    Great video. I completely understand why you recommend keeping them all the same size, but at home I do like to throw in some smaller offcuts alongside the full size potatoes. not only does this reduce waste but I actually think it is nice to have some crispy bits and pieces.

    I stumbled across a great roastie technique by pure accident that i deemed the butter absorption technique.
    Once they are through the boiling stage, pour melted salted butter over them and let them sit for a few hours. Thr butter permeates through the entire potato. Then i cook them in lard or beef dripping (or chicken/duck/goose fat if doing a bird)
    Lower heat and longer cook time leads to a thicker more glass like shell. Higher heat will crisp fast but give a thinner shell.
    End result is super crispy and tastes like buttery mash potato on the inside.

    You’re probably not going to see this, but my family took its first trip to the UK this year and the thing that we loved the best was roast potatoes, and cheese toasties. Now, we have not been able to re-create these here at home but this video is going to help me do that for my family so thank you so much.

    I make a version of these potatoes. I leave the skins on, scrub them well, cut off any spots, and then cut them into smaller pieces. Season with oil (bacon grease if available), salt pepper rosemary and thyme. Then I roast them at 425 degrees just until tender. They always come out wonderful. Years ago my husband made them in a similar manner without pre-cooking them and they turned out well. We’ve been making them this way for years.

    I followed your advice as closely as I could. The roast potatoes were fantastic ! I was so delighted. Outside was crisp and inside was soft and fluffy. I cut the sides as you suggested, added the garlic and the herbs etc…Thanks so much for the video. Made my Christmas dinner amazing!

    I grew up on an acreage in middle Iowa USA, and my mom, an Irish gal, made these all my childhood. Im now 66 yr old. Yummy potatoes

      Mom was a Quigley from Illinois and dad was a Ryan from Dubuque. We couldn't have dinner without bread and potatoes, cooked in all manner of ways. There were so many of us that boiled parsley potatoes were the usual go to. There would be a fight for roast potatoes on the special occasion. Though we all willingly pitched in on the peeling. Lol

    Great video Elizabeth. I've learned loads from it both cutting and cooking [despite having been cooking roasties for years which have always been pretty spot on]. I converted to olive oil recently and discovered roasties take loads longer because the temperature of the fat is too low and it loses the crunch. Back to good old fashioned beef dripping for me in future. Thanks for a really great tutorial.

    Nice recipe.
    Fun fact: Over here in the Netherlands everybody thinks we're a real potato country but...... it's nearly impossible to buy them by race. They're simply called how they cook; tough or fluffy and the taste is far away. Best tasting potatoes I had was in Portugal.
    Those spuds look delicious!

      Years ago it was done by variety. There were a lot of them Hoever for the average Dutch person that was too compitcated and so they had to simplify it In earlier days we had greengrocers and they lots of varieties of any kind. Dutch people honestly I kind of stupid. You can hardly find big cuts of meat because everything is s thinly sliced. It s maddening. In the US where I lived for a long time the beef is the best. Dutch beef is garbage

    Thank you for pointing out how much a better choice either Duck fat/goose fat/tallow is than olive oil. My last attempt at roast potatoes was disappointing. I’m going to give it another try this weekend for a Friendsgiving Feast!

      We keep bacon fat (US style bacon, not the hammy Canadian or British bacon), and use a bit of that frying potatoes and a ton of other things.

    I always cook my roast potatoes in Veg stock rather than just water, really adds to the flavour.

      @@gracepursey2166 just checked Amazon.ca and found a $19 jar of ‘Bespoke foods Goose fat’ 295g. Surely your local deli or some butchers can help you find cheaper supply lines. Any goose farmers near you?

    Just recently have started to roast potatoes this style. Trial and error and they're not quite right. Following your methods and I'm having better success.Fortunately, the Russet, grown here in Alaska, U.S., is very flavorful.Thankyou for you're informative and funny presentation.

    I am in Tokyo at the moment. Tomorrow I am doing a Christmas dinner for our deceased mother's 90-year-old friends. I do it every year and they love roast potatoes. This year it is a starter of mushroom soup with garlic bread croutons, followed by a chicken which I have soaked in a flavoured brine, complimented with Yorkshire pudding with slices of my homemade sausage and onion gravy, french beans, carrots, my special creamed mash potato and roasts.
    My problem is this: I cannot get decent potatoes in Tokyo, they just are not roasting material! I try my best, our mother, before she died, and her friends love what I do but I just cannot get a solid King Edwards and it is so frustrating. After the main course, I have made a Christmas cake soaked with Grand Marnier and to follow my homemade seeded puffy crackers ( Cornish wafer style) to go with a fat lump of Normandy brie we brought out from England two weeks ago.
    I am a 67-year-old Cockney who loves cooking. These Japanese elders love eating but it has to be good. The youngest is 88 and the oldest is 93. They all work, they all live life to the full. When I said I would organise a cab for the 93-year-old because she lives a mile away she told me: "Don't waste your money, I will come on my bicycle like I always do."
    I will try my best to produce the finest dinner possible for them but what I would give for a couple of pounds of King Edwards!

      Use parsnip equivalent if they aren’t natively used there. Any root vegetable really that is potato-like they might enjoy better the next day. 😂

    Roast Potatoes are a Delicacy. I love going to eat a late night supper where they bake and Stir Fry the Mini Potatoes with Bacon cut into square chunks and Stir Fry them until both are crispy. Then they put strips of shredded cheese on Top with Sour Cream and You have a very Tasty late night meal that's so satisfying and better than any meat or any main course meal.
    And to Top it off, You eat it with a Nice Beer🍺 or Alcoholic Cider.

      Here in the US , baked potatoes or potato " skins " (which is really baked potato slices ) w/ " all the fixin's " of butter , sour cream and/ or shredded cheddar cheese + bacon bits , is often a meal . If really hungry , add a grilled ribeye steak ! 😋

    Got a good potato story... my father have lots of ex-wives, and one of them, Berit, her father loves her cooking, and one of the dishes is meatballs in brown gravy, served with potatoes and vegetables, and he always used to say that he would be satisfied with just potatoes and gravy... Yep, Berit made just potatoes and gravy next time he visited... 😂 He NEVER said anything else, except that she is an amazing cook. 😊 He got his meatballs... next time. 😂

    Its good that you showed the cutting technique, because not only do you need flat surfaces, the potatoe itself will shrink due to water evaporation.

    Great video, but I have to cook for 20 whenever we have a family dinner. Just as well I still have some of my huge roasting pans. I'm always on duck- fat potatoes for Christmas day, along with pavlova x 3. Roasting spuds is a hot job in the middle of summer down here in NZ.

    That is how I make my roasted potatoes, same way with garlic in the pot with the potatoes but I boiled the potatoes the day before I served them. After boiling them, I cooked them partway thru, drain, let it cool then put them in the fridge, this will air dry the potatoes.
    On the day or roasting them, I add fresh thyme, garlic and beef drippings in the roasting pan with the potatoes. this is the star of on the table instead of Turkey….

    2 or 3 table spoons of distilled vinegar in the water sweetens the tatties up too. Obviously depends on how many tatties you're boiling.

    When you parboil them pop in a half teaspoon of bicarb, give them a shake when you drain them and you get those lovely craggily edges
