Cover bowl with plastic wrap, then let it sit (i.e. proof) 8-24 hours at room temp (e.g. overnight) 3. Oil/grease bottom pan 4. Mix dough a little (to de-gas/pull/stretch the dough, but whatever you do, don’t call it kneading!), making sure to scrape the sides/bottom. 5. Sprinkle oats on top of sticky dough, roll dough ball around so that oats mostly coat the surface. 6. Transfer to bottom loaf pan, cover it with same-size top loaf pan and use two metal binder clips at each end to secure the top and bottom pans together 7. Let dough sit (proof) in pans for another 30-60 minutes 8. Preheat oven to 400F, move top rack to lower third of oven 9. Bake for 40 mins at 400F with top on, then another 3-15 minutes with top off to brown the crust

I didn't think it would turn out because of the extreme heat and humidity here, not to mention I made the dough in the middle of a rainstorm. My bread is beautiful and delicious. You are my hero!
Hi Steve, my friend and I were looking for whole-wheat bread without sugar and I came across your video. I baked for the first time a few months ago and since then we ended up baking this bread twice a week and not buying bread at all. I wanted to say thank you because you made it so easy for someone like me who failed baking many times before. Thank you for the healthy, easy and tasty recipe.👌
Hello Steve. About 3? years ago I wanted to start making bread and I watched a ton of videos yours included. It was YOU that gave me the courage to make my first loaf. Now I make all kinds of bread no knead and kneaded. I spend all day sometimes on cold New England days baking bread it just brings me GREAT Joy. I truly have you to thank for this. I have not made bread in a couple months now and I have the itch so I popped in for a refresher but to also take the time to Truly Thank You whole heartedly for starting me on my baking journey. God Bless you for being the teacher that inspired his student.
Love it. I don't know if it is "cheating" but I mix it using a stand mixer and dough hooks; a little disabled, so I do what's easy. A suggestion: I use "atta", or Indian whole wheat flour. It develops gluten well, and is a bit finer grind than most "western" whole wheat flours. It may need a little more water as it absorbs well. Maybe subjective but I think it gives a nice structure and good loft.
I'm in the US so I'm not sure you can find atta here easily, but any finely ground, red wheat flour with a good protein content should work. I found a good recipe that also "cheats" by soaking the entire whole wheat flour content of the recipe with all the water, THEN adding the rest of the combined ingredients together. So, 16 ozs of water + 1.5 c whole wheat, soak for at least 4 hrs. Meanwhile, combine the rest of the DRY ingredients. Once the WW flour mash is ready (no matter how long it's been soaking), add all the other ingredients to it, then continue with the recipe as indicated. Trust me, you'll get an AMAZING loaf of bread. Fluffy and flavourful. I've got fatigue and pain issues so I've left my mash soaking up to 2 days, so I've had whole wheat loaves that have had a very faint taste of sourdough, but only I've noticed it. My kids (the grown men and my grands) have inhaled it so there wasn't much discussion about it. The grands in particular haven't even commented on the fact they were eating whole wheat! They thought it was dessert! 🍰 🤣 💯 And it ALL began with Steve, the rocket scientist...
Steve, I made this bread last night, baked this morning. My loaf looks exactly like yours and tastes great!!! I didn't have pans to make a PMDO, so I just placed a shallow pan of water (about 1") at the bottom rack to create steam for the first 40 minutes, then removed the water for the last 10 - 15 minutes. I think that worked well.

How empowering to know that I can make that choice for myself. It is also helpful for those who don't have all the pans featured in the videos. You can still do it!

I started watching your videos about 8 years ago. I've made so much bread and pizza dough...probably 500 loafs. I bought your book and still refer to it for baking times and temps.
I have never made bread from scratch, I was too intimidated. Until now. Thank you so much, I did it. Your video was so easy to follow and the trick with the second loaf pan worked perfectly. It turned out beautifully.
Thank you. I love the simplicity of your baking. It’s wonderful to not feel pressured to buy 1 million gadgets to create a loaf. I look forward to purchasing your cookbooks.

