Imitation Shark fin soup
Chinese New Year, to me, always involves some kind of sharks fin soup
Here’s my simplified version， It’s the easiest way one can make this soup:
INGREDIENTS:
200g Imitation Shark fin
26g dried Shiitake mushrooms ( weight before soak)
20g fish maw ( weight before soak)
120g Chicken breast with bone
15g dried scallops ( weight before soak)
2 eggs
1.5 litter water
STARCH WATER:
Tapioca starch 50g
Corn starch 20g
Water 100ml
SEASONING:
1 tbsp oyster sauce
1 tbsp light soy sauce
1 tsp salt
Half teaspoon chicken seasoning powder
half tsp white pepper powder
1 tsp Sesame oil
1 tbsp shaoxin wine

今天教大家做一道经济又大气的年菜，鱼翅。
材料：
200克 素／仿翅
26克 冬菇(还没浸泡时的重量)
20g克 鱼膘 ( 还没浸泡时的重量)
120克带骨去皮鸡胸
15克 干贝 ( 还没浸泡时的重量)
两粒鸡蛋
1.5 毫升的水
淀粉水
木薯粉 50克
玉米粉 20克
调味料
1 汤匙蚝油
1 茶匙盐
1 汤匙酱油

鱼漂是什麼？
魚鰾？炸魚皮？花膠？
鱼鳔和花胶都是同一样东西，就是各种鱼肚里的气囊，这个是使用高温粗盐来爆发过的，市场销售的几乎都是爆发好的，要吃的时候只要浸水让其软化，非常方便，至于另外一类，是没有经过油爆或盐爆的生晒原鱼肚，这些在中港台，都叫做花胶。

Im so proud you use shark fin IMMITATION . harvesting of sharks's fin is such environtmental damage & water of marine lifem ridiculous beliefs of luxury / prosperity/whatever. I hope you dont buy shark fin even if u afford to. thanks for the recipee

Hi, I'm using imitation shark fin , vegetarian food. Imitation shark fin made to look like the real thing is by using agar-agar. It creates the translucent long strips that look like real shark fins. These agar-agar strips can be bought at Asian grocers or supermarkets under frozen food department.
