I just acquired a ton of green beans. I've always loved the green beans I'd order at Chinese restaurants. Ok: blanch, deep fry and then stir fry, fussy but I do want to recreate that classic taste. I'll try it.

I blanched my string beans (20 second didn’t feel like I did anything) , I t dried it as much as possible , and I tried the frying part…..It was much longer than 1-2 minutes. I had my electric stove in the highest setting. It ended up tasting good ( I added coconut aminos in addition to the garlic)……but not as crispy as I wanted! Please let me know how I can make it better next time.

My parents can't make it as blistered as the restaurants because they care about health whereas the restaurants make incredible beans because they really don't care about your health. I've tried to make it so many times myself but never as good as the restaurant version :(((( I think Asian Legend's Si Ji Dou (4 Season Beans) is a very good version of the dish. I personally like to add SiChuan peppercorn for the ma la.

Obviously canned green beans wouldn’t work since they are mushy and cooked but canned green beans are fantastic eaten cold with some salt of you are on a tight budget or at the cabin. I know they are divisive and nothing like fresh green beans but I honestly don’t think they should be compared at all dispite being the same veg.
