I have made pancake mix for over 40 years. When I make it up I do it in batches of about 26 cups at a time in a huge metal bowl I have. I usually make up 2 batches, so I am making 52 cups of mix. I store it in a 5 gallon bucket and just refill a 12 cup rubbermaid cereal container for everyday use. When the bucket is getting low I know I have to make the mix up again. You may think that 52 cups is a lot but we have pancakes or waffles at least once a week, so that 52 cups is about 3 months worth. I also make my own Bisquick and several other mixes. When I was a new mom I bought 2 books called "Make-A-Mix Cookery" and "More Make-A-Mix Cookery" (both by Karine Eliason), and that is where I got the recipes from. We raised 6 kids on just one income so money was always tight. Making my own mixes helped keep costs down. Even though we are a much smaller family now that my kids are grown, (2 youngest are special needs and still live at home) I still make the mixes. It is part of my prepper pantry.
My Mom bought me those same cookbooks when I first got married. We had so much fun getting together to make up mixes. These became part of every wedding shower gift. Several years ago, we bought the new all in one book. Even though I live alone now, I still keep many of the mixes on the shelf as became so dependent on them. Once my 18 month old came up missing. Found her sitting on floor of pantry with lid off of brownie mix, stuffing her mouth. The door did have a child proof lock on it. It has always been a consistent part of my mixes 40 years later.
I have those same 2 cookbooks (I got married in 75). For the last 3 or 4 years I made the Spumoni Cake for Christmas. My grandkids love it. I haven’t made it in a while but there’s a recipe in one of them that has stew meat, along with a couple cans of various cream of soups. I’m sure there are some more ingredients, but I can’t remember at the moment. With the recipe it gives other recipes you can make with the cooked meat mixture. When our kids were growing up we got to where we would use the mixture as is over mashed potatoes. Yum, now I want to get my cookbook out!

Tan, Yellow, Lime Green, Orange or Blue Painter's Masking Tape works great for Labeling as well. Cheap easy to use Sharpie marker and comes off without a sticky mess.
This is very helpful. Just so you know, you don't have to continually measure out tablespoons and teaspoons. 3 tsp = 1 TBSP, 4 TBSP = 1/4 CUP, 8 TBSP = 1/2 CUP. Saves time.

I’m new here. Love the recipes. I don’t know about anyone else, But, I hate accidentally bumping my glass jars when taking out or putting back on shelves. So I take old socks that I’m throwing away ( Clean) and cut the tops off them. Slip them over the jars and no more accidentally hitting jar against jar.. Hope this helps others..
I appreciate the fact that you are properly measuring, leveling off with a knife, etc. I teach Family & Consumer Sciences classes (Formerly called Home Ec.) at the local High School. Most people don't properly level off ingredients. It is so hard to teach students proper measuring techniques when they don't see proper examples in the videos that they watch. Thank you so much.
Question: Can/should I use buttermilk powder in recipes that call for buttermilk? I have a recipe for pancakes that my entire extended family uses and it calls for buttermilk (And it makes a huge difference in taste!). I have been known to mix milk and sour cream if I don’t have buttermilk handy, but I would love to be able to use the buttermilk powder blended with the dry ingredients to make a mix like yours for these pancakes so I don’t have to rely on always having buttermilk on hand for my recipes! If I am able to use dry buttermilk powder, would I then just add water to the mix instead of milk? Thanks so much for your help and for your helpful and instructive videos!!
@@pjcullinane2011buttermilk powder needs refrigeration after opening. So yes you could but the mix would need to be refrigerated ❤ *edited to say the saco or whatever brand from Walmart needs refrigeration, unsure if others.
LOL Well that might work if you actually measure but I cook from my heart and come from a long line of cooks and bakers so I don't measure much if at all.

When making my dry mixes I NEVER thought to use my Kitchen Aid mixer and mix up the dry ingredients in it . I always used a wooden spoon or a whisk by hand , so my hands thank you as the mixer saves me that struggle,So thank you for sharing your fantastic tip to mix it up in the Kitchen Aid stand mixer plus it will mix it so well that all the ingredients will be well incorporated. I also like that you’re making up LARGE mixes because it lessens having to make the mix up again so soon especially if our family isn’t as large as yours is . Blessing

Made the cornbread mix and baked it! It was perfect! I used Azure cornmeal and Azure powdered buttermilk in the mix! It was perfect taste and texture! ❤❤❤

Drinking chocolate....... it's a gamechanger..... it's just powdered milk, white sugar and cocoa powder ...... i use 2 cups each of the milk powder and sugar and 1 and a half cups of cocoa as a base to fit in a 2 pint jar...... make up, in a mug, with boiling water and add a drop of cream or whole milk and/or a bit more sugar to taste. (Whatever you put in the jar, someone in the house likes it slightly different!)

