Papo Secos São Miguel Style

  • Papo secos de São Miguel
    10 cups all purpose flour
    1 cup Portuguese white corn flour
    3 tbsp yeast
    3 tbsp sugar
    3 tbsp crisco or oil
    2 tbsp salt
    6 cups warm water
    In a large bowl, add water, sugar, yeast and salt. Mix everything well then add crisco. Add all purpose flour and mix everything well. When dough sticks to your hands, wet your hands in water and continue to knead till dough begins to separate from the bowl. Cover with tablecloth and let rest for 15 minutes. Give a hand by doing flips and stretching the gluten. Cover again and let rest until doubled in size.
    To shape the dough, put white corn flour on the table and roll dough on the flour, bringing all the ends together to form a ball. Let rest for 5 minutes. Place dough on a corn flour table and flatten a little bit using the side of your hand press an indentation in the middle of the ball. After, rolling each side to meet the indentation. Placed on a table cloth with indentation facing down. Use tablecloth as a separation between the dough so they don't stick to each other. Let rest for 30 minutes. On a cookie sheet, place parchment paper and add dough with the indentation side facing up. In a preheated oven bake at 375 degrees for approx 20 minutes or until light golden on top.
    Papo secos de São Miguel
    10 xícaras de farinha multiuso
    1 xícara de farinha de milho branco português
    3 colheres de sopa de fermento
    3 colheres de sopa de açúcar
    3 colheres de sopa de crisco ou óleo
    2 colheres de sopa de sal
    6 xícaras de água morna
    Em uma tigela grande, adicione água, açúcar, fermento e sal. Misture tudo bem e adicione o crisco. Adicione a farinha de trigo e misture tudo bem. Quando a massa grudar em suas mãos, molhe-as na água e continue a amassar até que a massa comece a se separar da tigela. Cubra com uma toalha de mesa e deixe descansar por 15 minutos. Dê uma ajuda fazendo flips e esticando o glúten. Cubra novamente e deixe descansar até dobrar de tamanho.
    Para modelar a massa, coloque a farinha de milho branca sobre a mesa e enrole a massa sobre a farinha, juntando todas as pontas para formar uma bola. Deixe descansar por 5 minutos. Coloque a massa sobre uma mesa de farinha de milho e alise um pouco usando a lateral da mão e pressione uma reentrância no meio da bola. Depois, rolando cada lado para encontrar o recuo. Colocado sobre uma toalha de mesa com recorte voltado para baixo. Use a toalha de mesa como separação entre a massa para que não grudem umas nas outras. Deixe descansar por 30 minutos. Em uma assadeira, coloque papel manteiga e adicione a massa com o lado da indentação voltado para cima. Em um forno pré-aquecido, leve ao forno a 375 graus por aproximadamente 20 minutos ou até dourar por cima

      I buy my flour at Costco in 50lbs bags. I change flour all the time and the recipe does good. Thank you for watching my videos.
