World’s Easiest Pizza Dough (updated)… no-knead dough… no machines (just a glass bowl and a spoon)

  • Bread making doesn’t get any easier than this… no mixer or bread machine (I’ll make the dough in a glass bowl with a spoon)… no-kneading (Mother Nature will do the kneading for me). Then I’ll shape and bake two 12” thin crust personal sized pizza.

    So glad to see a new video, Steve. We get a little worried when we don't hear from you for a while. Your tutorials have educated a lot of people who are new to the kitchen. And, even those experienced learn some things, as well. Recently, I stopped by my 83-year-old mother's house as she was preparing to make homemade bread. I showed her your method for turning a spoon upside down to use the handle as a dough hook. She thought that was the most clever idea to come her way in years. Thank you for taking the time make these videos.

    I found Steve's channel when I first started baking bread. It was such a help that he kept the camera going for the entire time he was stirring. It made all the difference to a brand new baker to see exactly what you're supposed to do. I have Steve's book. And although I dabble around with other channels, I always come back to Steve!

    I'm absolutely overjoyed to finally find your channel again, Steve. I first found your channel right before the Covid lockdowns started, and while grocery store shelves were completely devoid of any breads, I was happily strolling down the aisle for flour. Watching your videos inspired me to not only make fine bread, but also to learn to make more simple foods with that same taste of the finest quality.     Made the crust today. Excellent! The no knead has a deeper, more robust taste to it than the turbo. The dough made two 12" pizzas. Both held up to multiple toppings. I baked it on my pizza stone.

    Steve - I just read through some of the umpteen wonderful warm messages people have left for you in the comments. They are remarkable, and reflect the very special man that you are, and the quality channel you have created. I'm not a bit surprised you have inspired such loyalty, respect and affection in viewers right around the globe!
    On a personal note I'd like to add that your video tribute to your late, much-loved canine companion 'Ode to Zoom-Zoom', has been such a comfort to me since the loss of my beloved Dolly-dog 3 years ago. Our pets are only loaned to us, and the sad day of parting comes all too soon. But is our terrible grief worth all the love and laughter they shared with us? You bet it is! Thank you for reminding me of that, in the depths of my sadness.

      Try making Neapolitan pizza, you’ll need special red tipoli or red tipo 00 flour. The 00 rating is how finely the flour is ground.

    I don’t know if this applies to pizza dough, but I tried both methods for baking no-knead bread and found the turbo method with the shorter proof time for making bread had little flavor. I much prefer the traditional method, which I think you said some time ago has the effect of more/better flavor. Nice to see you posting videos again!

      I despise anything that says turbo mode for that exact reason... It needs time to form all of the appropriate flavors.
      I just recently subscribed to this channel and just now saw this video. I broke out in laughter because this is exactly how I make pizza dough!
      On a trip to Italy in the late '80s I actually asked how they make their dough, at least is this one pizza place it was an honest sourdough with the starter being nearly 60 years old. So obviously the longer the fermentation the better the flavor.

      I agree. made the Turbo dough (my first time) and made one pizza. Was not a fan of flavor. Put the other half of dough in fridge overnight, and tried again next day, and just that one day improved the flavor so much.

      Turbo makes emergency bread only . . . Longer proofs are where the taste is! Oh, and King Arthur Unbleached Bread Flour. ♥🍞

      A long slow multiple day cold proof 2-5 days can't be beat for pizza dough. Just use less yeast the longer you go.

    You can really save a lot of money by letting it sit overnight. Its just the 1/4 tsp and two cups of flour for same portion size as doing it the same day.
    I have a better recipe for a same day dough, but as an artisan overnight dough this is awesome.

    Hi Steve, made this dough last night for pizza tonight. My dough looked wetter than yours when mixed, probably because I aerated the flour before adding to the measuring cups vs scooping with the cups directly from the container. I plan to add more flour during the rolling process and hope it turns out as good as yours! Thanks for updating your videos.

    Sharing a new trick to shape the pizza dough. Gravity helps mother nature shape the pizza. No need to fight the dough. After flattening and rolling the dough - I turn the mixing bowl upside down, place the dough on it and gravity does the rest! Then I right the bowl to ease the dough onto my baking stone. Waa-laa! I have a 16" perfectly shaped pizza crust! Thank you Steve for all your tricks and advice. Maybe some of your viewers will find my trick useful.
