Legit question...I was wondering why All purpose flour and not bread flour? What's the difference?

I’m not sure why they chose that either. I’m thinking it would rise too much with bread flour and be over proofed? Bread flour has more protein and more lift and stretchiness, you definitely want to use it for pizza dough
