I saw the first ep of Naked Chef when it was broadcast in Australia when Jamie was SOOO young lol. It was roast lamb and tray baked fruit. I copied the recipes and it all turned out sublimely. I've been a huge fan ever since. Go Jamie!
We enjoy watching him do his show and tell. Obviously, he knows his stuff, but thankfully, our favorite deli opened again post-pandemic, so we are back ,ordering their roasted potatoes and other from-scratch fare. If we give them a recipe, they are open for it. Better tasting than we ever could and time saving. They have their own garden (organic!), so every vegetable and herb are seasonal.
I used to follow Jamie Oliver for a couple of years, if not for a decade, via my sattilite TV receiver. Thanks to TH-cam he is now easily available. And for perfect results you should know the 3 starch level of potatoes. He used "floury" for the roasted ones, "middle" for the "all forno" ones and "waxy" for the salad. Not that you can't do a salad with floury ones, but it becomes easily a mess and with waxy ones will not give you really crispy roasted ones.

Instead of peeling the potatoes prior, boil them in their skins. Wait until the skin starts to fall off. Remove them once that happens..peel off the skin.. That happens to be the perfect time to take them out imo. The skin pulls off easy. Then do what Master Jamie tells you from there. Saves time. Happy cooking.

Roast potatoes my way 3-4 russet potatoes 1/4C oil 2 tsp rice vinegar 1 tsp paprika 1 tsp Italian seasoning 1 tsp McCormick Grill Mates Montreal Steak seasoning Preheat oven to 400°F. Mix oil, vinegar, and spices in a small bowl, set aside. Cut potatoes into 1" pieces, place into a gallon size Ziploc bag or a large bowl, pour seasoned oil over potatoes and toss them to coat. Dump spuds onto a cookie sheet and spread out to a single layer. Bake for 20 minutes, turn potatoes, and bake for another 15 minutes.
