Hainanese Chicken Rice - Cơm Gà Hải Nam | Helen's Recipes

  • Hainanese chicken rice isn’t just popular in China, Singapore and Malaysia. We in Vietnam love it, too. My first encounter with it wasn't the best, but I soon fell in love when I tried it at the right place.
    ►Ingredients:
    450 g normal rice rinsed a few times and soaked in water for at least 1 hour.
    50 g sticky rice rinsed a few times and soaked in water for at least 1 hour.
    1.5 kg chicken whole
    3 slices ginger
    2 scallion
    3 shallots
    1 tsp salt
    1 tsp chicken stock.
    3 minced garlic, shallot and ginger
    * Orange sauce*
    10 g garlic
    20 g ginger
    2 large chilli
    2 bird-eye chilis
    juice of 3 kumquats
    2/3 tsp salt
    1 tbsp sugar
    1 tbsp vinegar
    1 tsp seasame oil
    **
    2 tbsp soy sauce
    2 tsp sugar
    1 cucumber Peeled, cut into thick slices on the diagonal

    I’m impressed with your de-boning! I used to have to do this for my one of my old jobs in a grocery store in the deli. I found, and still do, that it’s easiest to de-bone when the meat is still hot. We had special gloves at work to help. I don’t at home. Those gloves help a lot!
    My hands now hurt from pain (chronic disease), so the heat really hurts. I’d advise anyone that has pain in the hands to get the special gloves and still de-bone when hot. Much easier!!

    I agree!! This was one of the best dishes I had in KL. I was amazed at how much flavour is in the rice. You dont expect it from a dish that looks kind of pale.
    The sides served with this dish when I had it were really good too.

    Ooo The sauce is dipping similar to our homemade one but ours is yellow instead of red orange. Our dipping sauce always make up for the bland taste of the chicken, but then again the boiling in aromas also helps. My maternal family are Hainanese.. XD

    Helen, did you say turn off heat after 6 mins? Doesn't that leave it under cooked almost?

      roryjai The residual heat of the water will cook the chicken and it ensures that it will never overcook and toughen the chicken, but will be moist and tender.

    If you add a 2-3cm long of lemon grass (minced), mix into the rice, will give you a slight tangy taste.

    very attractive looking recipe with the yellow skin and cool green of cucumber. helen, how do you keep your cleavers that you use to chop through the chicken bones sharp? do you use a sharpening stone?

      Boiling once is fine. You can skim off the impurities when they rise on the top, that’s it 😊

      yes it will be cooked even after 15 mins

      Cam Pham I use this method all the time, it ensures that the chicken is not overcooked and not tough, but moist and juicy, especially for the breast meat.

      You control on the hotness of chili paste when adding the small chili.. The big one is not at all spicy but the small tiny ones is.

      The jasmine rice lends its fluffiness, the glutenous rice its chewiness, juxtaposition in texture, quite interesting!

      As the person who quoted Wikipedia, you can use any sour fruit such as a sour orange, lime or anything else that you can think of if you can’t find it at something like Whole Foods if you live in the US. “Calamondin is called by many names, including: calamonding, calamondin orange, calamansi, calamandarin, golden lime, kalamunding, kalamansi, Philippine lime, "හින්නාරං", Panama orange, Chinese orange, musk orange and acid orange”

      Giap Vo very truth. Most the time, after eating out, my neck and tongue become very stiff. But cook at home like this you can avoid the MSG.

      John Gonzales How ignorant! It's like saying "peanut is good for you" to people who allergic to peanut. I never say "MSG is bad for you", it's your assumption. I only said got a reaction to MSG therefore I avoid it at all cost. What's wrong with that?
