    Ingredients:
    1.5 C warm water
    2.5 tsp dry yeast
    3.25 C wholemeal / whole wheat flour, organic
    Method:
    1 Combine all ingredients in a large bowl, cover and let rise for 3 hours or overnight.
    2 Place the dough onto waxed / parchment paper and shape it into a loaf without kneading. Make some slices in the top of the dough to allow it to rise without splitting.
    3 Preheat oven to 450F / 230C. When the correct temp has been reached, warm a Dutch oven in there for 20 mins.
    Remove the Dutch oven and place the shaped loaf in the paper into the Dutch oven, replace the lid, and bake it for 35 mins.
    4 After 35 mins remove the Dutch oven lid and continue baking for a further 5 mins.
    5 Allow the loaf to cool before slicing and freezing the bread.

    I have a Dutch oven, yeast and whole wheat flour and made this earlier today with no salt. I let it rise for 3 hrs. I love it. I’m so happy because I’ve been searching for an sos-free bread recipe for forever with no luck…until now! A lot of recipes have maple syrup, etc. I ate it with homemade oil free butter. Seriously THANK YOU Emmie for this recipe!!!

      I am a holistic, RN, and also a certified nutritional health and wellness practitioner .
      Using these genetically engineered yeast is not healthy at all. Yes, a.k.a. fungus it’s an opportunistic pathogen it’s waiting for its moment. It robs the host of their nutrients to survive . And genetically engineered yeast are the worst. Because what else have they been programmed for?
      If you want to make your own Sourdough bread where you’re making your own yeast from the environment which are natural to us and we live with them every day and not these genetically engineered yeast by the industries. I would say that is a much much better route.👊💖

    There's a lot I agree with. The bread itself, the recipe, the ingredients, and the presentation.
    Also yes. piling on a whole load of processed 'food' onto bread is not great for weight control.
    Re the way the body works. It doesn't know or care about how many calories you have had in a time period that stores fat. There's no calorie counter or clock that starts at the beginning of the day.
    It's simply a hormonal trigger.
    It's an Insulin peak based on the immediate energy conversion to blood sugars that tries to prevent cell damage from overloading on Insulin, so when eating high insulin(glycemic) producing eatable substances (aka Junk food) it's slows the continued process into the cells, which gives you that too satiated sleepy feeling, then diverts the excess 'energy' into fat stores. Which is Glycogen stores initially, but if they're already full, into long term fat stores, then into and around organs (pre-diabetes).
    But just want to say, my wife and I love the bread. 🙂

    We make our own bread with our own sour dough starter and just flour and water and a tiny bit of salt. We also use a dutch oven as it really controls the heat the bread needs. But sometimes I am in a hurry so I make flat bread or sour dough pancake in my non stick pan. I just take the starter which is just flour and water, and pour it into my hot non stick pan. I then sprinkle with green onion and everything bagel spices. When ready a little avocado and a bowl of baked beans as a quick meal even on the go.

      Wow sourdough pancake - that must be delicious. I will have to try that but let me ask this to be clear of the process. You mean you just pour the starter in a non-stick pan without no added flour like making bread? Also, should the starter be fed before making the pancake? How much of the starter can one use for the pancake? Talking about sourdough pancake, does it mean the starter has to be like the texture of a pancake batter? Sorry for the questions but I just make sure I get it before trying it.

      Do two loaf pans (preheated too) over each other or use a glass container and put foil on it. Works just fine

Flour needs to be freshly-milled in your home, as once the grain is ground it loses 90% of its nutrition within 48 hours! This is why bread at the store or even homemade (organic or not) is dead and inflammatory. I started buying wheat berries in the bulk foods section at a local grocery/ co-op store, but you can also order online through Azure and other websites. I you can't buy a mill right away, my friend uses a high powered blender to make her flour :)

    Would if you don't have a Dutch oven? Edited to say, I used a regular soup pot with a lid, and it turned out great. I only let the dough rest for an hour and it still worked. I put sea salt in mine. No sugar, yet it has a bit of a honey sweet taste to it. I really like it.

      A regular stainless steel pot works just fine. If you want you can put a silicon mat in the bottom but I find you don't really need to do that. If it sticks, try sprinkling silver flour on the bottom of the pot next time.

      I made it few time using bread tin, bc my Dutch Oven is small, bread came out outside a bit hard but still tasty.

      You can bake it on a sheet and cover it with a stainless steel bowl (that doesn't have any plastic parts).

