      I found Steve a few months ago after watching way too many bread videos. I use his recipes exclusively. The instructions are easy to understand and to follow and the bread is always delicious. STEVE RULES!

    Pro tip for other viewers: Next time you watch a TH-cam video that makes you angry because it's 10x longer than it needs to be or incessant talking or annoying habits or constantly ending every sentence with "know what I mean", post any of Steve's video as a comment of how it should be done.     Hi Steve, thanks for this video. I used your raisin bread recipe as a spring board for my own, modifying to my own taste. The poor man's dutch oven is super interesting. I've made no knead bread many times in a round 3 qt pyrex bowl with a cover that we've had for over 30 years, but I like your idea for a traditional loaf shape. Anyway, on the raisin bread, I decided I wanted something sweeter, so I used 3 T brown sugar + 2 T maple syrup. For spices I used 2 t cinnamon, 1/4 t nutmeg and 1/4 t cardamom. I used half dark raisins and half golden raisins. I added 2 T butter. The result is out of this world delicious. The aroma while it was baking put me in orbit 🙂. Thanks again.

      R L Haven’t tried to make them....yet. I’ve told all the oil field people that work near my farm to keep a look out for my big white cup towel hanging out my kitchen window. When they see that, it means come eat because I’ve been testing a lot of recipes with lots of food to eat. So burritos may be in my future.

      A lot of bread can be done without time-consuming needing and proofing. I make my own sourdough bread, actually more like sourdough Italian focaccia, in just 15 minutes + plus the time spent rising in the form. You trade some flavor and strong gluten structure, but the main sourdough flavor is there and it can be topped with olives, herbs, tomatoes, onion, spinach, you name it ;) I can bake fresh bread every day, almost by the way of eating breakfast. The clamps he is using have to be heat-resistant.

    I just made this and I'm having some warm bread with butter now. Amazing. I've been having different cinnamon raisin breads and bagels for breakfast for years and this is by far the best one yet. It has a bit of a crust like a rustic loaf but it's super moist inside and there's a nice chewiness to the bread. Thanks for a great recipe. I'll be making this one again and again.

    16 oz cool tap water
    1 1/2 tsp salt
    1 1/4 tsp yeast ( instant or active dry )
    2 tbsp brown sugar
    1 tbsp gound cinnamon
    Mix
    3 1/2 cups bread flour
    1 cup raisins

    I have been watching Steve's videos for about 10 days or so. I ordered the book ( 28 Popular No-Knead Breads) from Amazon and it came today. My wife saw me reading it and asked me to make raisin bread so I followed this recipe in Steve's book. I used the Turbo method with the PMDO. My bread pans were not deep enough so the bread expanded to touch the top pan and it filled both pans perfectly. It looked weird but WOW it's the best tasting raisin bread I have ever had. It's very moist, almost like desert breads. Every other raisin bread recipe I consulted had butter and milk, amazingly this recipe calls for no fat added to the dough. Good book, good recipe, just 27 more to go.

    Steve's No knead bread recipes are the best. Easy to understand and makes great bread. I've been watching his videos for years and have made almost every one of his No knead breads. They really are no fail recipes.

    Aloha from Hawaii🌺🤙🍹 The biggest change I've made to baking bread since coming across Steve's videos is stirring with the tail end of the wooden spoon🥄🥄🥄 Crazy, it's such a little thing but soooooo much easier to stir & clean... Mahalo Plenty 🍍🤙🌴

      Totally eating a slice of rosemary 🌿💕 olive oil (turbo/no-knead) bread right now lol. Sooo perfect. Actually swapped puréed white beans with a little water + 4 Tbs olive oil for the 12 oz water. Add 2 tsp whole rosemary - - dry toast in a pan on medium heat 2-3 min, then grind in spice grinder.
      Finish bread as usual. Yum!

    Hi Steve; I've been watching and making your breads since the beginning of your video's. your recipes are fantastic and your techniques are unique. I also watch baking bread on you tube from other people. None of them are as easy as yours and all of them talk too much and make their video long .
    From your video I learned a lot. You are teaching from your heart . You are making love loaf of bread . And this is important. you are kind, generous, and humble.
    I'm glad you are updating your video's, that give us to see you back and teach your wonderful techniques and knowledge.

    This bread is wonderful! Next time I’m adding walnuts! I didn’t have binder clips so I wrapped the pans tightly with a strip of aluminum foil. It worked great. It’ll do until I get some clips. I’m making this again!

    'No need to knead' is my new mantra after discovering your channel here on YT. I come from a long line of 'bread eaters' and raisin bread is one of my faves for breakfast with a mug of hot tea. How wonderful and easy it is now using your 'no knead' bread recipes. No more taking out my heavy stand mixer whenever I want to bake a loaf of bread. Thank you so much for sharing your recipes. You have opened a whole new world of easy bread making for me.