Hello Steve, I watch all you videos and when advertisement video popped up, I just let it play start to finish. That is my way of saying thank you for giving us no nonsense, informative skills and for the sake of learning. I wish you all well in the world. Be safe and stay healthy. 💜☺️
What a great recipe! I just made bread for the first time in quarantine!! So delicious. I halved all ingredients to test it out and made a small loaf. came out exquisite!
Your video was the 1st i watched on TH-cam years ago before it was popular. I always come back to your channel for the real deal instructions. Thank you
Thank you, Steve! This bread was great! I was surprised at how good it was; it's hard to believe I made this! I could not have made it without Steve's video's and teaching, explaining and showing what he does-just wonderful! I'm very thankful! I already shared this video with someone else! I'll be making this again! I look forward to making more of Steve's various breads!
Greetings from central Ohio. Thanks Steve for your videos. I have your cookbook, but it never hurts to watch the technique used by “the breadman”! Thanks again!
Dear Steve, your videos and recipes are wonderful. You are a fantastic teacher explaining and demonstrating each step of your recipe. I have watched countless bread videos from professional bakers to home cooks and your videos far exceed anything I have seen. Sending prayers and love! 🙏❤🍞🥐🥖❤🙏
Found a work around for the PMDO when Steve’s method didn’t work for me (clips kept popping off). I used heavy duty aluminum foil and tented the loaf pan by completely surrounding the pan. It worked out fine. The bread was delicious
Honestly, I dont even use clips. I just place the second bread pan on top and have it sit there with nothing holding it. I've never had a problem and my bread has turned out perfect every time
@@DreginyReacts Hello. What is the typical humidity in your area and how long do you put it at counter top before baking? Ours is 84-89F and when I tried Steve's 16oz cool water, 31/2cups flour, 11/2 salt, 1/4 yeast which is all too common in his videos, mine didn't shape as dough and was too wet. 😔 I baked it after 15 hours in kitchen counter top. It turned out cooked on the outside not on the inside. 😔😔😔
@@arvi8843 I like Steve's recipes, as HE makes them. But they are always too sloppy to me. I've been using European recipes (and some American ones) that weigh out the flour and liquid. They always work well for me. I am learning about hydration and going to try some of Steve's recipes with weighing water and figuring out the hydration level by weight, for no-knead bread. Best wishes. "Baking with Jack" has a video about figuring hydration.
This is my go to recipe, I dont buy sandwich bread anymore. I always saw bread-making as a long, messy process but Steve you truly revolutionized this view! Thank you for your amazing, clear videos. I recommend you to my friends and family.
@@artisanbreadwithsteve I’m living in K C, MO and reaching out to old friends and coworkers during this crazy year. You are certainly the entrepreneur.
This was really fun to watch. Enjoyed the no nonsense instructions with no background music or noise, as well as your soft spoken voice. Really pleasant video without all the overly done chatter, as other videos have. Step by step easy to follow instructions. Thank you!! Can't wait to try this. I just subscribed and looking forward to watching more videos from you, sir.
Thank youSteve, just when i decided to give up on making any sort of bread you video popped out and what to say, in two days i have been making two different breads. Finally my family call it The bread, it looks like bread, it taste like a bread. So simple and so effective, thank you again….bring us more recipes with more seeds if possible, please?
I stumbled on you about a month ago because I love bread, but I don’t have the counter to knead and roll out. Very limited space. You have really helped and I want to formally thank you. In this time of crisis, I may only have 3 rolls of toilet paper but I have about 50lbs of flour (bread/all purpose) to make my own breads. You have given me the confidence I need. Without my bread maker. Thank you!!!!
This is THE manliest baking video. Something made me want to make my own bread, and I have been looking for ingredients to use and instructional videos to guide me. Here I am stumbling upon this super detailed video. I'm gonna give it a shot.
I love the clear and to-the-point instructions. Just mixed up my first batch, letting it proof on the counter so I can bake it this evening. Thanks for the great videos!
I appreciate when you tell us 'why' you do something. i.e. dusting with flour in order to handle easier. When instructions are given with a 'why' explanation it certainly makes it easier to remember.
