That 'P' Symbol at 2:11 really makes me think of those wax seals that envelopes used to be sealed with, so given its found among the graphics used for the letter from Princess Toadstool I'd wager maybe at some point some graphical representation of Mario unsealing the envelope to read the letter was displayed rather than the letter just appearing on screen. Just a guess though.

What if the giant letter above the throne room is actually a screen. When the King tells Mario he received a letter from the Princess, they use that to look at it as an E-mail.
I think the purple pipe tile that was replaced with regular bricks was removed because it wouldn't be clear to the player that it's something you can break otherwise. And the unused bush was probably cut because it would have just cut off awkwardly.
That question mark block with beige texture [no outline] could of been a early texture for the note block or what the dice would of looked like before you roll it.
17:27 you mentioned that this secret exit is normally inaccessible and you need a cheat to walk through the wall, but if you just have any power up you can actually clip by duck jumping on the top right corner and access it in the vanilla game pretty easily.
I like the yellow Cheep Cheep and green Parabeetle. A basic principle of enemy design is to change a colour on them and give them an upgraded function. One of the most obvious is the green Koopa Troopa falling off the edge but the red one staying on. Why not have Cheep Cheeps and Parabeetles that have reversed behaviour patterns?

The beta version of the castle sprite is technically used but only if you glitch the sprites on the warp world 9(by making the camera go there when you go to the last part of the three worlds and move right if you do it long enough youll see the beta version of the castle sprite so yeah its technically used)
Because of the similarity between the icon for peach on the letters, and the usused toad sprite, I think that at some point you would've maybe gotten a letter from a toad, rather than peach.
Finally on of my favorite Mario games! Also, I personally believe that a green cheep cheep with wings under water in super Mario maker is a reference to the gold cheep cheep. Both of them act very similar
The original text for Princess's letters actually references a "gem" being enclosed. So I believe the original concept was a P-gem or Power gem instead. Maybe it would have had more uses than the P-wing, but that's only speculation.
I actually have a pirated CD with a lot of hacks from the NES. One of them, (and my favorite), is Super Mario Bros 3: Lost Levels. Basically, i played these unused Levels. A lot... It was my childhood. Good to know from where it all came from! I gotta finish that, even tho a some sprites are broken.

The p graphic is most likely a royal seal they were common in letters from royal or noble houses which would seal the letter closed so possibly we would see the letter arrive closed and then be opened probably cut bc that would be too complex for the system
I'm making a SMB3 hack myself and there are a lot of unused graphics you missed. Off the top of my head there's atleast 10 more unused graphics you didn't talk about as well as a 3 or 4 more unused animated graphics.
I think I know how the P-Symbol and Toad sprite are related, you said that they're in the files for both the King's Chambers as well as Peach's Letter. Well, fun fact, Peach's Letter is actually stored right above the King's Chamber room when the cutscenes are loaded. Shesez (Boundary Break) discovered this on their Super Mario Bros. 3 episode 😄
OOPS I realize now that you actually did show the letter being above the King's Chamber, still, what I said about the P-Symbol and stuff might still apply here 😅
Mario's animations on the overworld isn't unused, in fact it's all used for that warp animation after a life was lost, if they didn't it wouldn't flow with the same movement Mario has on the overworld
The starry background at 16:13 is actually from the underground levels and the reason it appears is because the stage was never finished completely so graphic glitches are common in unfinished stages.
This is only a theory, but do you think there’s less Lost Bits in NES games? If there is, I bet it’s because of the tighter space restraints than more recent games.

Out of all the NES Mario games, I’ve replayed this one and Mario 2 the most. Their just the most fun to me, even got all the whistles.
