    Your vegan/vegetarian recipes are always so interesting and delicious. I love learning about Vietnamese flavours and techniques from you, especially when you apply them to vegan food. Thank you so much for constructing a whole Vietnamese family meal with vegan dishes! I hope one day you might consider working on a vegan Vietnamese cookbook (:

    Are the long stems (first ingredient in the lotus stem salad) also lotus stems or only the larger round ones that are fried as the final step?

    The starchy corn is called maize here in the States. It's used to make hominy and Mexican tortilla.

      Maize is just another word for corn but with Spanish origin. They are plants that produce kernels used for cooking, and can be use interchangeably but the States preferred corn. The glutinous/starchy corn is actually call Waxy Corn.

      It's known by many names depending where you live. Maize is a generic name for corn that's not the sweet corn type.

    I'm not a vegan, but would gladly eat this every day compared to the vegan trash we have here that's basically putting a slab of unseasoned tofu on a grill and pretending it's 'just like' steak.

    What oil did you use to add color to the "crab meat" paste?

    • @xAmaya13x
      @xAmaya13x 5 ปีที่แล้ว

      Annato oil. You can find it in Hispanic grocery isles, too or get annato seeds (they look like red dehydrated corn kernels) and soak them in a bottle of vegetable oil to make your own.

    It's a pleasant surprise that jackfruit also grows in sub-tropical and tropical Australia. Even in sub-tropical Brisbane, it does very well in some suburbs, depending on the micro-climate. I remember being amazed having grown up in Malaysia to see such beautiful jackfruit grow to an enormous size at a friend's neighbour's house. I'm sure once the tree is established, there can be almost too many to eat as sweet fruit, so we love using young jackfruit as a "meat" substitute.

    Looks delicious! Question, why do you salt the water you soak the mushrooms in? For flavor or to do a better job of cleaning the mushrooms than pure water would do?

    • @HelenRecipes
      @HelenRecipes  5 ปีที่แล้ว

      salt water is used to clean the mushroom better :)
