. While reading about food preparation of beans, peas and lentils, I think I have discovered why. There are anti nutrients in them that cause the intestines to not absorb certain minerals- exactly the ones I am having to take supplements for! For people who are sensitive to these anti nutrients (phytic acid and lectins) they must wash, soak, wash and then boil the beans, peas and lentils. The same is true for grains. I am still learning! I thought I would share it with you in case you have a similar situation.

❤️ Thank you again. Couple months ago I started to make my own flour, just use the coffee grinder (but not for chickpeas, too hard for grinder). Thanks for advice, pumpkin seeds are too healthy and we should use them often. 👌🏼

Honestly, I didn’t use loaf, but I think you will need just little bit more time to bake. And then remove from loaf and let it cool down completely, if you leave in loaf the crust of the bread may be soggy.

Can you cook the chickpeas a little before blending to avoid a weird aftertaste in the bread? The bread came out great and has an amazing texture but there was a bit of a weird or bitter aftertaste.
Hello! If you cook little bit you will not get the same result as you did. It will come out like a porridge 🥣. What kind of aftertaste do you have? May be try to change a brand (other company or seller) of chickpeas.

It was actually a bit of a soapy aftertaste which I think came from the fact that I put a spoon of baking soda in the water in which I soaked the chickpeas. I made the recipe again and this time instead of adding baking soda to the water I added apple cider vinegar. The buns came out much better and there no aftertaste! I really like them! How about topping the bread by brushing on some olive oil and fresh or dry rosemary? I don’t use olive oil so an alternative could be coconut or avocado oil. Udo’s oil has such a nice nutty flavour, is it possible to use it? Would appreciate the feedback 🙏🏼💜🇨🇦
I think rosemary will give a nice smell and taste 👌🏼 sure, you can substitute olive oil for avocado oil, coconut oil… to be honest, I have never tried Udo’s oil. If you like the taste of this oil, sure you can 👍🏼 Thank you for your comment 🌷
Have you had any issues with bowel obstruction because of the psylliam husk? Do you need to drink alot of water to prevent problems or does baking with it means the husk reacts differently in terms of already being saturated and formed via the baking process so it wont be able ti obstruct bowels when consumed?
I know that psyllium husk is good for the intestines. We don't use a lot of psyllium husk in the recipe to cause any harm to the intestines. Many people stop eating gluten, which definitely clogs their intestines.

I tried this recipe today and wanted to use flaxseed instead of psyllium but didn't think about flax eggs (cuz I had no idea what this psyllium actually does) so ... I ended up adding more and more ground flaxseed, finished at about 45 grams and the dough was still waaaay too liquid

It does work by using 100g cp flour instead. I made the recipe, and the rolls are nice and soft inside, a lovely texture. I also just used cinnamon spice

I just tried these, 40 mins in the oven and they came out like giant puff balls then instantly deflated. Still gooey in the middle, like pumpkin inards, tasted foul .... where did i go wrong? I used canned chickpeas but followed the recipe
This is the main mistake - canned chickpeas! You skipped the step: soak dry chickpeas for 12 hours! Please 🙏, next time do all steps like on the video!
Hi Judith, the difference is canned chickpeas are already cooked, but the soaked chickpeas are raw. The texture is completely different and they don't taste the same
@Healthyandquick i used 100g as another recipe i saw used the same amount of water as cp flour. I also bake roast in my ninja speedi. 175 c for 15 minutes, and they were cooked inside to right temperature, and when i cut one open after it had cooled down, it was a lovely texture and soft.

@oneconsc3333 Udo's oil is to be used RAW and not cooked/baked. It will completely destroy those 3 omegas. You would be better off using coconut oil.

It does work by using 100g cp flour instead. I made the recipe, and the rolls are nice and soft inside, a lovely texture. I also just used cinnamon spice

This is the main mistake - canned chickpeas! You skipped the step: soak dry chickpeas for 12 hours! Please 🙏, next time do all steps like on the video!

@Healthyandquick i used 100g as another recipe i saw used the same amount of water as cp flour. I also bake roast in my ninja speedi. 175 c for 15 minutes, and they were cooked inside to right temperature, and when i cut one open after it had cooled down, it was a lovely texture and soft.