It is so clear that this Mr. Steve is one of the best presenters of bread-baking. He is down-to-earth, clear and, recognizes that many of his audience may be intimidated by the thought of baking bread and also don't necessarily have sophisticated tools. So thank you for making bread baking accessible. I have just one (I hope) tiny request. If you are still making new videos, would you consider covering your bowl with something other than single-use plastic? Tea towel, pot covers, re-usable plastic or silicone? I know I don't have to explain why and I thank you if you will consider this request.
What do others use instead of plastic wrap on the first rise? I have an 11" bowl . . . I'm having trouble finding a suitable silicone replacement. Anyone?
@@EDTMKT I use a lid from my pots and pans. An overturned plate would work. I also have a set of silicon covers which fit different size bowls. I never use plastic wrap for that job
@@rosalindpaaswell9513 Thank you! I've been eyeing a silicone lid, so I'll give it a try! I just ran out of plastic wrap & this was the only thing I used it for (which is plain silly). Much appreciated.
@@rosalindpaaswell9513 For the first rise, I saw a tip to try a pot lid instead. Why didn't I think of that?! I have a large stew pot and the top fits PERFECTLY on my rising bowl. 😁🍞

I have been making them for almost three years, I mix with dried garlic powder, all kinds of dried herbs, curry, nuts, seeds etc. but also, cinnamon, honey or with extra sugar then you get sugar bread :-) No one makes bread so fast, simpel and much easier as 'Steve from no knead bread'. I thank you a lot Steve😃 Much loaf love from the Netherland
Thank you so much for this very easy recipe, Steve. I just tasted it fresh from the oven and it's wonderful! Even my husband (a Frenchman) was impressed! The only change I made was to add some poppy, chia, and sunflower seeds along with the the flax and sesame. I'll be making this a lot and I'll be buying your recipe book.
Thank you for providing more knowledge on the "No-Knead Multigrain Whole Wheat Bread"-recipe for flat bread" that was obtained and could have been effortlessly and was created and can easily remember how I am a newbie.
You are such a practical baker Steve! And I really enjoy your videos 😊 Today I am taking some sourdough starter that is obstinately refusing to rise and I'm incorporating into this recipe. The starter is 50/50 flour and water, with about 1/3 of the flour being rye. So it should make a nice loaf!
I need to learn how to bake my own bread. I love how simple your technique is for beginners . The empty store shelves due to the corona virus had me worried i wouldn't find bread for my family. Thank you Steve for sharing your video you are helping many people be self reliant. Blessings to you and your family.
* Oh I bought - BREAD FLOUR - for the 1st Time a month ago and LOVE it !! Also the POOR Man's DUTCH OVEN is a Game Changer!! I can do this!! I will one day get a DUTCH OVEN again as I'm Starting Over as they say and now use the Two Loaf Pans and Binder Clips and IT WORKS !!! 😁🍞🍞💗👍👍👍👍
Just pulled my first two loaves out of the oven, using your recipe and method Steve. I have to say just wow. They came out beautifully. No more bread machine for me. I never thought I'd be able to bake bread this easily. Thank you
Love this recipe. Will try it soon. I love seeing the crumb of breads. In future videos could you cut a slice so we may see the crumb? Thank you. And love your videos and recipes!!!
yes definitely that is one thing that he seriously needs to do. How the heck do we know if we've baked it correctly well I mean obviously sometimes it will be easy to tell but seriously, he needs to cut a slice and show
Omg! I just made this bread. I am 56 years old and have tried and failed to make edible bread several times in my life. This is so easy, and it works!!! Thank you so much! From Chilliwack British Columbia.
Thank you so much for the super easy and great tasting no-knead bread recipes! I love to cook and I do all kinds of cooking for my family but I've always been intimidated by bread making, particularly using yeast, proofing and kneading. I was gifted a bread machine a few years ago and used it a couple of times but never thought the bread tasted that great nor did I like the weird shape it created. During the COVID-19 lockdown, like everyone else, I became interested in bread making. After searching long and hard to secure bread flour and yeast that were out of stock everywhere, it was finally time to make bread! I came across this video and was impressed by how easy it seemed so I gave it a try. Wow! The best bread ever, especially considering what little effort I put into making it! The poor man's dutch oven is a brilliant idea! I've made the multigrain whole wheat bread several times now as well as the cinnamon raisin bread and they are both great and come out perfect every time! My family loves them! This is easy enough that I can incorporate into my routine and continue to bake fresh bread a couple times a week. I can't wait to try your cinnamon rolls recipe! Again, thank you so much for sharing these wonderful recipes!
