Original Brownie Recipe (makes a 13x9)
3 cups white sugar
1 cup butter, melted
1 tablespoon vanilla extract
4 eggs
1 ½ cups all-purpose flour
1 cup unsweetened cocoa powder
1 teaspoon salt
1 cup semisweet chocolate chips (OPTIONAL)
-Preheat the oven to 350 degrees F. Lightly grease a 9x13-inch baking dish.
-Combine sugar, melted butter, and vanilla in a large bowl. Beat in eggs, one at a time. Mix until combined.
-Sift flour, cocoa powder, and salt into a separate large bowl. Gradually stir flour mix into egg mixture until blended. Stir in chocolate chips if using them. Spread batter evenly into the the greased 13x9.
-Bake for 35-40 minutes
Buttermilk Cornbread (original amount)
1/2 cup butter
2/3 cup white sugar
2 large eggs
1 cup buttermilk
1/2 teaspoon baking soda
1 cup cornmeal
1 cup all-purpose flour
1/4 teaspoon salt
Preheat oven to 375 degrees
Grease an 8x8 dish
-Stir the dry ingredients in a bowl, set aside.
-Melt Butter in a skillet. Shut heat once melted.
-Remove from heat and stir in the sugar.
-Quickly stir in the eggs and buttermilk.
-Stir in the flour mixture.
Bake at 375 for 30-40 minutes
BUTTERMILK BISCUITS (ORIGINAL AMOUNT)
2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1 teaspoon salt
7 tablespoons unsalted butter, chilled in freezer and cut into thin slices
3/4 cup cold buttermilk
Preheat oven to 425 degrees.
-Whisk flour, baking powder, baking soda, and salt together in a large bowl. --Add cold butter slices and cut into the flour with a pastry blender or a food processor, until the mixture resembles coarse crumbs.
-Make a well in the center of the mixture. Pour the buttermilk into the well and stir until just combined. (dont over stir)
-Turn dough onto clean countertop and shape into a rectangle, pressing the crumbs into the mix
-Fold into thirds, turn halfway and repeat. Folding into thirds again twice.
-Roll out rectangle until dough is 1/2 inch thick
-Use a 2 1/2 inch biscuit round cutter (or a cup) and cut your biscuits.
Should make 10-12
-Place on a cookie tray or in a cast iron and bake for 15 minutes
-You can also brush the tops of biscuits before placing into the oven with buttermilk as well
BELGIAN WAFFLES (ORIGINAL AMOUNT)
2 1/4 Cups All Purpose Flour
1 Tablespoon Baking Powder
3 Tablespoons Sugar
1/2 Teaspoon Salt
1 Teaspoon Cinnamon
2 Large Eggs Separated
1/2 Cup Vegetable Oil
2 Cups Milk
1 Teaspoon Vanilla Extract
-Preheat waffle iron
-In a large bowl whisk together the flour, baking powder, sugar, salt, and cinnamon.
-In another bowl, beat the egg whites with a hand mixer until stiff peaks form. Set aside.
-Add the egg yolks into a bowl and mix together the egg yolks, vegetable oil, milk, and vanilla extract.
-Add egg yolk mix into dry ingredients.
-Gently fold in the egg whites.
-Cook in your preheated waffle iron

On biscuits to avoid scraps I roll into a rectangle and then cut into squares. I know people think of biscuits as round but square are easier and eat the same.
Also can be used as dumplings.
I've done that with many things. We are in control of what things look like so can make pizza slices square if we want. For biscuit scraps though I just hand shape the last ones - so what if they are a little unique looking...

I made your brownies. I can cook a meal fit for a rock star but I suck at desserts. I made your brownies this morning and they turned out PERFECT!!! I had to change the temp from 350 to 325 because I was using a glass pan but gosh these brownies are the best! Thanks for the recipe!!

Gotta admit... I've never seen anyone mix the cornbread batter right into the skillet. Not saying it's never been done, but, we've been making cornbread for years, and I've also watched multiple videos and have never seen it done that way. Just told my mom how you do it and we've decided to give that a try. Less dirty dishes is always a plus.

Tip for your cornbread once it's done in an iron skillet to save yourself cleanup later. Put a plate or platter over your skillet immediately after it comes out of the oven. Grab your kitchen towel and drop it over the plate to your handles,flip upside down. Your cornbread will come out cleanly. Then Cut like a cake or in squares like you did. After dinner,just transfer your plate to the fridge w leftovers. The iron right after you remove the cornbread just needs to be wiped out and placed immediately back in the oven for sterilization and seasoning. Though oven is off,it's still hot enough if done right after flipping.
I have 1 iron skillet for cornbread only, No one touches it and nothing else is allowed to be cooked in it,lol. My other iron skillets are for everything else. BTW, nice video and thanks for leaving the bloopers,shows ur real like the rest of the world,lol.
The reason for the kitchen towel,is to hold the plate or platter in place when you flip it and act as a protection between your hands and the handles. If the iron is a one ha dle skillet,just hold a potholder over the plate w one hand,pot holder on the handle and flip over. Saves time and fuss later and have your skillet ready for the next batch,already wiped and sterilized and seasoned.

