    INGREDIENTS
    ------------------
    Dry:
    70g almond flour
    PLUS 50g coconut flour
    -----------------------------
    If you’re using single flour
    120g almond flour
    OR 80g coconut flour
    -------------------------------
    A pinch of salt
    2 tsp xanthan gum
    1/2 tsp baking powder
    Sweetener of your choice (I use 1- 2 tbsp erythritol)
    Wet:
    1 tbsp olive oil
    1 tsp vinegar (or lemon juice)
    Vanilla extract
    7-8 tbsp hot water (more water may be needed if you use coconut flour)
    DIRECTIONS
    ----------------
    1. Mix all DRY ingredients together in a mixing bowl.
    2. Add in all WET ingredients till it forms a moist dough ball. (add water one tablespoon at a time)
    3. Cover the dough and leave it to rest for 15 minutes.
    Toast with a waffle maker and ENJOY!

    I made this with the blend first and had a bit of trouble. Then I made it with all almond flour. For me the almond flour worked out great. I made 4 small ones in a mini waffle maker and they were great. This will be my go to recipe for waffles. Thank you!!

    My biggest concern with batters without an "egg-like" agent is that they usually fall apart when taking them up, but these look like they came out with ease, will def give the recipe a try.

    These were soooo good
    They remind me of the sugared waffles at the supermarket same texture.
    I used almond flour instead of both as I don’t like coconut, they turned out really good, thanks for sharing 😍

    Became addicted to waffles when I was bought a waffle maker for Christmas last. Mine have been egg-based, with psyllium husk and less xanthum, but will try this recipe. Had great success making Indian-spiced 'naan' versions, perfect with curries!

      @@mellodecember6654 I add the following to the almond/coconut dry mix - 1 tbsp psyllium husk; 1 tbsp ground flaxseed; all the rest as per recipe except 1 tsp salt not a pinch - and I use garlic salt. I then mix in 2 tsp Deggi Mirch curry powder, because I like the flavour, and 2 tbsp garam masala. You could add whatever spice mix you want of course.
      The wet portion is the same except no sweetener and no vanilla. I use avocado oil but olive is fine. I find it needs about 1.5 times the amount of water due to the psyllium & flax absorbing more. Divide into two as shown and in my fixed- temperature waffle maker (Salter) they take 9 minutes.
      You can sprinkle cumin seeds on the top before closing it if you want.
      The result is a real 'bready' waffle that seems to go perfectly with most Indian dishes - very filling too!

    Interesting. I've never seen a waffle made using a dough instead of a batter. I was also intrigued by the use of tempeh and tofu in the sandwiches at the end. That is something I may try.

      yes normally it is much more liquid, like pancakes ! but maybe you can add a little more water ? maybe the coconut flour is also more heavy , I will definitively have a go ...keto ....

      German liege waffles are always in dough form risen like brioche bread and they are super great my girls love them. For the keto dough waffles the coconut flour absorbs liquid and enables that doughy texture. Definitely versatile you can flavor as churros. Savory

    Oh my gosh, you’re a genius! Tempeh and tofu stuffed waffles?! You blow my mind. I’m not even vegan LOL.
    BTW. I tried the waffle recipe but I don’t have a scale so things went sideways on my dough, I’m going to give it another try when I can accurately measure the amounts. 😉

    I can’t wait to make your version of waffles because I always make them with just almond flour. In The USA you can find small waffle makers for less than $10 so I have 3 of them and one is even heart shaped waffles! You can reheat them by popping them in the toaster and the Lakonto brand sugar free maple syrup is amazing on them!

    I have to buy a waffle maker now asap LOL. Mom found out she's gluten intolerant, she eats everything with bread, so I told her about your bread recipe, but she said it takes >her< too long (i bake your keto bread, the vital wheat gluteny version at least 1x a week tho). I will show her this video, I'm sure she'll have no excuse this time haha. Thank you so much, you are a life changer for many.

      I've made the usual wheat bread in the past with yeast. Low carb breads are MUCH easier, for sure. No yeast to rise. Lol. I hope your mom takes the plunge :)

      @@lily5952 thank you very much.:) The almond flour version is a big favorite, but for me the other one with vital wheat gluten is the ultimate winner. I just love it so so much and since i recovered from gluten intolerance i often use wheat to make pancakes too.