OMG! I just wanted to say your Belgian Waffle mix is so delicious! I made a batch of the mix and made some waffles from it and it was a winner! Also, I forgot to separate and beat the eggs and just plopped them into the batch I was making. The waffles turned out fine. So good! Many thanks for posting these mixes. I sure appreciate you.🙂🙂
I have friends that own a skating ring and they sale pickles there, I buy their gallon glass jars from them and use those, just $2.00 a jar. I store lot of our dry mixes in them. Ty for your videos, God Bless 🙌

Get a grain mill and only use freshly milled wheat cooked the day you mill it. It really isn’t that much work to make these things the same day. It’s totally worth it. The health benefits are amazing.
I make jar mixes for cornbread, scones, molasses cookies, applesauce bread, chocolate chip muffins and a few more that are single mix equal to one batch. It makes it easier for me because it is just dump and add wet ingredients like a box mix. The pancake mix is the only one I make the large mix for because I don’t know how much I am making at a time. I label the outside of the lid with the name only and still have to flip in the cookbook to finish them unless I am taking them out of town and I put directions on a post it note to make. Super great in the big jars.
@@carolynmills513 I do any recipe where it asks you to do the dry ingredients in a separate bowl. I don’t think I can type both recipes out but they are listed on my blog at NOVA Frugal Family. I just finished eating my last Greek Yogurt Scone that I made yesterday. Super yummy.

Could you use buttermilk powder in the dry mix and then just use water when adding the wet ingredients? That way if you dont happen to have buttermilk or milk to make ur own buttermilk u can still make the cornbread.
@@karlamandrell3954I keep my buttermilk powder in the freezer because I usually only use it for ranch seasoning mix. I also keep that in the freezer. I heard you can keep it in the freezer for a long time without it going bad.

I’ve done similar in the past but haven’t had any for some time. It’s always so helpful to have mixes of things you make often ready to go. I’m curious about using buttermilk powder in the mix rather than fresh buttermilk. Buttermilk powder is on my shelf but I don’t often have buttermilk unless I’m purchasing it for a cooking/baking project. Good ideas, thanks for sharing.
I never buy buttermilk either. I usually make my buttermilk with a ratio of 1 TBSP white vinegar to 1 cup milk. I don't see why you couldn't use buttermilk powder instead. I honestly never thought of that before for my cornbread. Great idea!

I just found your channel. Just a thought. Freshly milled flour/meal is much looser than pre-milled, packaged flour/meal. Make sure to stir or sift your flour/meal before measuring. Get a china marker/grease pencil. It will come off glass cleanly. Great video..

Yes, that's why I love making these! You can still have "convenience" without the harmful ingredients! The baby goats are growing so much! We ended up keeping two does from one of the mamas. 🩷
YES! I am always trying to prep ahead to avoid buying the products with those hard to read ingredients for the name of "convenience."We use these mixes so much, and it makes life just a bit simpler.
I want you to thank yo 23:16 u for your videos I actually make meals ahead of time and put them in the freezer but this is an additional way to save time. I don't know if you've ever tried this but I find weighing the ingredients is a lot faster than scooping them. I initially started weighing things because I would forget how many cups of something I put in and I take everything out and start all over. I hope you'll give it a try and see what you think. I label my jars with a Dymo label maker, then cover the label with clear packing tape. You can also write the instructions on a post-it and cover it with the packing tape too, but I prefer to stick them on the inside of my cabinet doors and laminate over them. If you are careful and make sure you cover the labels and post-its completely and don't have any wrinkles or air bubbles in your tape, it can survive through many hand washings without your labels coming off, so long as you don't leave them soaking in your sink.

quick question - on the cornbread mix, after the baking soda, it looked like you were about to add something else from a quart jar but the video jumped to the sugar...was that baking powder? And. if so, how much? Also, you mentioned salt but it isn't in the recipe in the description section. I definitely want to try this. I have a lot of buttermilk powder and think I may add that to the dry ingredients as well. Looks yummy, thank you!
I appreciate your comment. The salt was missing in the description, and I did just fix it. It's 1 tsp. When I grabbed a jar and then it cut into me, adding the sugar instead, that was me trying to edit in a clip. I had added the salt and then was about to start mixing and forgot I didn't add the sugar in. Just trying to combine two separate clips and that was the best I could edit it. Buttermilk powder could work as well! 😊

Try adding Nutmeg to Pancake and Belgium Waffle Mixes...boosts the flavor. And instant coffee to the Brownie Mix. Increases the Cocoa flavor.

I use painters' tape to label my canning jars, too. I only put pretty labels on things I give as gifts.

weigh it and you won’t be measuring out 52 cups of mix. 1 cup of flour = 120 grams.

Grandma used 1 gallon pickle jars and Mainaise jars. She kept everything in canning jars. So I started doing that to. Works wonders.

Just found your channel today. We like Cornbread and I'm trying to store for emergencies. Thought I would try your buttermilk Cornbread since I had all the ingredients. I had to tell you, it is the best Cornbread recipe. I will be putting this together and storing. Thank you so much!!!
I made the cornbread mixer and biscuits mixer last week. Today I needed to have cornbread for dinner. It was so nice to have the mixer ready for me. It was so good also. Thank you for sharing this video.