Thank you. I did my first bread ever following your instructions and I loved it. I have been looking for a bread like this one in stores and not success. I will never buy bread again. I have gotten a great joy in doing my own bread. I thank you a lot.
I tried this recipe and it was amazing! Only difference- I slightly ground the flax. Otherwise flax just goes out of the body as it comes in. I baked it in a regular bread pan (no cover) and it came out perfect and delicious. 😄
Thank you Gila for sharing your experience with a normal pan without a lid. I don't have a dutch oven and currently only have multiples of my mini loaf pans. So I thought I couldn't make this without buying another large bread pan. I'm really excited to give this a try now!
Fantastic job Steve! I decided to learn how to bake bread during this Covid-19 crisis and my wife sent me a link to your channel. I"ve been trying your recipes ever since and the bread has come out beautifully. I've bought your ebook and am finding more gems on it. Thanks so much for your promotion of baking your own bread. Now...as long as my store doesn't run out of flour and yeast, I'll be keeping our family in bread for the duration. Stay safe, keep distance and stay home!
I'm convinced that purple spatula is magic. It's like a magic wand that makes beautifully fresh bread for all the realm! Thanks for this great video. (I recently binge-watched nearly all of your videos this past week.)
Tried it out and was very pleased with the result :) I had to bake it longer but it turned out great! Thank you for the recipe and straight forward video Steve
The elderly often have bad teeth or false teeth. If so the will find it hard to eat. If you brush butter on after baking it will be softer. I personally like chewy bread over soft. But my husband likes soft. If sharing with the elderly try baking more small loaves to share. My husband and I are 73 & 78 and we don't eat a lot of bread before it goes stale. So I have to freeze it sliced than take out a few slices to thaw for breakfast or lunch.
The bread is amazing! Big success in my family. Thanks Steve! I was looking for the perfect whole wheat bread for ages, plus I don't have a real Dutch oven so the "poor man's Dutch oven" does the trick! Brilliant! Highly recommended! Big bonus: the video goes straight to the point, it doesn't have annoying background music and instructions are very clear.
Hello, thank you for sharing your bread making techniques. I have always wanted to learn how to make bread but could never do it right. Your explanations and all the comments are encouraging and I want to try again. Thank you for coming up with the PMDO!
You seem so sweet. This was so peaceful to watch and so instructive. I don’t have bread flour but heaps of oats. Maybe I’ll make an oat flour bread? Anyone have any idea if that’ll work? Also, I’m sure you know but just wanna say they have silicone bowl covers so you don’t have to go through so much wrap. A great space and money saver! I love em
I'm still very much a novice when it comes to baking bread, but your "stir with the handle" tip... life changing...Thank you! It makes me wonder what else is so obvious I've never thought of. Lol again great tip.
Delicious and super easy, I baked in two 9" rounds ( I have a small shallow toaster oven ) and I replaced the flax seed with some chopped walnuts. Thank you Steve for great tutorials!
Thank you for this! My boys loved the homemade bread as comforting foods are welcome as we are self-isolating. A warm moment in a tough time. My youngest said I should become a baker:)
Well what a pleasant surprise. While looking for a German bread recipe I found your channel. I retired almost 3 years ago and miss the German bread I enjoyed during the many years I worked there. I will be making some of your breads shortly. I see a new cookbook popping up for my birthday.

@@Alexkpz888 I use ground, but I add it to the flour instead of the water, for the same reason he adds oats last: ground flaxseed absorbs water, like a sponge. And, FWIW, ground flaxseed in water is used as an egg substituted in vegan baking and cooking.
Hello, Sir...i am from India. I have tried your recipe yesterday. Followed all the steps as you mentioned. I can't believe how good the bread has come out. Thank you you for sharing this recipe and guiding in such simple yet perfect way. ❤😊
Hi Steve, thanks for showing me this. I've just retired and have all day now to putz around in my kitchen and baking fresh bread is top on my list. I appreciate your video, thank you!