      Just what I was looking for, a non complicated bread that even I can make. I like the way you also rolled it up like a cigar it's better than putting it into a tin cause sometimes it sticks to the tin. I'd buy a Dutch oven if it really helps make the bread, I assume the Dutch oven stops the bread from getting hard on top. Thanks so much..

    I went carnivore and things all went into proper balance. I stopped all veggies and went to beef, bacon, butter and eggs. Used to make fresh bread from fresh ground wheat. I miss miss miss that THE most! Enjoy your soup, you are very pretty :) Thumbs up 👍👍👍

    I prefer overfermented sourdough whole wheat.. Has lower glycemic index. Usually I eat it with olive oil or sardines or legumes.
    If it has malted barley flour in it it’s better.
    Freeze and toast it’s an alternative for lower GI too

      The only way you RE GOING TO LOSE WEIGHT is by fasting for 18 hours just about everyday, but you must stop eating eating flour bread, potatoes and sugar products also you must exercise, If you follow this recommended regiment you will start to lose weight. I did that and lost more than 30 lbs.

    Soup! I'm so excited to make this! We have limited our bread intake since going WF/PB, with the exception of a few bread recipes I've tweaked to make healthy (banana bread, cornbread, etc) This is going on my weekly cooking schedule! You mentioned we can make it more "sour" by letting it sit longer. Sourdough is my FAVORITE! How can I make this into a Sourdough loaf? Thx for everything!! Love your videos (ps - hubby, since we went WF/PB is down 40 lbs, and me 15. He had more to lose. We're still working on losing more, tho! 😊👍)

      If you mix 100g water and 100g flour and let it sit in the oven with the light on. After a 1-3 days it’ll fill up a small mason jar. You can use that, add 400g flour and 275g water. That’ll make a nice true sourdough (flour and water no yeast)

    Hi Emmie. How many calories would a slice of this bread be? Based on how many slices per loaf? This would be very helpful information. Thanks for the recipe!

      It depends on how thick the slice of bread would be. You could figure it out by counting the calories of the flour, which is usually 110 calories for 1/4 cup. She uses 3-1/4 cups of flour, so that is 1,430 calories. Let's say you get 10 slices out of the bread, it will be about 143 calories a slice. Hope that helps.

    So much misunderstanding out there about bread (and carbs in general)... People forget that bread has been a cornerstone of nutrition in Europe and Middle East (very much so in Greece where I reside!) for millenia. And it is no mistake that the creative part of "making bread" has entered so many fairy tales!

    I’m gonna try an overnight rise. I don’t have a Dutch oven but maybe I can put a large stainless bowl on top of a sheet pan and make do.

    Whole wheat also has a completely different texture, a little denser and a lot softer. A little sweeter taste too. With white “bread flour” you get that chewer artisan style bread with a crispier crust. Both whole wheat and white “bread flour” are good, it’s all a matter of preference. My go to is the bread flour, but sometimes I change it up. Also I use “unbleached” bread flour as it can affect the yeast, well mostly it affects my sourdough starter if using that instead of a dry yeast from the store.

      Sourdough is a totally different bread.. It doesn't use yeast. It uses a "starter" which causes rising by a different micro-organism family vs the yeast family. :)

    Does the towel have to be damp? I am excited to try this recipe because I’m tired of bread having additives and preservatives. Bread should be simple and hearty like the one you made! 😊

      The Dutch oven probably locks in the moister so maybe try putting a bread pan over top of the bread pad that has the dough.

    The bread looks fabulous 👌 well done. Any advice on the health side effects on eating yeasted bread v sourdough? I know the internet tends to demonise yeast, but it seems like it's not that harmful.

    Is there a reason to remove the handle from the Dutch oven lid? Is the hole needed to release steam or is the handle just missing? Thx!

      t think the top handle is made with plastic, hence it must be removed for oven use.

    I love this young girl! She has nice explanations and observations. Here it is for me: A slice of bread could be 13g of carbs & couple pieces are 25 - 30g for a sandwich. Low carb diets recommend 20g - 50g of carbs a day. So, if you're active as you should be, you will not store too many carbs with 1 - 2 pieces of bread per day. Keto bread has even fewer grams of carbs but may not be as appetizing. It is good, however, to be able to deplete stores of glucose and fats in your body, occasionally, to keep the benefits of ketones. Good luck!

    Thanks for the recipes. Can you do this with lectin-free ingredients for inflammation reduction and weight loss? Like sorghum or hemp seeds? Gluten is one kind of lectins which causes all kinds of inflammation from farting to serious auto immune diseases like diabetes, Alzheimer's, and speeds up cancer growth.