I was so thankful that I always have our cornbread mix on hand because I was able to whip some up very quickly! I do have some more mixes coming out. OMG! I just wanted to say your Belgian Waffle mix is so delicious!
I made a batch of the mix and made some waffles from it and it was a winner!
Also, I forgot to separate and beat the eggs and just plopped them into the batch I was making. The waffles turned out fine. So good!

I have friends that own a skating ring and they sale pickles there, I buy their gallon glass jars from them and use those, just $2.00 a jar. I store lot of our dry mixes in them. Ty for your videos, God Bless 🙌

Get a grain mill and only use freshly milled wheat cooked the day you mill it. It really isn’t that much work to make these things the same day. It’s totally worth it. The health benefits are amazing.

I make jar mixes for cornbread, scones, molasses cookies, applesauce bread, chocolate chip muffins and a few more that are single mix equal to one batch. It makes it easier for me because it is just dump and add wet ingredients like a box mix. The pancake mix is the only one I make the large mix for because I don’t know how much I am making at a time. I label the outside of the lid with the name only and still have to flip in the cookbook to finish them unless I am taking them out of town and I put directions on a post it note to make. Super great in the big jars.

@@carolynmills513 I do any recipe where it asks you to do the dry ingredients in a separate bowl. I don’t think I can type both recipes out but they are listed on my blog at NOVA Frugal Family. I just finished eating my last Greek Yogurt Scone that I made yesterday. Super yummy.

I love your videos. You are adorable. I could have used this video when I had all 7 kids home. Now they are grown and it is only me and my hubby. Fortunately they live close. I homeschooled too. We lived in northern Utah for years but now live in Idaho near the Utah border. Love living in the mountains

Could you use buttermilk powder in the dry mix and then just use water when adding the wet ingredients? That way if you dont happen to have buttermilk or milk to make ur own buttermilk u can still make the cornbread.

I keep dry buttermilk on hand because I just don't cook and bake often enough to keep fresh on hand. 😊I will add the dry in this recipe.
Just make sure the buttermilk powder doesn't have to be refrigerated! 💜

@@karlamandrell3954I keep my buttermilk powder in the freezer because I usually only use it for ranch seasoning mix. I also keep that in the freezer. I heard you can keep it in the freezer for a long time without it going bad.

I’ve done similar in the past but haven’t had any for some time. It’s always so helpful to have mixes of things you make often ready to go. I’m curious about using buttermilk powder in the mix rather than fresh buttermilk. Buttermilk powder is on my shelf but I don’t often have buttermilk unless I’m purchasing it for a cooking/baking project.

I never buy buttermilk either. I usually make my buttermilk with a ratio of 1 TBSP white vinegar to 1 cup milk. I don't see why you couldn't use buttermilk powder instead. I honestly never thought of that before for my cornbread. Great idea!
I was going to suggest the same thing! And if the mix includes eggs, use powdered eggs also. Then all you have to do is add water!

I just found your channel. Just a thought. Freshly milled flour/meal is much looser than pre-milled, packaged flour/meal. Make sure to stir or sift your flour/meal before measuring.
Get a china marker/grease pencil. It will come off glass cleanly. Great video..

Consider using glass jars with wide mouths to store you’re goods. It is much easier to dip from and doesn’t make the mess!

I want you to thank yo 23:16 u for your videos I actually make meals ahead of time and put them in the freezer but this is an additional way to save time. I don't know if you've ever tried this but I find weighing the ingredients is a lot faster than scooping them. I initially started weighing things because I would forget how many cups of something I put in and I take everything out and start all over. I hope you'll give it a try and see what you think. I label my jars with a Dymo label maker, then cover the label with clear packing tape. You can also write the instructions on a post-it and cover it with the packing tape too, but I prefer to stick them on the inside of my cabinet doors and laminate over them. If you are careful and make sure you cover the labels and post-its completely and don't have any wrinkles or air bubbles in your tape, it can survive through many hand washings without your labels coming off, so long as you don't leave them soaking in your sink.

I'm from the South and we don't put sugar in our corn bread, either. I have had it wuth sugar, rho, and it's good as a corn cake.

Just curious what the shelf life is for the mixes especially for the baking powder.
Personally I would go by what the date is on the baking powder if I was doing it. Just my opinion.

quick question - on the cornbread mix, after the baking soda, it looked like you were about to add something else from a quart jar but the video jumped to the sugar...was that baking powder? And. if so, how much? Also, you mentioned salt but it isn't in the recipe in the description section. I definitely want to try this. I have a lot of buttermilk powder and think I may add that to the dry ingredients as well. Looks yummy, thank you!
I appreciate your comment. The salt was missing in the description, and I did just fix it. It's 1 tsp. When I grabbed a jar and then it cut into me, adding the sugar instead, that was me trying to edit in a clip. I had added the salt and then was about to start mixing and forgot I didn't add the sugar in. Just trying to combine two separate clips and that was the best I could edit it. Buttermilk powder could work as well! 😊