    Steve - YOU ARE THEE MAN!!! My friend wanted to start baking bread when she found out I was. (She lives far away) So I told her to watch your Turbo Bread video. It's super easy, it's how I learned your basics. She called me a few days later and said "it was horrible!" and she threw the heap into the forest behind her house! (LOL!) I said to her, "How in the world can you screw up Steve's Turbo Bread??? I quickly changed the subject - I didn't have the energy to wallow in her grief but I encouraged her to try it again.     2021-03-21 💗 🍞🥖Steve Gamelin taught me to bake my own bread. I have been making them for almost three years, I mix with dried garlic powder, all kinds of dried herbs, curry, nuts, seeds etc. but also, cinnamon, honey or with extra sugar then you get sugar bread :-) No one makes bread so fast, simpel and much easier as 'Steve from no knead bread'. I thank you a lot Steve😃 Much loaf love from the Netherland

    Just made this (overnight) and baked it in time for breakfast. I was a bit concerned about using the extra yeast as I’ve only previously used 1/4 tsp for No-Knead plain bread with the same quantity of flour. However, it turned out really beautiful and soft inside with a delicious crust ( I wanted to upload photo here but can’t see how/ if it’s possible) So I guess the explanation about cinnamon retarding the fermentation was spot on! 😉
    My dough was a lot wetter than in the video and It filled my Dutch oven with no room for ‘oven spring’ so I left the lid off and added a bowl of water to the oven to generate steam instead (for a nice crust ), And it still turned out great!
    Thanks for the recipe and video Steve , this will be on my breakfast menu now! 👍👏

    I like your videos, Steve. You cook like a man. Very direct and to the point. The viewer doesn't have to listen to ten minutes of a woman telling you her life story before getting to what the video is all about. I like that.

    Your "poor man's dutch oven" is genius. Use it all the time. Btw, if your viewers can still find an Anchor Hocking 8 cup mixing bowl WITH the lid, it's great for mixing and proofing. And other things too.

    I just made your No Knead Cinnamon Raisin Bread. It was as you showed SO EASY. I took it a step further my wife had store bought that had an icing and she loved it. I did just that with icing sugar and put a nice layer on top once it cooled.
    Thanks for your great recipe ideas.

      I let my bread cook at least a hour, in my Dutch Oven on 375 F ,with the lid on

    Great instructional, Steve. My cinnamon raisin bread came out gorgeous and delicious, and I used your PMDO and not a $400 Le Creuset. I've been baking no knead sourdough bread for 5 years, and could never understand why they make the process more complicated than is needed. My starter is as healthy as can be, and no, I don't weigh all the ingredients when I feed it, and sometimes it starves in the fridge until I'm ready to make more sourdough bread.
    You're amazing, your methodology and recipes and common sense are so refreshing in today's overly-complicated world. KISS!!!! (Keepin' it Simple, Steve)

    I've being doing your breads in my toaster oven. Las Vegas, NV is so hot that I don't want to use the big oven. Maybe next winter. I bought your book for the toaster oven and the breads are amazing. Right now, my first cinnamon bread is baking.

    I made this today let proof over night, 9 hours. It was over flowing my bowl. More then doubled. I baked it . Uncovered. Taste delicious. I made it again and used a bigger bowl . It’s fine. Turned out great. Yummy. Thanks.

      I was just thinking of doing that. I love raisins and walnuts together. I always put them in my pumpkin bread. Did this recipe make a soft loaf, or a crusty, hardier loaf?

    This was spectacular even though I used active dry yeast. It rose excellently. Next time (and I'll make it over and over) I'm going to add one more tablespoon of brown sugar, bc I like sugar. But it was super just as is. Also I had to give my beautiful dutch oven away because my hands are getting weaker, but your "poor woman'' s" system was perfect. Thank you thank you.

    I made this yesterday, but got worried after 3 hrs because is rose over double, so decided to cook it, and oh my it rose like a house and is the best fruit loaf ever. Thank you Steve, ive spent many years on and off trying to make bread, with many non consistent recipes, ive got your sandwich recipe sitting and waiting for tomorrow, it too has rising over double, but ill wait till tomorrow.

      yes, it does depend on how hot your kitchen is as to how fast the dough doubles; in summer, I often put the dough in the fridge to rise overnight, take it out and set it on counter until it gets to room temperature then bake it, works well

    I have been baking bread my whole life and didn't know you could make loaf bread without kneading. Guess it is never too late to learn a new trick. LOL I made this and it is wonderful. Thank you so much for an amazing teaching video.

    Two suggestions for your consideration:
    1. Stating how long you rest the bread before slicing.
    2. Cutting the bread to show the crumb and explaining what could be done differently to alter the crumb structure (e.g., not de-gassing if you want an open crumb).

      He can’t...when you slice your bread just out of the oven...you ruin the crumb....it becomes gummy! But I wished we saw the inside after it cooled. I love Steve..he’s the Bob Ross of Artisan Bread Baking!

      Oh, Steve, that's the word "gummy"..sort of pancake texture and I've sliced the cooled bread after 3 hours...