Steve!!! I want to thank you for this marvelous recipe. I started it last night, baked it this afternoon and have just finished tasting it. It is easily one of the best breads I have ever had. It reminds me of the bread from Sandholt, a wonderful bakery in Reykjavik, Iceland. This is only the third time I tried my hand at making bread. I used New York Times recipe for no-knead bread the first two times. They were decent loaves, but I wasn't in love. This time, it turned out a soft, billowy and moist bread. After opening the top, I baked for 10 more minutes. This one has a soft crust, which is easier to slice through. Honestly, I cannot imagine dolling out more than10 bucks for a loaf of bread, which is the going price in my city, when I can easily make the best bread from home with hardly any work at all. Please keep teaching us!!

Thank you so much.❤😊
Thank you Steve. I learnt to make bread from you 3 years ago, and never looked back. It’s our favorite in the house. Thankyou again
Hello Steve, I watch all you videos and when advertisement video popped up, I just let it play start to finish. That is my way of saying thank you for giving us no nonsense, informative skills and for the sake of learning. I wish you all well in the world. Be safe and stay healthy. 💜☺️
All recipes are simple and they work. Nothing fancy and real recipes.
Definitely deserves more subscribers
What a great recipe! I just made bread for the first time in quarantine!! So delicious. I halved all ingredients to test it out and made a small loaf. came out exquisite!
Your video was the 1st i watched on TH-cam years ago before it was popular. I always come back to your channel for the real deal instructions. Thank you
I must say this video deserves so much love and appreciation 😭❤️
I must say this video deserves so much love and appreciation 😭❤️

I've never had a problem and my bread has turned out perfect every time
Dreginy Reacts That’s what I do too because I couldn’t find any binder clips during lockdown.
@@arvi8843 I had the same problem 😢
@@arvi8843 I like Steve's recipes, as HE makes them. But they are always too sloppy to me. I've been using European recipes (and some American ones) that weigh out the flour and liquid. They always work well for me. I am learning about hydration and going to try some of Steve's recipes with weighing water and figuring out the hydration level by weight, for no-knead bread.
Best wishes. "Baking with Jack" has a video about figuring hydration.
God bless you, Steve! You have changed many people's lives by your simple, clear teaching method.
This is my go to recipe, I dont buy sandwich bread anymore. I always saw bread-making as a long, messy process but Steve you truly revolutionized this view! Thank you for your amazing, clear videos. I recommend you to my friends and family.
I worked with Steve in California. A many faceted man. Always good information.
It's good to hear from you. I hope you are enjoying your retirement as much as Beth and are enjoying ours. Steve

Thank you. I haven’t bought bread since I have been watching your videos. Greetings from South Australia 🇦🇺
Steve you are the Bob Ross of bread! I love your books. I bake beautiful bread now because of you!! Thank you!!!!
Use the stale loaves as toilet paper :P
😂😂😂love it. You’ve got your priorities right 😂
This is THE manliest baking video.
@@EDTMKT You're welcome.
@@rosalindpaaswell9513 For the first rise, I saw a tip to try a pot lid instead. Why didn't I think of that?! I have a large stew pot and the top fits PERFECTLY on my rising bowl. 😁🍞
Thanks Steve, Our Pastor loves your wheat bread, and so do we!😌
Thanks Steve! You made me a home baker! I've baked bread weekly per your recipes for 18+ months. 👍
Impressive!!
Have you ever doubled the recipe so as to make a bigger loaf?
@@margaretmclean6748 No, I haven't.
Pure substance... No unnecessary explanations... Simple and effective...
Thank you! In future videos ~ would love to see the slice of the bread and crumb ☺️. Also, recipe in notes would be great 👍🏻
Best bread making with simple explanation and easy to follow.
Please keep posting & love what you do.
2021-03-21 💗 🍞🥖Steve Gamelin taught me to bake my own bread.
I have been following you for awhile now and I must say ALL YOUR RECIPES are excellent. Easy to follow. No hooplah. Thank you.
How was it with the other seeds? I just made it with ground flax seeds and sesame seeds did it end up more dry by adding additional seeds
I am pretty sure i just binged watched you whole TH-cam channel. You are very informational and direct. Your channel is amazing.
I need to learn how to bake my own bread. I love how simple your technique is for beginners . The empty store shelves due to the corona virus had me worried i wouldn't find bread for my family.