    I made mine in a small waffle maker that doesn’t have heat settings so they would come out soggy and not quite cooked. I put them in the oven and came out perfectly crispy. Thank you for the recipe! My four year old had 2 and enjoyed them!

    Thank you so much for this quick, easy recipe and no eggs required. Due to allergies I swapped out the Xantham gum with psyllium and coconut flour for chestnut flour. The waffle maker is life changing and so are your recipes!

    Your recipes are amazing!! I just stumbled over your channel 2hrs ago & am so glad I did. I thought since I’m vegan I can’t go keto because it would be just avocado,nuts and Bullet proof coffee and that wouldn’t be satisfying - you proofed me wrong! Keep up the great work :)

    Love the recipe! I added 9.5 Tablespoons of water. My waffle maker is a round version so I think they weren't as successful. I found the dough and end result were still a bit crumbly...should I have added more water? Also, have you tried them with lupin flour at all? I am curious about that and will try it myself if I can find some. Just found the texture too grainy when eating them. Mine weren't fluffy like yours. 😔 Keen to try them again though...not giving up because I love your idea! Thank you for the recipe.

    I have never seen waffles made from a dough before! Waffles really are a thing in North America, but it's always made with a batter.

    I made mine with 60g lupin flour and 50g almond flour. Perfect. I prefer the texture of this rather than coconut. The bitterness of lupin flour was not evident. Great recipe!

    I gave this a go and it did turn out a 'waffle' thing. Unfortunately, it was like eating hot cardboard sprinkled with vinegar! I think the xantham gives it an unpleasant gluey texture but without it the coconut/ almond flour wouldn't bind together. I than tried my regular (non-vegan)waffle recipe - switching out wheat flour for coconut/ almond flour plus extra milk . Mixture tasted decent but didn't bind together and stuck to my waffle irons.

    for sure giving these a try. wondering if you have any plans to try to make a crunchier waffle? in the US you can get waffles that are really crunchy on the outside, but the keto recipes that replicate that crunch always have cheese in them.

    I thought waffle dough was the same consistency as pancake dough, but yours is more bread like.

      Keto vegan cake "batter" tends to be more dough like. It's due to the nature of the binders as we're not using eggs. But the baked texture is wonderful.

    I tried it today. It worked great. The texture was really moist. I bought a waffle maker few days ago. It was the time to try it out. Only thing, the taste was a bit more xanthan gum taste maybe just one tsp is enough, I will try it with one tsp next time, otherwise it was really good. Thank you!

    Doesn't the coconut flour make them a bit too dry? Any time I eat something made of coconut flour I have to drink something at the same time to make it easier for me to chew.

      The blend of flour and oil makes it quite moist.

    Sugar alcohols like erythritol give me insane, cramping, stomach, pain, gas, and diarrhea. I would never be able to eat this, especially with the almond flour so high in oxalate. But it looks DELICIOUS!

      For the almond and coconut flour blend it’s the below for one waffle and based on that she made 2
      Net carbs - 8.7g
      Total carbs - 30.3g
      Protein - 11.9g
      Fat - 28.8g
      Calories - 399
      Please note I used MCT oil instead of olive oil. If you want to enjoy the texture but reduce the macros you can split the dough into 4 instead of two and that means each waffle will be less than the count above.

    This is a very thick dough. It doesn’t work very well on a dash mini waffle maker. The way the hinge is doesn’t allow for thickness. I think a lot of mine was raw

      For the almond and coconut flour blend it’s the below for one waffle and based on that she made 2
      Net carbs - 8.7g
      Total carbs - 30.3g
      Protein - 11.9g
      Fat - 28.8g
      Calories - 399
      Please note I used MCT oil instead of olive oil. If you want to enjoy the texture but reduce the macros you can split the dough into 4 instead of two and that means each waffle will be less than the count above.

    Please help me troubleshoot 😬
    I made one with only coconut flour, used 8tbsp water and the dough looked great. But it stuck to my waffle iron! Really bad... I tried putting in more fat and that didn't help.

    Hello, I was wondering if you know of Ketofusion. She makes these hotcake waffles (Korean Street Food), and they are filled with a walnut-cinnamon mixture. Your end result is very similar, but your ingredients are different from hers. What I was wondering was would I be able to fill the dough with a similar filling then place it in the waffle iron to cook? Do you think it would work? Thank you for any advice.
