About 12 years ago I’m in a grocery store looking over every brand of flour contemplating which one to go with. As I have had poor results and not at all happy with some other brands. I saw King Arthur flour on the shelf - never seen it before. I pick up a bag, reading it over and noticed they are an employee owned company. Well that alone got me. I believe if they are invested in the company they would take a great deal of pride in their products. Well I tried their flour, absolutely delighted with it, and have been a loyal customer since.

Realize this most bakeries use KA because it makes the best bread with the highest chances of success due to the highest protein count of all the flours on the shelf (their cake flour is at 9%). There is a reason bakeries use hundreds of pounds of flour per day to use for bread all the way to pastries and beyond. Wonderful stuff, but more expensive and not as easy to find in some markets.

    • @morehn
      @morehn 2 ปีที่แล้ว

@@generalawareness101 I don't think you really know commercial baking.
Any bakery can use flour with the same amount of protein from a different brand.
King Arthur sources all their flour and have tight requirements of their range of protein content, ash content, absorption, etc.
These tight ranges make their flour good for quality control.
Most bakeries do not use King Arthur.

I've made my own bread by hand every week for 51 years. I only use KA flour It really is a better product. If there is bread left I use it for bread crumbs to thicken soups or use in other recipes, nothing goes to waste. My grandmother, born in 1889, taught me to bake. All my life, of the friends I've made along the way I was the only one that knew how to cook. Everyone always gathers at my house and I'll whip up a pot pie, pizza, noodles, biscuits etc for a meal and everyone stares at me like I'm a magician.

I wish that a company like King Arthur would come up with a way for us to "earn" the cookbooks through purchasing their flour! Like " S & H Green Stamps" back in the days of old!
In fact "Green Stamps" were everything! From kitchenware to toys, clothes, tools etc... the stamps meant more than actual money, especially during the depression era to the 1960's. My grandma used to let me lick and stick the books as a young child. My great aunt and grandma as sisters shared stamps to get new or replacement items for house that were needed, yet could be shared and used by both. Money was so tight. A & P "bought up" the plan and killed it. They still have 'a plan' they claim. But, only when you shop in "their" stores, like all stores now. ' Future coupons' just don't have the same 'affect' as to getting things you really need. Thanks, great show!!!

It is pretty much the only decent bread flour on the US market. I do have a small historic mill in the neighborhood which grinds small batches of flour. They're not officially allowed to sell their product since it's a historic mill and not up to today's food safety standards (it's a water powered wooden mill with a stone some 100 years old.). Their flour is supreme - although only available not for human consumption - which for me doesn't matter, I bake it, I don't care about food safety requirements saying stainless steel is better than wood - personally I doubt that since wood is anti-bacterial where stainless steel is not.
Anyways, hard to find good flour to bake bread. Most bead flours out there read like my dandruff shampoo.

@@patsydanec7864 Never heard of them. But man, that flour is expensive! I found a simple 00 pizza flour at a local restaurant supply store which runs $13/25lbs. It's just wheat flour and of course not organic or anything. But it also has a high gluten content and it's just wheat, not enzymes and other stuff nobody needs. So I'm using that for now. Decent flour has gotten way too expensive these days. I'm always wondering why flour with added ingredients like enzymes is so much cheaper than just plain flour. I guess they're using the sweepings and pop them up with some extra stuff so they're still bakeable, otherwise there's no explanation why flour plus stuff costs way less than flour without stuff.

ESOP’s are not new - however if the company goes bankrupt then employees can lose almost everything as they are treated basically like share holders and are last in line during bankruptcy proceedings. However, ESOPS offer tremendous tax advantages to the sellers of the company as opposed to seeming their interest to another company while still retaining control (ESOP members do not have voting shares in the company usually). Just look at the bankruptcy of United Airlines in the 2000’s which was an ESOP - most workers not only lost their ESOP value but since their pension contributions were used to pay for the ESOP they lost their defined benefit pensions too which were off-loaded to the PBGC and paid a few cents on the dollar and are capped.

When I use to work QA flour was one of the things I needed to test. Huge trucks worth, tiny cup sample on top.
Frequently failed due to insects. Some would just grab another sample and most bugs are on bottom area and sometimes we'd find rats.
Always freeze your flour and spaghetti for 3-4 days to kill bugs and eggs

You're welcome. Just so you know, FDA allows a certain amount of insects in food. It's in all of our food basically. Organic is stricter and must be less amount of bugs vs nonorganic with incoming ingredients.

It's not a bad idea. I've found insects, like a hundred in a stale candy bar once and there weren't any holes in the wrapper. I was a kid, my mom hid some candy so I didn't eat all at once. I raided her bedroom once. No I'm not fat or anything... I was addicted to chocolate back then. It was a 5th avenue type of candy bar.
Soak all produce in a sink. I like to use grapefruit extract sold for this. Tons of bugs in especially lettuce, head types of food. They can survive regular fridge temps.

I've always used KA Flour. I'm lucky because I can buy it cheap where I live (5lb bag for $1.50) at certain stores in the Kansas City, MO, area. KA Flour's corporate offices are in New England, but the wheat for the flour is grown in Kansas and is milled in Kansas City. A few stores near me carry "factory overstocks," direct from the flour mill at bargain prices. I can also buy Hecker's Flour at 5lbs for $1.80. Hecker's is made in Kansas City too. Ina Gartner only bakes with Hecker's. 😃

I am a FAN of this company and its even better now that I know it is employeed own and they have a decision in the company. I think a lot of companies would do a lot better involving their employees in the decision making. It would not have employees laying out as often nor leaving the company as often. I have to make sourdough or wild yeast bread because commercial yeast bothers me. The 99cent store had king Arthur bread flour on for cheap. I have had trouble finding unbleached, non bromated flour and so was happy the find a good deal on the bread flour I use. Well, I went home and tried ka flour, I could not believe how great my bread turned out. The best loaf I ever made. I went back to the store and bought more, the next day I decided to stock up on it but the store was out of it, so I went to the store in the next city and bought the four 8 lb they had. At that time my reg grocery store didn't carry ka flour, and not wanting to rum out, I went the the next city over to buy more. I got plenty of flour to made lots of bread.