Thank you Steve for sharing your video you are helping many people be self reliant. Blessings to you and your family.
Try it, it's easy with no knead recipes. I will never buy bread again!
I FINALLY DID IT!
I did the Raisin Bread first, but this is the one I want to be able to go back to FOREVER. And now I CAN. THANK YOU STEVE
!
Linda Kintz I agree. I love seeing a slice so that I can compare mine.
yes definitely that is one thing that he seriously needs to do. How the heck do we know if we've baked it correctly well I mean obviously sometimes it will be easy to tell but seriously, he needs to cut a slice and show
@@dcwatashi I, too, would love to see a slice!
I’ve seen multiple people comment about this on several vids, and yet to see him cut a slice. Maybe on newer vids?
@@anonnnnnsh happened same with me...flex powder effects taste badly
Cant wait to try this! Thank you for NOT using music. I find music too distracting.
Thank you for this simple healthy recipe and your pan tips. Thanks for eliminating the music and/or sound effects. Very direct and informative video.
Thank you, Steve! Your easy-to-follow instructions have helped me bring homemade, fresh-baked bread to my family on a regular basis. God bless!
This man is a legend in my book thank you for the wisdom
I absolutely loved the spoon handle tip! I can't wait to try making this with my nephews this week. Thank you for sharing!
Hello, thank you for sharing your bread making techniques. I have always wanted to learn how to make bread but could never do it right. Your explanations and all the comments are encouraging and I want to try again. Thank you for coming up with the PMDO!
You are so organized! I love that and I love the “ no music” as well. Just bought a couple of your books from Amazon
After watching your videos, some many times, I finally ordered your cookbook. Your direct teaching method is very helpful !
I love em
That's a good idea.
Only if you use Psyllium for texture and BP instead of yeast
Shower caps work well too :)
I'm still very much a novice when it comes to baking bread, but your "stir with the handle" tip... life changing...Thank you! It makes me wonder what else is so obvious I've never thought of. Lol again great tip.
You use so little yeast! I am surprised it rises so well. THANK YOU for your art. :-)
I know, I was skeptical at first because I have seen other videos, but OMG works like magic!
Hi how much flour in total ,do you use
Well what a pleasant surprise. While looking for a German bread recipe I found your channel. I retired almost 3 years ago and miss the German bread I enjoyed during the many years I worked there.
I will be making some of your breads shortly. I see a new cookbook popping up for my birthday.
i was hoping that you'd slice it open so we can see how it looks inside, the thickness, crunchiness of the crust, etc....
Thank you from the uk 🇬🇧 xx I can’t get out to buy food or get a delivery and there’s no way I could knead bread the way I used too xx Thank you so much for your great recipes x I bought your No knead bread book and I’m enjoying baking again thank you xxx
That looked super easy. I'm encouraged to break out into whole wheat breads
I did because of Steve. Try it! 👍
It’s as easy as it looks.
I first started watching your videos during Covid.
Still love watching them
Whole flax seed passes straight through you, if it’s ground up it has great benefits for your body.
This is great info! I’m thinking he uses them for texture, will add both though, ground and whole 👍🏻
Thank you for this, Steve! This is very helpful most especially during the quarantine times! ❤️
Hi Steve, thanks for showing me this. I've just retired and have all day now to putz around in my kitchen and baking fresh bread is top on my list. I appreciate your video, thank you!
Steve Nobody can find yeast anymore. We need your take on sourdough!
Amazon has yeast. I buy the one pound packages and keep it in the fridge or freezer. Keeps forever.
Amazon
For yeast: Asian food stores; Italian food stores; ethnic food stores. You can also ask your local baker 👩🍳!
You are such a likable guy and you make instructions very simple. Thanks.
Flax seed is difficult to digest in its whole form. What if you ground it then added it to get its full nutritional value and not just pass through.
Jocelyn Doucette you have to grind up flax seed in order for the body to use it.
Isn’t that what I said?
You improve people's lives. You can't do better than that! Thank You!!
Why he doesn't cut the bread, so we can see the texture of the NO KNEAD bread.
George Jones took a time machine from the 90's to 2020 to teach everyone how to make no-knead bread.
