You should add a little bit of dark soya sauce so that the soup don't look so pale. I also add beaten eggs after I thicken the soup. Black vinegar should not be added into the whole pot as some people may not like vinegar. Let the people help themselves to whatever amount of vinegar they like. The real Shark Fins Soup should not have beaten eggs. My late mum cooked the high quality Shark Fins Soup as well as the Imitation Shark Fins Soup like this one.
Taste better with few added ingredients, thinly cut slices. 1. Soft ear black fungus. 2. Can Luncheon Pork Meat (Korean made) 3. Crab Meat or Crab Stick. 4. Dry Scallop (soak soft, slices & retain water add in soup later) 5. Fresh & thinly sliced shitake mushrooms. 6. Fish Maw (soak soft). METHOD: 1. Soup (Base clear soup) 2. Use little oil stir fried all mix ingredients with fried garlic oil. Pack all individual serving packs in freezer. Defrost when desire use, in water room temperature. Ready made soup pour in cooking pot. Combine the 2, add ingredients, colorings (dark soy,sauce or light soy sauce). Never add eggs or egg drops. Spoilt the soup

A substitute for fish fin soup. I would have used the water from the dried mushroom, it's very fragrant and flavorful.