@@rockymountainhomesteadangela Yvw 🤍. I learned it from my grandmother who had 6 kids, cleaning non stop was not her goal as she had a farm to tend to as well. Then when I had my children and several jobs, nope, I was taking shortcuts whenever I could,lol.

Have you ever considered adding dried buttermilk in your mix? That way you could use water instead of having to make buttermilk or buy buttermilk!
@confusedwhynot I honestly haven't. Reading the comments, that's something worth doing. Also, I've heard a few people mention powdered eggs! I freeze dry my eggs and never thought of doing that. For a more long-term shelf stable option, that would work. I have a lot of fresh eggs I need to use daily, so that's why I never gave powdered eggs a thought! I love reading the comments because so many people have great ideas! Thank you 😊

@@rockymountainhomesteadangela. I think once opened the dried buttermilk powder needs to be refrigerated so the whole jar of powder mix would need to be in the refrigerator.

Awesome!! I actually made a batch and a half of brownie mix last night to fill up my gallon jar but haven’t tried making it yet. I have 2 cast iron pans that are so rusty and I need to learn how to clean them and season them so I can use them so a video on that would be great 😊 thanks.
I'm so happy to hear that! I had to edit two things in my description this morning. One of them was the eggs for the brownies. It didn't save when I put them in the first time. So just be sure to check and make sure you have that added to the recipe for the wet ingredients ❤️
I also need to reseason my cast iron and will be doing a video when I do them, hopefully within the next week 😊
Put your cast iron in vinegar overnight (submerged) The rust will be gone then you can clean and seasoned accordingly.

I love making my own homemade vanilla extract. It does actually have a year to make it. Its okay after 6 months but a year makes the best.
I've seen someone use their pressure canner to speed up the extract to consuming time

I use avocado oil in place of vegetable oil for my pancake and waffle mix. No problem with taste.

I have one in storage too that needs some loving too. I'm a senior who has been living alone for a long time and has managed my own repairs too because I live in a very remote location. TH-cam videos will explain ABSOLUTELY EVERYTHING we ever needed or wanted to know or on webpages. I've repaired my large and small appliances, lawn tractor, plumbing, etc. etc. Just put in a few words in TH-cam or Google search lines (seasoning cast iron pan).

Yep...I've subscribed cuz working and coming home straight to the kitchen having to put all the stuff together is a royal pain. I do have one question though...can I use plastic containers with lids cuz my kid tends to drop things lol.

Great video Angela! I loved watching you create recipes with your mixes! My mom would make the best cornbread with a cast iron skillet and it does come out so delicious and goes well with so many recipes like chili etc. Talking about chipped dishes I did that this week just putting clean dishes away from the dishwasher and my husband then says it's ok we can still use it:) I had biscuits and gravy this morning and I told my husband I wanted waffles for tomorrow's breakfast! I will definitely be looking at your recipes and looking forward to the vanilla recipe extract video you will be doing. Just discovered your channel. My family and I live in Ireland but have visited the US a few times and often crave the American home cooked style foods we been fortunate enough to try but as they are unfamiliar I can get a bit overwhelmed trying to make them. Will definitely by trying your dry mix idea (smaller quantities there’s only 4 of us) as it feels like it ‘brakes the process down’ into something more manageable. Tfs. Oh what was the chicken dinner meal you were cooking and served with the cornbread- I’d love to try that too.

I noticed your eggs on the counter. Do you refrigerate them? I've always wanted to keep our fresh eggs out in a basket, but not sure how that works.
As long as you don’t wash them they can be kept on the counter for weeks. Fresh not store bought.
Don't you need pearl sugar for Belgian waffles? They look delicious but that is a regular waffle right?
You can also use Bacon grease instead of butter and it tastes amazing

Please could you help me understand the recipe method in this video? When you were baking the brownies you measured out 5.5 cups. However the recipe in the descriptions had a different quantity.

Yes! That is a bit confusing. In this description box to this video I wrote out the original recipes so that anyone who wants to try the recipe first before making a "big batch" recipe could try it first. In the Part 1 video, I put the instructions and measurements for how to make the big batch recipes in that description box. The measurements for the dry mix and wet ingredients are posted there.
